280 grams (2 ¼ cups, 9.9 oz) all-purpose flour
30 grams (1/4 cup, 1.05 oz) cornstarch
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
500 ml (2 cups) apple cider (we will use 250 ml (1 cup) reduced and cooled)
200 grams (1 cup, 7.05 oz) light brown sugar (packed)
120 ml (1/2 cup, 4.05 fl oz) oil
3 large eggs (room temperature)
1 teaspoon vanilla extract
120 grams (1/2 cup, 4.2 oz) applesauce
35 grams (1.18 oz) all-purpose flour
200 grams (1 cup, 7.05 oz) light brown sugar
pinch of salt
240 ml (1 cup) milk
230 grams (1 cup) unsalted butter (room temperature)
1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon

Steps:

  • For the frosting: combine flour, sugar and salt in a small saucepan, whisk together. Add milk and whisk to combine. Place over low heat, and allow the mixture to come to a boil, whisking constantly. Cook for 1-2 minutes until thicken. Remove from heat and pour into a small bowl, cover with plastic foil, but make sure foil is touching the pudding to avoid making a skin on top of it. Put it in the refrigerator to speed cooling but keep in mind that pudding needs to be room temperature because later we wil mix in a softened butter.
  • Reduce the cider: Add 2 cups of apple cider to a medium saucepan, bring to a boil and cook on medium low heat until reduced to 1 cup. Set aside to cool.
  • While cider is cooling, preheat oven to 180 °C (350 °F), grease and flour 33x23 cm (13x9 inch) baking pan or line the bottom with baking paper.
  • Make the cake: In a medium bowl, whisk the flour, cornstarch, baking soda, baking powder, salt, cinnamon and nutmeg until well combined. Set aside. In a another bowl add eggs, oil, brown sugar, vanilla, reduced apple cider and applesauce and using an electric mixerbeat until well combined. Using a rubber spatula or wooden spoon fold in dry ingrediens until combined. Do not overmix!
  • Pour the batter into prepared pan and bake 15-20 minutes or until toothpick inserted in the center of the cake comes out clean.
  • Make the frosting: Once the pudding has cooled, beat the butter bowl until smooth and fluffy and lightened in color, around 5 minutes. Add the cooled pudding (which will look like glue at this point) one tablespoon at a time, mixing well after each addition. Once all the pudding has been added, mix for another few minutes, until the buttercream looks thick, smooth and creamy. Add the vanilla and cinnamon and mix briefly to combine. Using arubber spatula stir vigorously for about a minute to get rid of any large air bubbles.
  • Spread the buttercream over cooled cake and decorate by your liking.

This recipe is from Every Day Foods. I saw it on TV, and it looked so easy, I had to make it. It's moist and full of tender and chunky apple slices, and has a rich cinnamon spice flavor. I served it still warm with a scoop of vanilla ice cream. Wow! Be sure to serve within the first day or two, as the apples will break down.

1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt

1 cup unsalted butter, melted
1 1/2 cups packed brown sugar (it calls for light brown, but I used dark brown, and I really liked that)
4 large eggs
6 medium apples (keep from turning brown with a little lemon juice squeezed on the slices) or 4 large apples, peeled, cored and sliced 1/4 inch (keep from turning brown with a little lemon juice squeezed on the slices)
1 cup confectioners' sugar
2 -3 tablespoons water (I used apple juice, yum!)

Steps:

  • Preheat oven to 350, and prepare the 12 cup bundt pan (grease and flour if you don't have a non-stick).
  • In a medium bowl, whisk the flour, cinnamon, baking powder, salt, and baking soda together.
  • In a large bowl, melt the butter in the microwave, and add brown sugar and eggs, whisking until smooth.
  • Gradually whisk in dry ingredients just until combined- don't overmix.
  • Fold in the apples (it will look sort of like peanut butter coated apple slices, but don't worry- the batter bakes up around the apple slices) and spoon batter into the bundt pan, smoothing the top.
  • Bake until a tester inserted into the center of the cake comes out clean (about an hour).
  • Cool in the pan for about 15 minutes, and invert onto a rack placed over wax paper to cool completely.
  • Make the glaze by whisking the water (or apple juice) together with the confectioners' sugar adding just enough liquid to make the glaze thick but pourable.
  • Drizzle glaze over completely cooled cake, and let it firm up before serving.

Spread the remaining batter over the crumbs and on top spread the rest of the cinnamon streusel.
  • Bake 35-40 minutes or until a tester inserted in the center comes out clean.
  • Before remove the ring of springform pan run a thin knife around the cake.
  • To make the glaze, whisk together powdered sugar with apple cider and drizzle over the cake.

2 Tbsp butter (melted)
½ Cup unsweetened applesauce

Apple Cider Cinnamon Roll Cake Recipe Filling:

Steps:

  • In a bowl mix the apple cider and the butter together. Add the applesauce, brown sugar, egg, cinnamon, nutmeg and dry yeast.
  • Add the flour and with the help of a spatula, stir until incorporated.
  • Transfer to a floured surface and knead for 3 minutes, until a soft and elastic dough forms. Return to the bowl and cover with a cloth. Let it rise for 1 hour.

  • Preheat the oven to 200c/ gas 5
  • Add the sugar and butter together in a bowl and mix together until both are combined and nice and fluffy
  • Add the flour to the butter/sugar mix and combined together until it forms a gooey mixture
  • Add the one egg and stir into the mixture. Add the other egg and stir all together. The mixture should be slight runny but still have a slight stiffness
  • Add the cinnamon to the mix and stir well then add the peeled and chopped apple to the mix and stir together
