CINNAMON SUGAR FRENCH-STYLE TEXAS TOAST

Steps:
- Preheat an oven to 200 degrees F, and place a rack on a sheet pan.
- Whisk the milk and eggs in a glass pie or casserole dish until evenly combined.
- Whisk the sugar and cinnamon in a small bowl.
- Heat a large skillet over medium heat. Add about 1/2 a tablespoon of butter to the skillet, swirling the pan to coat the surface. Dip 2 slices of bread into the egg mixture and immediately lay in the skillet. Sprinkle the cinnamon sugar on top and cook until the undersides are brown and crisp, about 4 minutes. Add a nut-sized bit of butter to the skillet, as needed, and flip the toast, cook until golden on the underside, about 3 minutes more.
- Serve immediately or transfer to the rack in the oven to keep warm. Repeat with the remaining bread and batter. Serve with jam or maple syrup.

- Spray grill with cooking spray. Preheat grill for 6 minutes.
- In a medium shallow bowl, whisk together eggs, milk, sugar, and vanilla. Soak slices of bread in egg mixture.
- Place slices of bread on the grill. Close lid and cook 4 minutes or until done. Repeat with remaining bread.
- Sprinkle with cinnamon before serving with butter and syrup.
WAFFLE CINNAMON FRENCH TOAST
Just a little twist on the traditional French toast, using waffles instead of bread. Use as much or as little cinnamon and Splenda as you'd like.

- Heat the waffles in the microwave, about five or ten seconds on each side. You want it to be mostly defrosted, but not totally hot.
- Whisk the egg white and soymilk in a small bowl, and add cinnamon and Splenda to taste.
- Dip each waffle in the egg mixture, making sure to get the egg into the nooks in the waffles. Sprinkle each side of the waffles with some more cinnamon and sugar, and cook over medium heat in a nonstick pan sprayed with cooking spray for about five minutes, or until nicely browned.
- Sprinkle with more cinnamon and Splenda to serve, if desired.
BAKED CINNAMON SUGAR FRENCH TOAST
The butter is melted on a baking sheet and sprinkled with a mixture of cinnamon and sugar. French bread is then dipped into batter, placed on sugar mixture and baked. Serve sugar side up. Delicious!

- Place butter on 10x15 baking sheet and melt in oven.
- Remove pan from oven and sprinkle with a mixture of sugar and cinnamon (as much as you like).

- Combine milk, sugar, eggs, 1/2 tsp cinnamon, and salt and mix until blended.
- Cut bread into 3/4 inch slices.
- Dip in milk/egg mixture long enough to soak through.
- Place a hot skillet with the melted butter or oil and fry until golden brown on both sides.
- Remove from pan and roll in confectioners' sugar mixed with the remaining cinnamon.

- In a bowl, whisk egg and egg whites until foamy.
- Add the milk, vanilla, cinnamon and nutmeg.
- Combine and set aside. Preheat oven to 200°F.
- Lightly spray a nonstick skillet with vegetable cooking spray. Heat over medium hat.
- Dip 4 bread slices into egg mixture, turning to coat. Place bread slices in prepared skillet. Cook until golden brown, turning once.
- Transfer cooked slices to a plate and keep warm in oven.
- Dip remaining slices in egg mixture, cook as above. Divide toast among serving plates.
- Sprinkle lightly with cinnamon sugar and top with maple syrup. Serve immediately.
- Variation: For puffy French toast, prapre egg mixture in a large shallow glass dish.

- Prep: Preheat your waffle iron on a medium-high setting. Mix the cinnamon and sugar in the first shallow dish. In a second shallow dish, whisk together the eggs and milk. To a third shallow dish, add the breadcrumbs.
- Assemble French Toast: Cut the bread into even sticks (this makes waffling easier), about 1 - 1.5 inches wide. Soak two bread pieces (or as many as will fit into your waffle maker at once) in the egg mixture, then coat in breadcrumbs. Grease both sides of the hot waffle iron and add the French toast pieces, careful to avoid them touching each other. Cook until browned and crispy but not dried out, approximately 3-4 minutes.
- Finish: When the pieces are done, immediately dredge them through the cinnamon and sugar mixture and sprinkle it all over the waffle indents as well. Proceed with the remaining bread pieces the same way. Serve immediately or set aside on a cooling rack for a few minutes.
- To make the dip: Mix the yogurt or cream cheese with the maple syrup. Add a little milk if needed to give it a creamy but not liquid consistency. Serve with the French Toast Waffles.
