This is a tradition here in the South. You can add anything you like to this basic recipe. You can add crawfish, chicken pieces, make it all sausage. You decide what you like and add it in!

1 tablespoon olive oil
½ pound smoked sausage (such as Conecuh©), cut into 1/4-inch thick slices
1 large onion, chopped
1 cup chopped green bell pepper
1 cup chopped celery
salt to taste
½ teaspoon Cajun seasoning, or to taste
1 cup uncooked white rice
1 (14.5 ounce) can diced tomatoes with juice
1 tablespoon minced garlic
2 cups chicken broth
3 bay leaves
¼ teaspoon dried thyme leaves
1 pound peeled and deveined medium shrimp (30-40 per pound)

Steps:

  • Heat the olive oil in a Dutch oven or large pot over medium heat. Stir in the sausage, and cook for 2 minutes. Add the onion, bell pepper, and celery; season with salt and Cajun seasoning. Cook and stir until the vegetables are soft, 6 to 8 minutes. Stir in the rice until evenly coated in the vegetable mixture, then pour in the tomatoes with juice, garlic, chicken broth, bay leaves, and thyme leaves. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer 20 minutes.
  • After 20 minutes, stir in the shrimp, and cook 10 minutes uncovered until the shrimp turn pink and are no longer translucent in the center. Remove the pot from the heat, and let stand 5 minutes. Discard the bay leaves before serving.

This is a great recipe to warm up a winters day, just an awesome twist to an ordinary chicken pot pie. Just enough spice and heat with the flavor of Cajun jambalaya throughout. It will have them coming back for more and more.

¼ cup canola oil
1 (16 ounce) package kielbasa sausage, cut into 1 inch pieces
1 pound cooked chicken meat, shredded
2 tablespoons Cajun seasoning, or to taste, divided
2 tablespoons Cajun blackened seasoning, or to taste, divided
1 onion, chopped
3 stalks celery, chopped
1 large green bell pepper, chopped
¼ cup all-purpose flour
2 quarts chicken broth, or as needed
1 ½ cups uncooked white rice
1 pound uncooked medium shrimp, peeled and deveined
1 tablespoon ground black pepper, or to taste
1 tablespoon cayenne pepper, or to taste
2 (9 inch) prepared pie crusts
1 beaten egg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat canola oil in a large saucepan, and cook the kielbasa sausage and chicken meat over medium heat until the sausage has browned, about 10 minutes. Sprinkle the meat with 1 tablespoon of cajun seasoning and 1 tablespoon of blackened seasoning as it cooks. Remove the sausage and chicken from the pan, and set aside. Cook the onion, celery, and green bell pepper in the hot oil until the onion has turned translucent, about 5 minutes, sprinkling with 1 more tablespoon of Cajun seasoning and 1 tablespoon of blackened seasoning. Remove the vegetables with a slotted spoon, and set aside.
  • Make a roux with the oil left in the pan by sprinkling it with the flour. Whisk the flour and oil together, and cook over low heat, whisking constantly, until the mixture is a pale brown color. This could take up to 15 minutes; watch carefully so the roux doesn't burn. Slowly whisk in the chicken broth, about 1/2 cup at a time, to make a thin, smooth gravy. Bring the gravy to a simmer, mix in the cooked sausage, chicken, and vegetables, and cook until slightly thickened, about 20 minutes, stirring occasionally.
  • Mix the rice into the gravy mixture, and simmer until the rice is almost tender, about 15 minutes; mix in the shrimp and cook until they are opaque and pink, 5 to 10 minutes. Season the filling with black pepper and cayenne pepper; remove the filling from the heat.
  • Fit a pie crust into 1 9-inch pie dish; brush crust with beaten egg, and poke holes all over the crust with a fork. Bake in the preheated oven for 3 minutes. Fill the parbaked crust with the jambalaya filling, top with the second crust, and pinch and crimp the edges of the crust together with a fork. Brush the crust with more beaten egg, and cut several steam slits into the top of the crust.
  • Bake in the preheated oven until the crust edges begin to brown, 10 to 15 minutes. Line the edges of the crust with foil, and bake until the whole crust is golden brown, about 5 more minutes.

This recipe was inspired by a dish I used to order when I worked at the American Cafe. I finally was brave enough to give it a try, and it's pretty close! Use whatever veggies and meats you love. This is what resembles the original recipe, but don't be afraid to try something different.

½ cup uncooked white rice
¾ cup water
2 Italian sausage links
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups whole milk
3 tablespoons Cajun seasoning, or to taste
1 cup cooked chicken meat, shredded
3 drops liquid smoke flavoring, or to taste
½ cup finely chopped onion
½ cup chopped red bell pepper
2 cloves garlic, minced, or more to taste
½ cup uncooked shrimp - peeled, deveined, and tails removed
2 sheets frozen puff pastry, thawed
1 beaten egg

Steps:

  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is chewy and the liquid has been absorbed, about 15 minutes. Let the rice stand, covered, for about 5 minutes. Uncover, and allow to cool.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9-inch pie dish.
  • Place the sausage links into a large skillet over medium-high heat, and cook until browned on both sides, 3 to 4 minutes per side. Remove from heat, and cut into 1/4 inch slices; set aside. Melt butter in a large saucepan over medium heat, and whisk in flour. Allow the flour to cook until frothy-looking, about 1 minute; whisk in the milk. Turn the heat down to medium-low, and simmer the sauce while you finish the remaining steps; whisk often. Stir in Cajun seasoning to taste. When sauce has thickened enough to coat the back of a spoon, remove from heat.
  • In a bowl, toss the chicken meat with liquid smoke flavoring. Mix in the cooked rice, cooked sausage, onion, red bell pepper, garlic, and shrimp until thoroughly combined. Pour in about 3/4 of the white sauce to moisten the filling.
  • To assemble the pie, trim the sheets of puff pastry to 10x10 inches; lay a sheet in the prepared pie dish. (Square corners will stick out). Fill the bottom crust with the rice mixture, and pour in the remaining 1/4 of the white sauce. Top with the remaining sheet of puff pastry; pinch the edges to seal. Brush the top of the pie with beaten egg.
  • Bake in the preheated oven until the crust is flaky in the center and golden brown, 20 to 30 minutes.

This comforting Louisiana favorite is transformed into a flavorful appetizer, packed with shrimp, andouille sausage and chicken in a rich Cajun sauce.

2 (10 ounce) packages puff pastry shells
olive oil
2 cooked andouille sausages, diced
1/2 lb chicken tenders, diced
1 small yellow onion, finely diced
1 celery, finely diced
1 small green bell pepper, finely diced
1 jalapeno, cored and finely diced
4 garlic cloves, minced
salt
pepper
3 tablespoons flour
1 tablespoon cajun seasoning
1 teaspoon gumbo file
1/4 teaspoon dried thyme
1/2 teaspoon salt
1 cup crushed tomatoes
1 cup chicken broth
2 teaspoons Worcestershire sauce
1/2 lb small uncooked frozen shrimp, peeled and deveined
2 tablespoons heavy cream
chopped parsley, for garnish

Steps:

  • Prepare the oven to 425 F and prepare the puff pastry shells according to package instructions.
  • Meanwhile, heat 1 tablespoon of olive oil in a large skillet with high sides over medium high heat.
  • Add the chicken and sausage and sauté until chicken is cooked through and sausage is browned, about 5 minutes. Transfer to a plate and set aside.
  • Reduce heat to medium and add the onion, celery, bell pepper, jalapeno, and garlic. Season with salt and pepper and sauté until softened, about 10 minutes.
  • Sprinkle the flour over the vegetables and stir to combine, cooking for about 60 seconds.
  • Add the crushed tomatoes, chicken broth, Worcestershire, Cajun seasoning, gumbo file, thyme, and ½ teaspoon salt.
  • Stir and let simmer for 2-3 minutes.
  • Add chicken and sausage back in and continue to simmer for 3-4 minutes.
  • Add shrimp and let cook gently for about 7-10 minutes until the shrimp are just cooked through.
  • Stir in the heavy cream. Season with salt and pepper.
  • Scoop into warm puff pastry shells and garnish with chopped parsley.

1 large onion, finely chopped
1 large green bell pepper, chopped
2 celery ribs, thinly sliced (with leaves)
16 ounces kielbasa or 16 ounces andouille sausages, sliced
2 cups cooked cubed chicken (optional)
1 (28 ounce) can petite diced tomatoes, undrained
1 cup uncooked converted rice
1 cup chicken stock or 1 cup water
2 teaspoons cajun seasoning (I use Salt-Free Cajun Seasoning Salt-Free Cajun Seasoning)
1 lb frozen tailless cooked large shrimp, defrosted
snipped fresh parsley, to garnish
hot sauce, to serve

Steps:

  • Place all the ingredients except the shrimp into the crock pot; stir well to combine.
  • Cover and cook on LOW heat for 4-5 hours, until rice is done and vegetables are tender. (If you have an older model crockpot as I do, cook on HIGH for same amount of time).
  • Stir in the shrimp, cover, and cook for 20-30 minutes until heated through.
  • Garnish with snipped parsley and serve with hot sauce at the table.

Season with a bit of salt and pepper, and cook until browned, about 5 to 8 minutes. Make sure to stir often to evenly brown. Add the sausage and cook until crispy, another 3 to 5 minutes. Transfer the chicken and sausage to a plate or platter and set aside.
  • To the same pan, add in the onions, garlic, celery, bell peppers, jalapeño and tomatoes. Season with salt, pepper, cajun seasoning, thyme, rosemary and bay leaves. Cook until softened, about 8 to 10 minutes. Sprinkle the flour over the top and stir to evenly combine. Cook for about 2 minutes and then stir in the chicken stick. Cook on medium-low, stirring often, until the sauce has thickened, about 5 to 6 minutes. Add the cream (if using), lemon juice, Worcestershire sauce and hot sauce. Cook for another 1 to 2 minutes. Stir in the shrimp and remove from heat. Make sure the shrimp are fully submerged. The residual heat will cook them through. Transfer the filling to the prepared baking dish and set aside, let cool to room temperature.
  • Roll out the pie dough on a lightly floured work surface to about 1/4 of an inch thick.
