CILANTRO LIME SHRIMP
Cilantro Lime Shrimp is one of the easiest and quickest ways to prepare shrimp and also one of the most divine! The shrimp is tossed with fiesta seasonings before cooking and garlic cilantro lime butter after cooking so the juicy shrimp is exploding with flavor. This easy shrimp recipe can be cooked on the stove, in the oven or grilled (all instructions included) and it can be served with anything! Cilantro lime shrimp is a meal in itself with a side of veggies and rice/quinoa or instantly transforms tacos, salads, burritos, wraps, etc. (tons of ideas included) into the most epic meal ever!

- Add marinade ingredients to a large bowl and whisk to combine. Add shrimp and marinate at room temperature for 15-30 minutes or in the refrigerator for up to 60 minutes (no more!). Note, this is a wet rub marinade and will be thick without extra liquid.
- Melt one tablespoon butter in one tablespoon olive oil in a large skillet over medium-low heat. Increase heat to medium-high. Once very hot and sizzling, add half the shrimp in a single layer and cook approximately 2-3 minutes per side, or just until opaque and cooked through. Transfer shrimp to a plate and repeat with remaining shrimp.
- To the now empty skillet, melt 3 tablespoons butter over medium heat. Once melted, add the garlic and cook until fragrant, about 1 minute. Remove from heat and add the cilantro and lime juice and stir to combine. Add shrimp back to the skillet and stir to evenly coat. Taste and season with salt, pepper, cayenne and/or lime juice to taste.

- Mix together garlic and 1 teaspoon salt.
- Whisk together garlic paste, lime juice, marmalade, cilantro, 3 tablespoons oil, soy sauce, red pepper flakes, remaining 1/8 teaspoon salt and pepper in a small bowl.
- Transfer 1/3 of mixture to small serving bowl and reserve for dipping sauce.
- Combine shrimp with remaining mixture in a large sealable plastic bag and seal bag, pressing out excess air.
- Marinate shrimp, refrigerated, turning bag once, for 15 minutes.
- Drain shrimp and gently pat dry.
- Shrimp can be cooked on the girll or. . .
- Pan Fried:
- Heat 1 1/2 teaspoon oil in a large non-stick skillet over moderately high heat.
- Add half of shrimp and cook, turning occasisionly until shrimp is cooked through, about 3 minutes total.
- Tranfer to a platter and cook the remaining shrimp in 1 1/2 teaspoons of oil.
- Garnish with cilantro and serve with dipping sauce.
CILANTRO LIME SHRIMP WITH BOILED POTATOES AND CORN ON THE COB RECIPE BY TASTY

- Boil potatoes in salted water for 10 minutes. Then, add corn and boil for another 10-15 minutes until potatoes and corn are tender. Check by piercing with a fork.
- After putting potatoes in to boil, season shrimp with salt, pepper, and cilantro-lime seasoning.
- Melt 1 tbsp butter in a skillet and add garlic. Sauté for 1 minute then add shrimp. Cook on both sides until pink, about 5 minutes..
- Then add remaining butter, fresh-diced cilantro, and lime juice to create cilantro-lime sauce. Stir shrimp in sauce to coat.
- Plate shrimp, spoon some sauce over the top and sprinkle with diced cilantro. Plate potatoes and corn (with butter and salt, if desired).
- Serve and enjoy!

- Combine all the ingredients for the yogurt in a bowl, cover and chill.
- Combine all marinade ingredients in a zip lock bag, add shrimp and let set for 15-20 minutes at room temperature.
- Combine all ingredients for salsa in a bowl and set aside.
- Remove shrimp from marinade; discard marinade.
- Cook shrimp in a large skillet over med heat 2 minutes per side.
- Remove from heat and cool.
- When shrimp are room temp slice in halve lengthwise and set aside.
- Divide shrimp evely among taco shells.
- Top each with a handful of lettuce, 2 tbls corn salsa and 1 tbls. cilantro yogurt.
- Serve right away.

- In a small bowl, combine the coriander seeds, mustard seeds, red pepper flakes, dill weed, allspice, salt, and bay leaves.
- Add the spice mix to a large pot with 3 quarts of water, then add the potatoes. Bring to a boil and cook for 15 minutes.
- Add the corn and boil for 10 minutes. Add the sausage and cook for another 5 minutes.
- Remove a potato from the pot and check to see if it's fully cooked. If not, continue to cook them until the potatoes are done.
- Stir in the shrimp and lemon juice. Place the lid on the pot and cook for 3 minutes, or until the shrimp are pink and cooked through.
- Drain the ingredients from the pot. Serve the shrimp boil on a newspaper-lined table, sprinkled all over with parsley, with cocktail sauce and garlic butter on the side.

- To prepare the tortillas, wrap loosely in a damp kitchen towel and place in a preheated 250 degree oven.
- Heat the vegetable oil over medium-high heat in a large (12-inch), non-stick skillet. When the oil is hot, add the entire package of Simply Potatoes Diced Potato with Onion; spread out evenly. Cover and cook the potatoes for 10 minutes, stirring every 2-3 minutes, ensuring that the potatoes are browning evenly.
- While the potatoes are cooking, combine the sour cream, about ½ of the taco seasoning, 2 tablespoons lime juice, half of the chopped cilantro and the salt in a blender or food processor. Process until smooth and set aside.
- Toss the remaining taco seasoning and ground cumin with the shrimp. After the potatoes have been cooking for 10 minutes and are nice and brown, add the seasoned shrimp, green onions and the remaining chopped cilantro and stir gently. Continue cooking the potato-shrimp mixture for an additional 3-5 minutes, uncovered, stirring occasionally, or until the shrimp is cooked through.
- Assemble the tacos by topping each warm tortilla with some of the shrimp and potato mixture, a pinch of the spinach, some tomato and avocado, a few crumbles of goat cheese and a drizzle of the cilantro crema. Enjoy!

- Melt the butter and oil in a heavy skillet over medium-high heat.
- Add the garlic, onion and jalapeno.
- Cook, stirring until the onion begins to wilt, approximately 3 minutes.

- Microwave method for cooking corn: husk corn and wash off any loose silk. Place wet corn into Ziploc bag. Place bag in microwave and cook 4 minutes; rotate ears and cook 2 more minutes. Let sit 2 minutes to finish cooking. Cool five minutes and then slice kernels off the cob.
