SPICY SHRIMP COCKTAIL WITH TOMATO AND CILANTRO

Steps:
- Combine tomato juice, clam juice, vinegar, cilantro sprigs, chilies and Worcestershire sauce in medium saucepan. Boil until sauce is slightly thickened and reduced to 1 2/3 cups, about 30 minutes. Strain into medium bowl.
- Heat oil in large nonstick skillet over medium-high heat. Add shrimp and sauté until just cooked through, about 4 minutes. Cool.
- Add shrimp, tomato, green onions, chopped cilantro, lime juice and sugar to sauce. Season with salt and pepper. Chill until cold, at least 3 hours. (Can be made 1 day ahead. Cover and keep chilled.) Garnish with lime wedges.

Add flare to basic cocktail sauce by adding in chopped fresh cilantro leaves! Follow cocktail recipe or add the leaves into your favorite premade cocktail sauce.

- Combine ketchup and horseradish.
- Stir until well incorporated.
- Add Worcestershire, hot sauce, salt and pepper; taste, and season according to preferences.
- NOTE: to add a little extra kick, sprinkle a dash of cayenne pepper and mix well.
- FOR EASE: combine favorite premade cocktail sauce with chopped fresh cilantro.

Steps:
- Add the following ingredients to a blender or food processor: cilantro leaves, garlic cloves, ginger, and olive oil. Puree the ingredients. Add more oil if necessary.
- Add salt, pepper, chili flakes, and lime juice to taste. I used about 2 tablespoons of lime juice. Mix once more.
- Serve in a small bowl.

CUCUMBER CILANTRO MARGARITA
Steps:
- To salt the rim of your glass, fill a shallow bowl with water. On a small plate, pour a circle of salt. Dip the rim of a rocks glass or margarita glass in the water, then dip it into the salt and set it aside.
- In the bottom of a cocktail shaker, muddle the 4 cucumber slices with 1 cilantro sprig until the cucumber releases most of its juices and the cilantro is smashed and fragrant. Add the ice cubes, tequila, lime juice, agave syrup, and triple sec. Cover and shake vigorously for 4 seconds. Pour the drink, including the ice, into the glass. Serve the margarita garnished with the remaining cucumber slice and cilantro sprig.
