1 stick unsalted butter
2 tablespoons curry powder
1 fresh red chile, roughly chopped
1 clove garlic, peeled
Kosher salt and freshly ground black pepper
2 tablespoons fennel seeds, toasted
2 tablespoons coriander seeds, toasted
1/2 tablespoon kosher salt
1/4 teaspoon freshly ground black pepper
4 (6-ounce) salmon fillets, boneless and skin removed
1 lemon, juiced
16 mussels, cleaned and de-bearded
Extra-virgin olive oil
3 scallions, finely sliced, for garnish
1/4 bunch cilantro, for garnish
1 cup couscous
2 tablespoons chopped fresh cilantro leaves
1/2 teaspoon lemon zest
4 frozen cubes of chicken stock (about 2 tablespoons per cube)

Steps:

  • Preheat oven to 350 degrees F. Place 2 sheet trays in oven to warm.
  • To make the curry butter: Combine ingredients in a food processor and pulse until smooth.
  • To prepare the Salmon and Mussels: Begin by making a seasoning with fennel and coriander seed and salt and pepper. Pound spices in a mortar and pestle, or grind with a coffee grinder, until you have a rough powder.
  • In a large mixing bowl combine couscous, cilantro, lemon zest and half the spice mix. Stir well to combine, drizzle with olive oil, then divide evenly among 4 large pieces of parchment (big enough to create a folded pocket for the salmon). Nestle into the couscous 1 frozen chicken stock cube for each portion. Top with the piece of salmon and then sprinkle with remaining spice mix. Squeeze lemon juice over the top of each piece of fish and couscous then set 4 mussels around the fish in each packet. Fold over the parchment to create a pocket and trim paper to make a heart shape. Crimp over the edges, working from one end to the other to secure the paper tightly then brush with olive oil so the paper doesn't burn. Carefully transfer the parchment pockets to the hot sheet trays (you will probably need to put 2 per tray) then bake in the oven for 20 to 25 minutes.
  • When done, the paper will puff up. Cut open tableside with scissors, top with curry butter, and shower with fresh chopped scallions and cilantro.

Cooking fish in parchment paper is incredibly simple, and yet fairly terrifying for a novice cook. Since the seafood is encased in paper, there's really no good way to check if it's done. The good news: if you use a large, center-cut salmon filet, about 8 or 9 ounces, and cook it for 15 minutes at 400 degrees F, you're going to be very, very close.

1 teaspoon olive oil, or more if needed
6 small potatoes
10 spears asparagus
2 (8 ounce) skinless, boneless, center-cut salmon fillets
salt and ground black pepper to taste
1 teaspoon extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Take two pieces of parchment paper, fold in half, and cut a half-circle starting at each crease. They should look similar to a heart-shape when unfolded. Coat each piece of parchment with olive oil on both sides.
  • Place potatoes in a saucepan and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Bring a pot of lightly salted water to a boil. Add asparagus, and cook uncovered until slightly tender, about 5 minutes. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the asparagus is cold, drain well, and set aside.
  • Place 1 salmon fillet, half the asparagus, and half the potatoes in the middle of one side of a prepared parchment paper. Sprinkle with salt and pepper and drizzle with extra-virgin olive oil. Fold other half of circle over and seal parchment edge by making overlapping folds around the edge. At the end, fold the last crease in the opposite direction of the rest to ensure it seals. Repeat with the second piece of prepared parchment and remaining ingredients. Place pouches on a baking sheet.
  • Bake in the preheated oven for 15 minutes. Remove from oven and allow to sit for 5 minutes before cutting open parchment. The salmon is done when it flakes easily with a fork.

1/4 cup leek, sliced thinly
1 carrot, julienned
1 tablespoon cilantro chutney (coriander chutney) or 1 tablespoon pureed fresh cilantro
1 tablespoon ghee or 1 tablespoon butter
1 tablespoon lemon juice
fresh ground black pepper
1 pinch salt
parchment paper (One 15x20 inch piece)

Steps:

  • Preheat oven to 400°F.
  • One side of the parchment paper, place 1/2 the butter.
  • On top of the butter, arrange sliced leeks and julienned carrots.
  • Spread chutney or cilantro puree on salmon and place the salmon fillet on top of the vegetables. Place the remaining butter on top. Sprinkle with fresh ground pepper and no more than a pinch of salt.
  • Fold the other side of the parchment paper over the salmon. Roll and crimp edges together to create a tightly-sealed half-moon shaped packet. Place packet on baking sheet and bake for 15-25 minutes (depending on thickness of fillet). Remove from oven and allow to sit for 3-5 minutes.
  • To serve, place the packet on a dinner plate and create two slashes on the top of the paper in the shape of an X.
  • Peel back paper and enjoy!

Steps:

  • Preheat the oven to 350°F (180°C).
  • Fold the parchment paper in half, then open up.
  • On one half of the parchment, arrange the sliced potatoes. In a small bowl, combine the butter, garlic, and parsley. Drizzle half of the garlic butter mixture over the potatoes. Season with salt and pepper.
  • Lay the salmon over the potatoes, and drizzle over the remaining garlic butter. Season with salt and pepper.
  • Fold the parchment paper over the salmon, and cinch the paper together by folding it over itself along the edges.
  • Bake for 30 minutes or until internal temperature of salmon reaches 145˚F (63˚C).

1 stalk broccoli
1 carrot
12 green beans
4 teaspoons butter
8 sprigs thyme
Salt and pepper

4 5-ounce salmon fillets
3 lemons
Salt and pepper
8 sprigs thyme

Steps:

  • To prepare the vegetables: Preheat the oven to 350°F.
  • Place 4 sheets of parchment paper on a work surface. Trim the cauliflower and broccoli florets from the stems, discarding the stems, and divide the florets among the parchment sheets.
  • Peel the carrot and cut into 1/16-to 1/8-inch-thick round slices. Place some of the carrots on each parchment sheet. Cut the ends off the green beans and cut each bean into 3 or 4 pieces. Arrange some of the beans on each parchment sheet and top with 1 teaspoon of butter. Place 2 thyme sprigs and 1 teaspoon of water on each parchment sheet. Season with salt and pepper. Bring the sides of the parchment to the middle and fold over three times, about 1/2 inch each time. Fold the ends of the parchment and tuck them under the package to loosely enclose the vegetables. Place the vegetable packets on an ungreased baking sheet and bake for 25 minutes.
  • Meanwhile, prepare the salmon: Lay 4 sheets of parchment paper on a work surface and place 1 salmon fillet in the center of each sheet. Cut 2 of the lemons in half, remove the seeds, and squeeze the juice from 1 lemon half on each salmon fillet. Season with salt and pepper and top each fillet with 2 thyme sprigs. Bring the sides of the parchment to the middle and fold over three times, about 1/2 inch each time. Fold the ends of the parchment and tuck them under the package, loosely enclosing the salmon. Add the salmon packets to the baking sheet and bake them for 10 minutes. (If your pieces of salmon are thicker than 3/4 inch, you will need to cook them up to 5 minutes longer.)
  • Cut the remaining lemon into 8 wedges.
  • Remove the salmon and vegetables from the parchment and arrange them on plates with the lemon wedges.

Some of the tastiest vegetables I've ever had, and best of all it's simple and requires very little clean-up.

1 (8 -12 ounce) boneless salmon fillets
1 small leek
1 small carrot
1/2 small parsnip
2 large cremini mushrooms
2 tablespoons unsalted butter, softened
1 fresh garlic clove
1 tablespoon fresh sage leaf (tightly-packed)
1 small lemon, juice of
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
2 teaspoons fresh chives, chopped finely
parchment paper (One 15x24 inch piece)
1/4 teaspoon dried thyme (optional) or 1/4 teaspoon fresh thyme (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • Cut the tough green tops from the leek and slice the tender lighter-colored section into very thin rounds. Cut (julienne) carrot and parsnip into matchsticks approximately 1/2 inch long and 1/4 inch wide. Slice crimini mushrooms in half lengthwise and then into 1/4 inch slices.
  • Combine butter, lemon juice, thyme, sage, pepper and salt in a food processor and pulse until thoroughly pureed.
  • Mix vegetables together. Lay in a nest about the size of the salmon filet on one side of the parchment paper. Place 1/3 of the sage-butter mixture on top of the vegetables.
  • Place salmon on top of vegetables and spread with the rest of the sage-butter mixture. Sprinkle chopped chives on top, distributing evenly.
  • Fold the other side of the parchment paper over on top of the salmon. Roll and crimp edges together to create a tightly-sealed half-moon shaped packet. Place packet on baking sheet and bake for 12-15 minutes for a thin fillet, or 20-30 minutes for a thicker filet. Remove from oven and allow to sit for 5 minutes.
  • To serve, place the packet on a dinner plate and create two slashes on the top of the paper in the shape of an X. Peel back paper and enjoy!
  • (Alternately, you can cut the salmon into 2-3 pieces and place on individual plates next to a generous spoonful of the vegetables).
