CIDER-GLAZED CHICKEN WINGS WITH APPLE SALAD



Cider-Glazed Chicken Wings with Apple Salad image

1 tablespoon extra-virgin olive oil, plus more for the pans
2 1/2 pounds split chicken wings
1 tablespoon hot smoked paprika
Kosher salt and freshly ground pepper
1 cup apple cider
1/3 cup plus 2 teaspoons apple cider vinegar
2 tablespoons Worcestershire sauce
1 tablespoon cold unsalted butter, cut into pieces
2 small apples (1 red, 1 green), thinly sliced
4 stalks celery, thinly sliced, plus 1/2 cup celery leaves
3 scallions, thinly sliced

Steps:

  • Brush 2 baking sheets with olive oil, place in the upper and lower thirds of the oven and preheat to 450˚. Toss the wings in a large bowl with the paprika, 1/2 teaspoon salt and a few grinds of pepper. Divide the wings between the hot baking sheets; use tongs to space them out as much as possible. Roast, switching the pans halfway through, until the wings are crisp and golden, about 30 minutes.
  • Meanwhile, combine the cider, 1/3 cup vinegar and the Worcestershire sauce in a small saucepan. Bring to a simmer over high heat, then lower the heat to medium and cook until reduced to 1/2 cup, about 12 minutes. Whisk in the butter.
  • Once the wings are done, combine all the wings on one baking sheet and turn on the broiler. Brush the wings with about one-quarter of the cider sauce and broil until glazed, 1 to 2 minutes. Flip and broil 1 more minute. Transfer to a large bowl and toss with the remaining cider sauce.
  • Toss the apples, celery and leaves, half of the scallions, the olive oil and the remaining 2 teaspoons vinegar in a bowl; season with salt and pepper. Divide the salad and wings among plates; top with the remaining scallions.

A spiced cider glaze highlights the sweet and tart flesh of a baked apple that smells almost as good as it tastes.

6 Rome Beauty or other firm red apples
Juice and zest of 1 lemon (about 3 tablespoons juice)
1 whole vanilla bean
1 teaspoon ground cinnamon
1 1/2 teaspoons dark-brown sugar
2 cups cider or more if needed

Steps:

  • Heat oven to 425 degrees with rack in center. Core the apples. Using a vegetable peeler, remove half an inch of skin around the top of each apple; reserve peelings. Brush lemon juice inside and around top of each apple to prevent browning. Arrange apples in a 9 by 12 3/4 by 2 1/2-inch roasting pan. Mince the lemon zest, and divide evenly among the apple cavities. Cut the vanilla bean crosswise into six even pieces. Split one small piece lengthwise; scrape out the seeds, and place seeds and split bean into an apple. Repeat for each apple. Divide the cinnamon and brown sugar evenly among the apples. Pour the cider into the pan, and arrange the reserved peelings around the apples.
  • Cook 20 minutes. Remove peelings, and set aside. Baste apples, and continue cooking 15 to 20 minutes more. Insert a knife into base of one apple to see if still firm. (If soft when pierced, transfer apples to a platter, and proceed to step 3.) Baste apples again. If the cider has almost evaporated, add enough fresh cider to cover the bottom of the pan. Continue to cook apples until soft when pierced with a knife, 10 to 20 minutes more. Transfer to a serving platter.
  • Place pan with remaining cider over high heat on stovetop. Cook until the liquid is reduced to a syrupy glaze, 4 to 6 minutes. Garnish each apple with glaze and the reserved peelings, and serve.

Pork chops with a glossy apple cider glaze is really easy, and while there's no starch or extra butter involved, it reduces quickly to a thick, rich, sweet-tart apple syrup.

6 (6 ounce) boneless center-cut pork chops
salt and ground black pepper to taste
1 tablespoon vegetable oil
1 tablespoon butter
3 cloves garlic, minced
¼ cup apple cider vinegar
2 cups apple cider
1 teaspoon Dijon mustard
1 teaspoon minced rosemary
1 pinch red pepper flakes

Steps:

  • Season pork chops with salt and black pepper.
  • Heat oil and butter in a heavy skillet over medium-high heat. Cook pork chops in the hot oil mixture until browned on both sides and pork is slightly pink in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pan from the heat; transfer pork chops to a plate.
  • Stir garlic into the pan and place over medium-high heat; cook and stir for 30 seconds. Pour in vinegar and scrape up any browned bits from the bottom of the pan. Add apple cider and Dijon mustard, bring mixture to a boil, and cook until sauce is reduced and thick, 3 to 4 minutes. Stir in rosemary and red pepper flakes; season with salt and black pepper to taste.
  • Return pork chops to the pan to warm slightly, 1 to 2 minutes per side.

1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine salt
Large pinch freshly grated nutmeg
1/3 cup light brown sugar
4 tablespoons unsalted butter, softened
1/2 teaspoon pure vanilla extract
1 large egg
1/4 cup sour cream
1/2 small apple, peeled, cored and cut into 1/4-inch pieces (about 1/2 cup)
2 cups apple cider
1 small cinnamon stick
2 tablespoons honey
1 teaspoon confectioners' sugar

Steps:

  • For the apple-vanilla muffins: Preheat the oven to 350 degrees F and center an oven rack. Line a mini-muffin tray with your favorite liners.
  • Combine the flour, baking powder, baking soda, salt and nutmeg together in a large bowl.
  • Combine the sugar, butter and vanilla in the bowl of a stand mixer fitted with a paddle (or in a large bowl if using a hand mixer). Beat on medium-high speed until light and creamy, about 4 minutes, scraping as needed. Add the egg and beat until incorporated (don't worry if the batter curdles). Adjust to medium-low speed and alternate adding the flour mixture and the sour cream in batches, beginning and ending with the flour. Fold in the apples using a spatula.
  • Grease a small ice-cream scoop (about 1 1/4 inches) with nonstick spray and fill the liners about 3/4 of the way to the top.
  • Bake, rotating halfway through, until a toothpick inserted in the muffins comes out clean and the tops spring back when touched, 10 to 12 minutes. Let rest in the hot muffin pan for 3 minutes, then transfer to a cooling rack.
  • For the cider glaze: Boil the cider with the cinnamon stick over medium-high heat until the cider is reduced to about 1/2 cup, about 20 minutes. Whisk in the honey and continue to boil until the liquid is syrupy and just coats the back of a spoon, 4 to 5 minutes. Discard the cinnamon stick and remove from the heat. Whisk in the confectioners' sugar and transfer to a small bowl. Let sit until slightly set but still warm, about 3 minutes.
  • Dip the tops of the muffins in the glaze and serve.

Steps:

  • Note: Enough for a large turkey (approx 22 pounds).
  • Combine all ingredients in a small saucepan and bring to a boil.
  • Reduce heat and simmer for 35-40 minutes or until mixture is reduce by approx half.
  • Strain through a sieve and reserve.
