GARLIC CHUTNEY (RED CHUTNEY)
Hot, spicy and tangy condiment made with red chilies, garlic and spices. It is best served with snacks & chaats.

Steps:
- Optional - Skip this step if you prefer to use red chilli powder. Break red chilies to 2 parts each and deseed them. Remove the stalks. Add them to a bowl and pour hot water. Once they soften, remove them from water and add to a grinder/ blender jar.
- Add garlic, salt, sugar, vinegar, cumin seeds and 3 to 4 tablespoons water to the same blender jar.
- Blend all of them until smooth and thick adding more water as needed. It should have a sauce like consistency.
- Taste test and add more sugar, salt or vinegar to suit your taste. It should be well balanced in flavors and taste slightly hot, spicy, tangy and mildly sweet.
- Garlic chutney is ready to serve with snacks, breakfasts and chaats.

ROASTED GARLIC DRESSING
This is a very versatile dressing that you can use on salads or on steamed veggies (asparagus and broccoli are good with this). Roasting the garlic makes it mellow and sweet. Adapted from a Moosewood recipe.

Steps:
- In an unoiled, small heavy skillet, roast the unpeeled garlic cloves on medium heat, turning them occasionally; cook the garlic for about 10-15 minutes, until it's soft and covered with dark spots.
- Test for doneness by pressing a clove with a spoon- if you see small bubbles of juice bursting through the skin, remove them from the skillet.
- When cool enough to handle, peel the cloves.
- In a blender or food processor, puree the garlic with the oil, vinegar, water, salt, pepper and mustard until smooth.
- covered and refrigerated, this dressing will keep for several weeks.

- In a blender blend together chutney, red pepper flakes, lemon juice, water, garlic, and salt to taste until smooth. With motor running, add oil in a stream and blend dressing until emulsified.
