It's saucy without using tons of oil, and there's loads of sub options. Quick and utterly scrumptious - loaded with tons of broccoli!

2 broccoli heads ((BIG!))
1 cup shredded cheese (or more!)
2 tsp lemon zest
2 tbsp lemon juice ((or more!))
5 tbsp extra virgin olive oil
1/3 cup parmesan (, finely grated)
2 garlic cloves (, minced)
1 tsp mixed dried herbs ((or fresh!))
1/2 tsp+ red pepper flakes ((add more if you want spicy!))
1 tsp sugar
3/4 tsp salt
1/2 tsp pepper
More parmesan

Steps:

  • Cook pasta: Boil a large pot of water with 2 tsp salt, add pasta.

Kosher salt
1/2 cup blanched almonds
1 cup lightly packed fresh basil
1 28-ounce can whole San Marzano tomatoes
1 head broccoli, florets and some stems, cut into 1 1/2-inch pieces
1 head broccoli, florets and some stems, cut into 1 1/2-inch pieces
Freshly ground pepper
12 ounces bucatini or spaghetti
2 cloves garlic
1/2 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil. Put 2 pieces of foil side by side on a baking sheet. Put the almonds on one piece of foil and the broccoli on the other. Transfer to the oven; roast until the almonds are lightly toasted, about 7 minutes. Remove the foil with the almonds. Continue roasting the broccoli until tender, about 7 more minutes. Season the broccoli with salt and pepper and transfer to a large bowl.
  • Add the pasta to the boiling water and cook as the label directs. Meanwhile, pulse the almonds in a food processor until finely chopped; with the motor running, add the garlic and process until finely chopped. Drizzle in the olive oil and process until blended. Add the basil and pulse until smooth; transfer to the bowl with the broccoli.
  • Put the tomatoes and half of their juice (about 1 cup) in the food processor and pulse until pureed. Add to the bowl with the broccoli mixture and stir to combine. Add 1 teaspoon salt and 1/2 teaspoon pepper. Drain the pasta and toss with the sauce.

12 oz (3-1/2 cups) uncooked penne pasta
3 1/2 c broccoli florets
1 Tbsp olive oil
2 to 4 clove garlic, minced
1 can(s) (28 oz.) crushed tomatoes with added puree, undrained
1/4 c dry red wine
1 Tbsp chopped fresh basil - or - 1 tsp. dried basil leaves
1 tsp sugar
1/2 tsp salt

Steps:

  • 1. Cook penne pasta to desired doneness as directed on package, adding broccoli during last 4 minutes of cooking time.
  • 2. Meanwhile, in a large skillet, heat oil over medium heat until hot. Add garlic; cook and stir 2 to 3 minutes or until tender. Stir in tomatoes and remaining ingredients; simmer 15 to 20 minutes or until thickened, stirring occasionally.
  • 3. To serve, drain penne and broccoli; arrange on serving platter. Spoon sauce over top. If desired, sprinkle with Parmesan cheese.

Pasta With Broccoli in Sweet Tomato Sauce image

I like this recipe because it is fresh, light, low calorie, low sodium, it is eazy to make, is a meatless dish and it has lots of flavor (sweet, garlic, tomato, with a little spice). It is a good alternative to traditional spaghetti with tomato sauce, and makes for a good summer dish. I got this recipe from a "Seniors/ Cooking for Two" category cookbook I checked out from the library. You can make a lot of substitutions in this recipe too. You can substitute frozen broccoli(instead of fresh), fresh tomatoes (instead of canned), pine nuts (instead of almonds), and spaghetti noodles (instead of linguine). I switch on using fresh vs canned/frozen ingredients depending on what is more economical (sometimes I will buy fresh broccoli when it is on sale and blanch what I don't use and save it in the freezer).

4 cups broccoli florets
1 tablespoon olive oil
2 cloves minced garlic
1 (28 ounce) can diced tomatoes with juice
2 tablespoons raisins, chopped
1/8 teaspoon cayenne pepper
1 1/2 tablespoons chopped almonds
6 ounces linguine
2 tablespoons minced parsley

Steps:

  • In medium saucepan, cook the broccoli in enough boiling water to cover until just tender-- 2 to 3 minutes Rinse under cold running water, drain and set aside (blanch broccoli).
  • In a large saucepan, heat the olive oil over moderately low heat for 30 seconds add the garlic and cook until garlic is slightly browned/ golden about 3 minutes Then add the tomatoes, raisins, cayenne pepper, and simmer uncovered for 15 minutes Then add the almonds and simmer for 5 minutes longer.
  • In the mean time cook linguine according to package directions, without salt Drain and place in a large serving bowl.
  • Add the cooked broccoli to the tomato sauce and stir to combine Pour over the pasta and sprinkle with the parsley.

3 tablespoons olive oil
3 tablespoons butter
4 minced garlic cloves
8 ounces bow tie pasta
3 -4 cups fresh broccoli florets
2 cups cherry tomatoes (1 Pint)
fresh parmesan cheese
salt
pepper

Steps:

  • Prepare pasta according to package directions and drain completely.
  • Steam broccoli until fork tender, drain completely.
  • Cut tomatoes in half.
  • In skillet over medium heat melt butter in olive oil.
  • Add garlic and cook for 2-3 minutes.
  • Put the prepared pasta in skillet and toss to coat.
  • Add the tomatoes and toss for 2-3 minutes.
  • Add the broccoli and toss 1-2 minutes.
  • Salt and Pepper to taste.
  • Sprinkle with Grated Parmensa Cheese.

1 lb broccoli, separated into small flowerets, stalks peeled and cut into 1/4 inch julienne
2/3 cup minced scallion
1/3 cup butter
1 cup half-and-half
1 teaspoon dried basil
1 garlic clove, crushed to a paste
1/2 cup parmesan cheese
1/2 cup gorgonzola, cut into small cubes
1 pinch cayenne
1 lb linguine, cooked al dente
1/3 cup finely chopped walnuts, lightly toasted

Steps:

  • Cook broccoli in boiling, salted water for 3-4 minutes or until tender.
  • Drain and refresh under cold, running water, and pat dry.
  • Cook scallion in butter until softened; add cream, basil and garlic; simmer, stirring.
  • Add cheeses and stir until well-combined.
  • Stir in broccoli and cayenne and salt and pepper to taste and cook until heated through.
  • Serve sauce over linguine and sprinkle with toasted walnuts.

This is a great quick version of an Italian traditional side dish in our family all the way from Italy. You can use fresh tomatoes and basil. However, as a mother of four, I opt for the quick method as I'm sure other parents of small ones can appreciate. The kids really love this dish too. Buon Appetito!

2 tablespoons olive oil
1 (14.5 ounce) can diced tomatoes with balsamic vinegar, basil and olive oil
1 pound broccoli florets
2 cloves garlic, chopped
salt and pepper to taste

Steps:

  • Heat olive oil in a large skillet over medium heat. Add garlic, and cook for a few minutes, stirring constantly. Pour in the tomatoes with their juices, and simmer until the liquid has reduced by about 1/2. Place the broccoli on top of the tomatoes, and season with a little salt and pepper. Cover, and simmer over low heat for 10 minutes, or until the broccoli is tender. Do not over cook the broccoli, it should be a vibrant green. Pour into a serving dish, and toss to blend with the sauce before serving.

2 cups fresh broccoli florets
2 large tomatoes, peeled, seeded and coarsely chopped

1/2 cup sliced ripe olives
1/2 cup minced fresh parsley
1/4 cup grated Romano cheese

  • In a large skillet or Dutch oven, bring water to a boil. Add spaghetti; boil, uncovered, for 5 minutes. This is an easy, budget-friendly Italian dish that I found in the paper. Since I usually have most of these ingredients on hand, I hope to try it soon. Until then, I'm putting it here for safe keeping.

1 lb rigatoni pasta
1 tablespoon olive oil
1 lb boneless skinless chicken thighs, cut into 1-inch pieces
1 cup diced onion
1 tablespoon chopped garlic
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon kosher salt
1 teaspoon sugar
1 cup red wine
1 (28 ounce) can diced tomatoes
1/2 lb broccoli, chopped into 1/2-inch pieces
1 cup grated parmigiano-reggiano cheese

Steps:

  • Boil pasta in 6 quarts of water for 8 to 10 minutes. (The pasta will be slightly undercooked). Drain, and set aside. Do NOT rinse.
  • Heat the oil on medium high in a pot large enough to hold the 1 pound of cooked pasta, then add the chicken pieces. Cook for 2 minutes, turning the chicken to brown evenly on all sides.
  • Add the diced onion, and cook for 2 more minutes. Stir in the chopped garlic, basil and oregano and cook for 1 minute. Season with salt and sugar, then pour in the red wine. Bring to a simmer, and reduce the liquid by half.
  • Toss in the diced tomatoes, and return to a simmer. Cook for an additional 5-7 minutes, or until the chicken is thoroughly cooked. Add the chopped broccoli, and continue cooking for 2 minutes.
  • Mix in the pasta, and cook until the pasta reaches your preferred doness. Finish by mixing in the parmeasan cheese and taste for salt.
