GOURMET OATMEAL COOKIES

Gourmet Oatmeal Cookies image

I've searched high and low for the ultimate oatmeal cookie recipe and finally, I've found the one that does it for me. These are chock full of goodies, have great flavour, are substantial without being a paperweight, moist and chewy on the inside, a bit firm on the edges. Cookie heaven.

Time 25m

Yield 30 serving(s)

Number Of Ingredients 13

1 cup rolled oats
1/4 cup steel cut oats
3 ounces bittersweet chocolate (chips or chopped up chunks)
3/4 cup pecans, toasted and chopped
4 ounces dried sour cherries, chopped (can substitute cranberries)
1 1/4 cups flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
3/4 cup butter, softened
1 1/2 cups dark brown sugar
1 egg
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees, and line cookie sheet with parchment paper.
  • Mix all the chunky stuff up in a medium bowl. (That's the oats, chocolate, cherries, and pecans.).
  • Whisk together the flour, baking soda, baking powder, and salt in another medium bowl.
  • In a large bowl, cream butter and sugar, till there aren't too many lumps. Then add the eggs and the vanilla and blend. Add the flour mixture bit by bit, blending as you go.
  • Then, fold in the chunky stuff. Don't worry, it'll look like there's more chunky stuff that cookie dough, but it will work.
  • Drop dough onto parchment lined cookie sheets, I like to portion out a bit less than 1/4 cup per cookie.
  • Bake for 10 minutes, but if you like them chewy, take them out when the edges look done, but the middles don't. They'll firm up as they cool.

Time 45m

Yield makes 9

Number Of Ingredients 9

50g butter , plus a little for greasing
2 tbsp maple syrup
1 dessert apple , unpeeled and coarsely grated (you need 85g)
1 tsp cinnamon
50g raisins
50g porridge oats
50g spelt flour
40g unblanched hazelnuts , cut into chunky slices
1 egg

Steps:

  • Heat oven to 180C/160C fan/gas 4 and lightly grease a non-stick baking tray (or line a normal baking tray with baking parchment). Tip the butter and syrup into a small non-stick pan and melt together, then add the apple and cook, stirring, over a medium heat until it softens, about 6-7 mins. Stir in the cinnamon and raisins.
  • Mix the oats, spelt flour, and hazelnuts in a bowl, pour in the apple mixture, then add the egg and beat everything together really well.
  • Spoon onto the baking tray, well spaced apart to make 9 mounds, then gently press into discs. Bake for 18-20 mins until golden, then cool on a wire rack. Will keep for 3 days in an airtight container or 6 weeks in the freezer.

CRANBERRY-NUT OATMEAL COOKIES

Cranberry-Nut Oatmeal Cookies image

I made a few changes to a recipe on the back of a canister of oats. Now this is the only one I use. I often use hazelnuts in place of the pecans, and they are just as good. I hope you enjoy them as much as we do. You can make these larger or smaller; simply adjust the baking time. Keep loosely covered, and they will maintain their chewiness for several days, if they last that long.

Yield 36

Number Of Ingredients 12

1 cup unsalted butter at room temperature
1 ½ cups light brown sugar
2 teaspoons vanilla extract
2 large eggs
2 cups old-fashioned rolled oats
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 ½ teaspoons coarse kosher salt
½ teaspoon ground nutmeg
½ cup dried cranberries
½ cup chopped toasted pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place an oven rack in the upper third of the oven. Line baking sheets with parchment paper.
  • Place unsalted butter and light brown sugar into the work bowl of a stand mixer and mix on medium-slow speed until very fluffy, 3 to 4 minutes. Beat in the vanilla extract, followed by eggs, one at a time. Reduce mixer speed to lowest speed and leave running.
  • In a separate bowl, whisk together the rolled oats, flour, baking powder, cinnamon, kosher salt, and nutmeg. Pour the dry ingredients into the slowly running mixer in thirds; mix in dried cranberries and nuts until just incorporated. Using a large cookie scoop, place dough on prepared baking sheet about 2 inches apart.
  • Bake one batch at a time in the preheated oven just until the edges are brown, 17 to 18 minutes. Allow to cool on baking sheets for about 5 minutes before removing to finish cooling on wire racks.

Oregon has an abundance of nuts, and these nutty cookies are popular with the ladies at my craft club. Growing up during the Depression, my mother taught us to use what was available and said, "It doesn't have to be expensive to be good." She was right! -Selmer Looney, Eugene, Oregon
