Categories     dessert

Time 1h40m

Yield 8-10 servings

Number Of Ingredients 12

Nonstick cooking spray, for the pan
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon kosher salt
3/4 cup granulated sugar
1 stick (8 tablespoons) unsalted butter, melted
2 teaspoons pure vanilla extract
2 large eggs, at room temperature
1/2 cup bittersweet chocolate chunks
2 teaspoons turbinado sugar
1 teaspoon flake salt
Green frosting and sprinkles, to decorate

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-inch baking pan with nonstick cooking spray.
  • In a small bowl, whisk together the flour, cocoa powder and kosher salt. Add the granulated sugar, melted butter, vanilla and eggs and whisk until a few lumps remain. Stir in the chocolate chunks.
  • Pour the batter into the prepared pan and sprinkle with the turbinado sugar and flake salt. Bake until a toothpick inserted in the center comes out with just a few moist crumbs, about 25 minutes. Allow to cool completely in the pan.
  • Cut the brownie in half. Using the tip of a knife, slice in angles making W's with the cut to form triangular pieces. Remove each piece and decorate with frosting and sprinkles as desired.

CHRISTMAS BROWNIE TREES

A simple brownie recipe becomes extra special with the addition of green frosting and candy. We bake the brownies in round cake pans to make cutting triangle shapes easy, with no trimmings or waste.

Time 2h10m

Yield 16 pieces

Number Of Ingredients 18

1 cup (2 sticks) unsalted butter, melted and cooled, plus more for greasing the pans
1 1/2 cups granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup all-purpose flour (see Cook's Note)
1/2 cup unsweetened cocoa powder
1 teaspoon fine salt
1/2 teaspoon baking powder
3/4 cup semisweet chocolate chips
Sixteen 1 1/2-inch pieces candy cane
White and gold sanding sugar and small non-pareil candy-covered chocolates, such as Sno-Caps, for decorating
1 cup confectioners' sugar
1/2 stick (4 tablespoons) unsalted butter, at room temperature
Pinch of fine salt
1/2 teaspoon vanilla extract
1/4 to 1/2 tablespoon whole milk
24 drops green food coloring
1 drop red food coloring

Steps:

  • For the brownies: Preheat the oven to 350 degrees F. Butter the bottom and sides of two 8-inch round cake pans. Cut two 8-inch circles out of parchment and line the bottoms of the cake pans with the parchment.
  • Stir together the butter, granulated sugar, vanilla and eggs in a medium bowl. In another bowl, whisk together the flour, cocoa powder, salt and baking powder. Add the dry ingredients to the wet ingredients and stir until just combined. Stir in the chocolate chips and divide the batter between the prepared pans, smoothing the tops. Bake until the brownies begin to gain a crust around the edges, pull away from the edge and a toothpick inserted in the center comes out clean, 35 to 40 minutes.
  • Let the brownies cool fully in the pans on cooling racks, about 1 hour. Cut each circle into 8 equal triangles with a knife. Use a small offset spatula or pie server to lift each triangle out of the pan.
  • For the American buttercream frosting: Combine the confectioners' sugar, butter and salt in the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl if using a handheld electric mixer). Mix on low speed until mostly incorporated. Add the vanilla, increase the speed to medium-high and mix until smooth. Loosen the consistency with milk as desired. Add 24 drops green food coloring and 1 drop red food coloring and mix on medium speed for 1 minute. Set aside.
  • To assemble: Using the tip of a paring knife or a skewer, poke a small hole along the bottom edge of each brownie. Insert a candy cane "trunk" into each hole.
  • Fill the piping bag with the frosting and cut 1/4 inch off the tip. Using a zig-zag motion, pipe the frosting from the base to the tip of each tree. Decorate the trees with the sanding sugars and candy-covered chocolate, as desired.

Water, vegetable oil and egg called for on brownie mix box
Miniature candy canes (2 inch), unwrapped
1 or 2 drops green food color

  • Preheat oven to 350 degrees F. Line a 9- x 13-inch baking dish with aluminum foil, extending foil over edges. Spray foil with cooking spray. Spread brownie batter evenly into baking dish and bake 25 to 30 minutes or until a wooden toothpick inserted in center comes out clean. Cool brownies completely then freeze 30 minutes.
  • Using foil, lift brownies from baking dish and place on cutting board, removing the foil. To cut a tree shape from brownies, start at center of 1 short side, and make 2 diagonal cuts to corners of opposite short sides, forming a triangular piece in the center. Place the outer cuts from the brownie and place them on a large flat tray, placing the cut sides together. This will look like a Christmas tree.
  • In a medium bowl, combine frosting, food color, and mint extract; mix well. Spread 1/3 cup frosting over top of tree shape. Stack with the whole tree shaped brownie, trimming edges as needed.
  • Frost sides and top of brownie tree with remaining frosting. Decorate with candies as desired. Place candy bar at base of brownie tree to form a tree trunk.

  • Preheat oven to 325°F. Lightly grease a 9- x- 13-inch metal baking dish with cooking spray. Line with two pieces of parchment paper fitting the length and width of the pan with two inches of overhang on each side (allowing for the easy lifting out of the brownies when they are finished baking).
  • In a large bowl, whisk together cocoa, sugar, and flour. In a separate bowl, whisk together butter, eggs, vanilla, and salt until smooth. Add liquid ingredients to dry ingredients and stir with a spatula until no pockets of dry ingredients remain. Pour batter into prepared baking dish and use spatula to spread batter evenly into pan. Bake until a toothpick inserted into the center comes out clean and the center is slightly firm to the touch, about 30 minutes. Allow to cool completely in pan, 1 hour.
  • Use the overhanging parchment paper to lift brownies out of pan and onto a cutting board. Cut into three long rows, 3 inches in height. Then cut each row into 6 equilateral triangles, wiping the knife clean with a wet paper towel in between cuts to make them cleaner.
  • In a small bowl, stir together 1/2 cup frosting with green food coloring to reach desired color. Transfer to a piping bag. Transfer another 1/2 cup white frosting to another piping bag. Snip the ends of both piping bags and pipe swooping strands of green and white frosting across the brownies. Decorate with red sprinkles.
