CHRISTMAS SANDWICH CREMES
These melt-in-your-mouth sandwich cookies have a scrumptious filling. I helped my sister make these in high school when she needed a project in her home economics class. My guess is that these were some of the best Christmas cookies in her class. She got an A+! -Janice Poechman, Walkerton, Ontario

Steps:
- In a small bowl, combine the butter, cream and flour. Cover and refrigerate for 2 hours or until dough is easy to handle., Divide into thirds; let one portion stand at room temperature for 15 minutes (keep remaining dough refrigerated until ready to roll out). Preheat oven to 375°. On a floured surface, roll out dough to 1/8-in. thickness. Cut with a 1-1/2-in. round cookie cutter. Place cutouts in a shallow dish filled with sugar; turn to coat. Place on ungreased baking sheets. Prick with a fork several times. Bake 7-9 minutes or until set. Cool on wire racks. , For filling, in a small bowl, cream butter and sugar until light and fluffy. Add vanilla. Tint with food coloring. Spread about 1 teaspoon filling over half of the cookies; top with remaining cookies.

Delicate,light, flaky, melt in your mouth pastry cookies are filled with sweet cream filling. Such a wonderful delicious cookie you'll have to have more than one!

- In a mixing bowl, with the paddle attachment, combine butter, cream and flour. Mix will.
- Cover in plastic wrap and refrigerate for 2 hours or until dough is easy to handle.
- Divide dough into thirds; let one portion stand at room temperature for 15 minutes (keep remaining dough refrigerated until ready to roll out).
- On a floured surface, roll out dough to 1/8 inch thickness.
- Cut with a 1 -1/2 inch round cookie cutter. Place cutouts in a shallow dish filled with sugar. Gently press cookie into sugar. Turn to coat.
- Place cookies on a silicone lined, or parchment lined, baking sheet. Prick with a fork several times.
- Bake at 375° for 7-9 minutes or until set.
- Cool on parchment lined wire rack.
- For filling, in a mixing bowl, cream butter and sugar. Add vanilla. Tint with food coloring. Spread about 1 teaspoon of filling over half of the cookies; top with remaining cookies.

- In a large bowl, cream butter and confectioners' sugar until light and fluffy. Add milk. Combine the flour, cornstarch and salt; add to the creamed mixture, beating just until dough forms a ball. , On a lightly floured surface, knead 20 times. Roll out 3/8-in. thickness. Cut with a 2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. , Bake at 350° for 12-13 minutes or until edges are lightly browned. Remove to wire racks to cool. Spread jam over the bottom of half of the cookies; top with remaining cookies. , In a large bowl, beat the butter, confectioners' sugar, vanilla and food coloring until smooth. Place mixture in a heavy-duty resealable plastic bag; cut a small hole in a corner of bag. Pipe frosting in tree shapes on cookies. Garnish with candied cherries and sprinkles.

CARAMEL CREME SANDWICH COOKIES
These are my all-time favorite cookies. The recipe is my mother's. She usually makes them at Christmas, but I say make them anytime. After all, there is no bad time for good cookies.

Steps:
- Preheat oven to 325°.
- Cream 1 cup butter, then slowly add brown sugar and cream well.
- Blend in egg yolk, then stir in flour.
- Continue stirring until a ball of dough forms.
- Chill dough for easier handling.
- Shape dough into balls the size of large marbles.
- Flatten each ball of dough to about 1/8" thickness using palm of hand.
- Mark each cookie by pressing with a fork.
- Bake for 8-10 minutes or until lightly browned.
- While cookies are baking, slightly brown 3 tablespoons of butter in a saucepan.
- Remove saucepan from heat and blend in powdered sugar.
- Gradually add vanilla and evaporated milk, stirring until a spreading consistency is achieved.
- Spread filling on one cookie, then top with a second cookie.
- Pour a tall glass of cold milk and enjoy the cookies.
