BONNIE'S CHOCOLATE MARSHMALLOW LOG
I like this recipe for many reasons. It is a very easy to prepare and slice, looks great on a dessert plate, soft and chewy, and tastes good, too. It is hard to eat just one slice of this old-fashioned Chocolate Marshmallow Log. I am happy to share this recipe with my JAP friends. Enjoy! Photos are my own, recipe from...

Steps:
- 1. Assemble all the ingredients before you begin. (chocolate chips, butter, marshmallows and chopped walnuts.)
- 2. Chop the pecans.
- 3. Melt the butter in a medium sauce pan over medium low heat, and stir in the chcolate chips.
- 4. Stir the mixture until smooth, then remove from burner and set aside to cool. Set timer for 7 minutes. NOTE: YOU DO NOT WANT MARSHMALLOWS TO MELT.
- 5. After the mixture is cool, add the walnuts and stir, then add the marshmallows. Gently mix well, and pour mixture onto 2 pieces of wax paper. Roll in the wax paper into two tight 7 inch logs. Then roll in two pieces of tin foil to give your roll some stability. Refrigerate for about a half hour.
- 6. Remove from fridge and carefully open the foil. Use the same tin foil you rolled the log in and add the chopped pecans to it. The log should be firm enough to roll in the chopped pecans as depicted in my photo. When the roll is covered with nuts, wrap the log tightly in the same foil and return to the refrigerator for 24 hours.
- 7. Slice the log into 1/4 inch slices the next day. Store in a tight container in the fridge. You will have a lot of nuts left in the tin foil, bag them up and freeze them to go in cookies, ice cream sundaes or other desserts.
- 8. Here is how it looks! Enjoy!

MAKE THIS YULE LOG RECIPE FOR CHRISTMAS
Steps:
- For the cake: Preheat the oven to 350˚. Butter a 12-by-17- inch rimmed baking sheet. Line with parchment paper, leaving an overhang on all sides. Butter the parchment.
- Beat the egg whites, cream of tartar and salt in a large bowl with a mixer on medium-high speed until frothy. Add 1/4 cup granulated sugar and beat on high speed until stiff, glossy peaks form, about 2 minutes.
- Sift together the flour, cocoa powder and baking powder in a medium bowl. In a separate large bowl, combine the egg yolks, the remaining 1/2 cup sugar and the vanilla. Beat on high speed until thick and creamy, 3 to 4 minutes. Beat in the melted butter and coffee until combined.
- Add the flour mixture to the yolk mixture and beat on low speed until well combined. Fold a spoonful of the beaten egg whites into the batter until no streaks remain. Gently fold in the remaining egg whites until combined.
- Transfer the batter to the prepared pan, gently nudging the batter so it fills the corners. Give the pan a little shimmy to even it out. Bake until the top just starts to spring back when gently pressed, 10 to 12 minutes (the top might still feel a little tacky). Do not overbake or the cake will crack.
- Place a clean dish towel on a large wire rack. Dust with 2 tablespoons powdered sugar. While the cake is still hot, loosen the edges from the pan, then turn out the cake onto the towel; carefully remove the parchment. Dust the top with the remaining 2 tablespoons powdered sugar.
- Starting at one of the long sides, use the towel to tightly roll up the cake with the towel inside. Position the cake seam-side down and let cool about 1 hour.
- For the filling: Beat the cream cheese in a large bowl with a mixer on low speed until just smooth. Add the powdered sugar and beat until smooth, about 1 minute. Gradually beat in the heavy cream 1/4 cup at a time, making sure the mixture is smooth before adding more cream. Increase the speed to medium high and beat until stiff peaks form, 2 to 4 minutes. Add the vanilla and beat for a few more seconds, just to combine.
- Carefully unroll the cooled cake and spread evenly with the filling, leaving a 1/4- to 1/2-inch border on all sides. Re-roll the cake, using the towel to help you. Cover the cake roll with parchment paper and then tightly wrap in plastic wrap. Chill for at least 2 hours.
- Meanwhile, for the frosting: Put the chocolate in a medium bowl. Bring the heavy cream and corn syrup to a simmer in a saucepan, then pour over the chocolate. Let sit for 5 minutes, then whisk until smooth. Let thicken at room temperature until spreadable, about 2 hours.
- Unwrap the cake on a cutting board. Cut off one-fourth of the cake on a sharp diagonal for the branch. Position the branch against the remaining cake roll on a platter. Cover the cake with the frosting using an offset spatula, then drag a fork through the frosting to create a bark-like texture. Garnish with rosemary sprigs and pomegranate seeds.
CHOCOLATE YULE LOG
Steps:
- Lay cake on a clean work surface. Mix the whipped topping and vanilla extract together until combined. Spread white frosting over the top of the cake to coat completely. Roll up the cake, jelly-roll style, and then cover the outside of the cake with the frosting. Drag a fork along the length of the cake to form a bark design. Dust with cocoa powder and refrigerate.
- For the forest mushrooms, insert 1 toothpick through each marshmallow and then into the flat side of the chocolate kiss to form "mushroom." Group chocolate mushrooms along cake by inserting toothpicks into surface of cake, at intervals to resemble growths of forest mushrooms. Dust chocolate kiss candies with confectioners' sugar. Slice and serve.

- Step 1: Melt the butter and chocolate togetherThis could be done in a variety of ways. I chose to use a glass bowl and microwaved the 2 ingredients together for 1 minute. Then I stirred until the chocolate squares started to melt, microwaved for 30 more seconds, and stirred again until the chocolate was completely melted. (The microwave time may vary based on the strength of your microwave.) Step 2: Add powdered sugar and egg and beat well Make sure the melted mixture isn’t too hot, and stir in the powdered sugar and egg. The recipe I used is very old and called for an egg, so I used one! However, I did have my hesitation in putting a raw egg into a no bake recipe. So, if you’d rather not, just omit the egg. The recipe will turn out just fine without it. Beat the mixture together well until it’s nice and smooth. Step 3: Add marshmallows Pour in the whole package of marshmallows and stir until they are even distributed. Step 4: Lay out a large sheet of wax paper and pour on a generous a
- Pour in the whole package of marshmallows and stir until they are even distributed. Step 4: Lay out a large sheet of wax paper and pour on a generous amount of coconut.I used the biggest flake coconut I could find, and used almost the whole bag. Step 5: Spoon the marshmallow mixture onto the center of the coconut and form a log shape.
- Once the mixture was spooned out, I wet my hands with hot water and formed the mixture into a tight log. Then I spooned some of the coconut onto the top, and rolled the waxed paper around it. Step 6: Chill for at least 30 minutes and then slice

- Set up a few heavy glasses that the marshmallow pops can stand up in while cooling and setting without touching each other. (Once they have hardened it is fine to have them all standing/stored in the same glass and touching).
- Melt the chocolate according to package instructions, stirring constantly to ensure it doesn’t overheat or burn.
- Dip the tops of the marshmallows one at a time into the chocolate. Then hold upright and let it move down the sides a bit.

- Melt the butter and chocolate chips in a pan over low heat. Let the mixture cool slightly so that when you add the marshmallows they won't melt.
- Spread coconut on waxed paper. Divide the cooled mixture into two even portions. Form each portion into a long roll. Coat the rolls with the coconut, I do this by using the parchment paper to roll them back and forth as the mixture is sticky!

- Melt some chocolate (I usually use Ghirardelli chocolate, or Merckens chocolate candy melts). You will probably need 8-12 oz. of chocolate, depending on how many marshmallows you dip.
- Allow excess chocolate to drip off, then sprinkle your choice of sprinkles onto the chocolate (hold marshmallow over a plate or bowl, to catch the excess sprinkles).
