HOLIDAY HAYSTACK RECIPE
One of the easiest holiday treats to make are these no-bake Holiday Haystacks! You only need three ingredients and a microwave wave to make them. They are perfect when you need a last-minute cookie during the holidays.

Steps:
- Melt white bark in a large microwave-safe bowl in 30-second intervals until melted. Be sure to read the directions on the package for melting.
- Stir in chow mein noodles.
- If chocolate is still hot, allow it to cool a bit. Then stir in M&Ms.
- Place spoonfuls on a baking sheet lined with parchment paper.
- Chill and serve. Store in an airtight container in the refrigerator for up to 2 weeks.

Steps:
- Heat 2 inches of water in a pot to a simmer. Add the semisweet and milk chocolate to a bowl and place over the pot of simmering water. Allow to melt, stirring occasionally, 4 to 5 minutes.
- Meanwhile, add the noodles, almonds and pistachios to a large bowl and set aside.
- When the chocolate has melted completely, pour over the noodle and nut mixture. Mix until everything is well coated in the melted chocolate.
- Using 2 spoons, drop tablespoon mounds onto 2 parchment-lined baking sheets. Sprinkle the holiday sprinkles over the top. Allow to dry completely before storing, about 1 hour.
CHRISTMAS SPICED HAYSTACKS
They taste great from the freezer, and are great to pull out when company comes...or when you need a little snack. The ground cloves makes them taste like Christmas. Don't forget they need that time in the freezer to really set properly, and they don't need any defrosting time.

- Mix oats, coconut, and cloves together in a bowl.
- Combine sugar, cocoa powder, milk, applesauce, butter, vanilla extract, and salt in a pot. Bring mixture to a boil and continue boiling for 1 minute. Remove from heat and mix in the coconut mixture.
- Scoop tablespoonfuls onto a parchment paper-lined tray. Refrigerate until set, then transfer to an airtight container and freeze to fully set.

WHITE CHOCOLATE HAYSTACKS

- Line cookie sheets with waxed paper or cooking parchment paper. Spray with cooking spray. Spray large bowl with cooking spray; mix noodles and peanuts in bowl.
- Spray medium microwavable bowl with cooking spray; add butter and marshmallows. Microwave uncovered on High 1 minute 30 seconds to 2 minutes or until smooth, stirring every 30 seconds. Stir in white vanilla baking chips and frosting. Continue to microwave uncovered on High 30 seconds; stir until well blended.
- Pour hot marshmallow mixture over noodles and peanuts; stir until well coated. To form each cookie, drop mixture by rounded tablespoonfuls onto waxed paper. Immediately top with sprinkles. Repeat with remaining noodle mixture and sprinkles. If mixture is hard to scoop, reheat in microwave uncovered on High 15 to 30 seconds.
- Cool completely, at least 1 hour. Store in airtight container at room temperature.

HAYSTACKS
I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.
