I love to prepare these cool, fluffy fruit cups to give a refreshing boost to many meals. They've been well received at family gatherings and summer barbecues. There's no last-minute fuss since you make them well in advance. -Karen Hatcher, St. Amant, Louisiana

Number Of Ingredients 8

1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 jar (10 ounces) maraschino cherries, drained
1 can (11 ounces) mandarin oranges, drained
1 can (8 ounces) crushed pineapple, drained
1/2 cup chopped pecans
1 carton (8 ounces) frozen whipped topping, thawed
Fresh mint, optional

Steps:

  • In a large bowl, beat the cream cheese and sugar until fluffy. Halve 9 cherries; chop the remaining cherries. Set aside halved cherries and 18 orange segments for garnish. Add the pineapple, pecans and chopped cherries to cream cheese mixture. Fold in whipped topping and remaining oranges. , Line muffin cups with paper or foil liners. Spoon fruit mixture into cups; garnish with reserved cherries and oranges. Freeze until firm. Remove from the freezer 10 minutes before serving. Top with mint if desired.

One 1.9-ounce package frozen phyllo shells (15 shells)
8 ounces cream cheese
3 tablespoons powdered sugar, plus more for dusting
1 tablespoon whole milk
2 teaspoons orange zest
1 teaspoon vanilla
2 1/2 tablespoons cherry preserves
15 fresh raspberries
15 fresh mint leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the phyllo cups on a baking sheet and bake for 3 minutes; they are already baked, but this will give them a light crisp. Set aside and cool for 5 minutes.
  • Add the cream cheese, powdered sugar, milk, orange zest and vanilla to the bowl of an electric mixer fitted with a paddle attachment and whip together until light and fluffy, 1 to 2 minutes. Spoon the mixture into a pastry bag and set aside. Snip a small opening in the tip of the bag with a pair of scissors just before you are ready to fill the cups. No piping top needed.
  • Spoon 1/2 teaspoon of the cherry preserves into the bottom of each phyllo cup. Pipe a swirl of the cream cheese mixture into each cup, completely covering the preserves. Top each with a single raspberry and a mint leaf. Transfer them to a serving platter and give them a light dusting of powdered sugar.

1 (16 ounce) container sour cream
2 tablespoons lemon juice
¾ cup white sugar
⅛ teaspoon salt
1 (8 ounce) can crushed pineapple, with juice
¼ cup chopped maraschino cherries
3 bananas, peeled and diced
¼ cup chopped pecans

Steps:

  • In a large bowl, stir together the sour cream, lemon juice, sugar and salt until blended. Fold in the pineapple, cherries, bananas and pecans. Pour into paper lined muffin tins. Freeze until set, then transfer to resealable freezer bags for storage.

5 large firm bananas, sliced

Steps:

1 can (8-1/2 ounces) apricot halves
1/4 cup sugar

  • Drain pineapple and apricots, reserving juices. Cut apricots into bite-size pieces; set aside. 2 cups miniature marshmallows
1 package (8 ounces) cream cheese, softened
1/2 cup mayonnaise
12 red maraschino cherries, chopped and patted dry
12 green maraschino cherries, chopped and patted dry
1/2 cup chopped walnuts
1 cup heavy whipping cream

Steps:

  • In a small bowl, combine pineapple and marshmallows. Set aside until marshmallows are softened, about 15 minutes. , Meanwhile, in a small bowl, beat cream cheese and mayonnaise until smooth. Stir into marshmallow mixture. Fold in cherries and walnuts., In a small bowl, beat whipping cream until soft peaks form. Fold into pineapple mixture. Spoon into a 6-cup mold; freeze overnight.
