This stunning cake will be the center of attention at any Christmas gathering. Three layers of perfectly moist chocolate cake are filled with fluffy white frosting (with a secret ingredient!) and sparkling sugared cranberries. Only you'll know how easy it is to make!

1 1/4 cups granulated sugar
3/4 cup water
1 cup frozen cranberries, thawed
1 box Betty Crocker™ Super Moist™ chocolate fudge cake mix
Water, vegetable oil and eggs called for on cake mix box
1 box (3.4 oz) Jell-O™ chocolate-flavor instant pudding & pie filling mix
2 cups Kraft Jet Puffed marshmallow creme (from two 7-oz jars)
1 1/4 cups butter, softened
1 teaspoon vanilla
1 to 2 tablespoons milk
3 1/4 cups powdered sugar
Fresh rosemary sprigs

Steps:

  • In 1-quart saucepan, mix 3/4 cup of the granulated sugar and 3/4 cup water. Heat to boiling over medium-high heat, stirring until sugar is dissolved. Remove from heat; cool 5 minutes. In small bowl, place cranberries. Pour syrup over berries; stir to blend. Refrigerate, uncovered, 1 hour, stirring occasionally.
  • Remove berries from refrigerator and drain; discard liquid. In small bowl, place remaining 1/2 cup granulated sugar. Working with a few berries at a time, roll one by one in the sugar to completely coat. Place on waxed paper-lined cookie sheet. Let stand at room temperature about 1 hour or until dry. Set aside.
  • Meanwhile, heat oven to 350°F (325°F for dark or nonstick pans). Spray bottoms and sides of three 8-inch round cake pans with cooking spray.
  • In large bowl, beat Cake ingredients with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Pour 1 2/3 cups of the batter in each pan.
  • Bake 20 to 24 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.
  • In large bowl, beat marshmallow creme, softened butter, vanilla and 1 tablespoon of the milk with electric mixer on medium speed until blended. Beat in powdered sugar until fluffy. If necessary, beat in more milk, a few drops at a time, until spreading consistency.
  • Place one cake layer on serving plate. Spread 3/4 cup frosting on top; top with second cake layer. Spread 3/4 cup frosting on top; top with third cake layer. Frost sides with a thin layer of frosting so sides are covered but cake still shows through. Spread remaining frosting on top.
  • Place sugared cranberries around base of cake, and press in slightly to adhere to frosting. Place remaining cranberries on top, mounding in center of cake; garnish with sprigs of rosemary. Loosely cover and refrigerate any remaining cake.

2 3/4 cups all-purpose flour
1 1/8 cups cocoa powder, preferably Dutch-process
2 1/4 teaspoons baking powder
2 1/4 teaspoons baking soda
1 1/2 teaspoons salt
3 eggs
1 1/2 cups milk
3/4 cup vegetable oil
1 tablespoon pure vanilla extract
1 1/2 cups very hot water
6 ounces semi-sweet chocolate, melted
6 ounces white chocolate, melted
Red and green mini candy covered chocolates (recommended: M & M's)
Silver dragee

Steps:

  • Heat the oven to 350 degrees F. Cut 1-inch holes out of the bottom of a large inverted foil roasting pan in neat rows, leaving 1 to 2 inches in between the holes. Invert the pan and place paper cooler cups in the holes to hold them upright during baking.
  • Sift together the 3 cups sugar, flour, cocoa, baking powder, baking soda, and salt. Transfer to a mixer fitted with a whisk attachment (or use a hand mixer) and blend briefly. Whisk together the eggs, milk, oil, and vanilla extract in a medium bowl. Add to the dry ingredients and mix at low speed for 5 minutes. Gradually add the hot water, mixing at low speed just until combined. The batter will be quite thin.
  • Pour the batter into the cups. Bake until a tester inserted in the center of the cake comes out clean (a few crumbs are okay) and the center feels firm to the touch, 25 to 30 minutes. Let cool in the pan. Chill for 2 hours then peel off the paper being careful not to tear off the tip of the peak.
  • Place cakes on a rack over a sheet pan lined with parchment paper and with a fork drizzle both colors of chocolate then stick on M & M's and silver dragee to look like ornaments on a little Xmas tree.

Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a small heavy saucepan, melt chips and butter over low heat. Transfer to a large bowl; cool for 5 minutes. Stir in sour cream. Gradually beat in confectioners' sugar until smooth. Spread between layers and over top and sides of cake. If desired, top with chocolate curls. Refrigerate leftovers.

1 (4 ounce) package sweet chocolate
1/2 cup boiling water
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
2 cups sugar
4 eggs, separated
1 teaspoon vanilla
1 cup buttermilk
coconut pecan frosting

Steps:

  • Preheat oven to 350F . Grease bottom of three 9-inch layer pans with wax paper.
  • In saucepan, melt chocolate over boiling water (in double boiler). Let cool.
  • In small bowl, mix flour, baking soda and salt. Set aside.
  • In large bowl (with electric mixer), cream butter and sugar until light and fluffy. Beat egg yolks and vanilla. Stir in chocolate. Add flour mixrture alternately wirh buttermilk, beginning and ending with flour mixture, beating well.
  • In separare bowl, beat egg whites unitl stiff peaks form. Fold into batter gently and thoroughly.
  • Divide batter among the 3 pans - smoothing the tops. Bake in pre-heated oven for 30 minutes or until cake springs back when touched in center. Cool cake pans on racks for 25 minutes. Remove cakes from pans and peel off wax paper. Cool cakes completely on racks before frosting.

1 cup plus 1 tablespoon cake flour (not self-rising)
1 1/2 cups sugar
12 large egg whites, room temperature
1 tablespoon warm water
1 teaspoon cream of tartar
1 teaspoon pure vanilla extract
1/2 teaspoon coarse salt
1/4 teaspoon pure coconut extract
Coconut Glaze
2 cups unsweetened large-flake coconut
Angel Lollipops, for garnish

Steps:

  • Preheat oven to 325 degrees, with rack in the lower third of oven. Sift together flour and 3/4 cup sugar 4 times.
  • Beat egg whites and warm water with a mixer on low speed until foamy, about 3 minutes. Add cream of tartar, vanilla, salt, and coconut extract. Raise speed to medium, and beat until soft peaks form, about 3 minutes. With machine running, add remaining 3/4 cup sugar, 1 tablespoon at a time. Raise speed to high, and beat until peaks are stiff and glossy, but not dry, about 2 minutes.
  • Working in 3 batches, sift flour mixture over egg-white mixture, gently folding in each addition with a rubber spatula, being careful not to deflate egg whites.
  • Slowly pour batter into a 10-inch angel food cake pan. Gently run a knife through center of batter to release any air bubbles, and smooth using an offset spatula. Bake until cake is golden brown and springs back when touched, 40 to 45 minutes.
  • Invert pan onto a wire rack. Let cake cool in pan, about 1 hour. Carefully run a knife around sides of cake to loosen, and turn out onto a large plate or cake stand.
  • Pour coconut glaze onto cake, and spread evenly using an offset spatula to cover completely. Gently press coconut onto cake. Let stand until set, about 1 hour. Garnish with lollipops.

This is the richest, heaviest, moistest, most alcoholic Christmas cake you're likely to find anywhere! It's from Australia's "Better Homes and Gardens" magazine (December 2002). The tablespoon measurements for the spices are correct - this cake is so flavoursome it can take this quantity of spice.

340 g pitted prunes
375 g currants
375 g raisins
1 1/4 cups port wine, plus
additional port wine, for feeding the cake in the lead up to christmas
250 g butter, chopped
1 tablespoon vanilla essence
1 cup dark brown sugar
4 eggs
1 orange, juice of
1 orange, zest of, finely grated
1/3 cup treacle
1 1/2 cups plain flour
1/2 cup self-raising flour
1 tablespoon mixed spice
1 tablespoon nutmeg
1 tablespoon cinnamon
200 g dark cooking chocolate, chopped
250 g glace cherries
200 g walnuts, halved

Steps:

  • You will also need: Brown paper- enough to wrap a double layer around the cake tin.
  • Use a pair of scissors to cut up the prunes.
  • Combine prunes, currants, raisins and 1 cup of the port together in a large bowl and mix well.
  • Allow to stand for 2 hours, stirring occasionally.
  • Meanwhile, spray a deep 23cm-round (9") cake tin with cooking oil, then line the base and sides of the tin with two layers of baking (silicone) paper- bringing the paper 5cm (2") above the rim of the tin.
  • When the fruit has been soaking for two hours, preheat the oven to a slow 160C (310F).
  • Add the orange rind, juice and treacle to the fruit mixture and stir to combine.
  • Place the chopped chocolate, cherries and walnuts into a mixing bowl.
  • Add the sifted flours and spices to this bowl and stir lightly to combine.
  • Now, chop the butter into smallish pieces and transfer to a small bowl.
  • Beat with an electric mixer until the colour of the butter changes to pale yellow.
  • Add vanilla and beat for an extra minute.
  • Add sugar and beat until the mixture looks light and creamy and all the sugar crystals have dissolved.
  • (This is an important step- if the sugar crystals don't dissolve your cake will develop a crusty top).
  • Add the eggs, one at a time, beating well after each addition.
  • Add the butter and egg mixture to the fruit and mix well.
  • Next, add the flour mixture to the fruit, and stir lightly with a wooden spoon until just combined.
  • (Do not beat the mixture or the cake will be tough- a light hand ensures a good cake).
  • Call in the family and have everyone give the cake a stir while they make a Christmas wish.
  • Spoon the batter evenly into the cake tin.
  • Run your hand under the tap and then use it to smooth the top of the cake.
  • Now, wrap a double thickness of brown paper around the tin and secure it with string.
  • Place the cake in the centre of the pre-heated 160c (310F) oven and bake for 3- 3 1/2 hours, or until a skewer, inserted into the centre of the cake, comes out clean.
  • Remove the cake from the oven and, while still hot, pour over the extra port.
  • Now, wrap the cake (tin and all) in a thick, clean towel.
  • Keep wrapped for at least 24 hours, or until the cake is completely cold.
  • Store the cake, well covered, in its tin in a cool, dry place- or in the refrigerator if it's really hot where you live.
  • Each week before Christmas, use a skewer to poke several holes in the top of the cake and pour over a little more port- this is called'feeding' the cake.
  • Close to Christmas, you can ice this cake with the traditional Christmas cake icing (frosting) if you wish, but it will still be spectacularly good without it.
  • Serve small portions as this cake is very, very rich.
