Steps:
- Mix sour cream, salt and reserved pineapple juice in large bowl with wire whisk until well blended.
- Add pineapple tidbits, apples and pecans.
- Toss until apples are coated with sour cream mixture. Refrigerate until ready to serve. Toss gently with marshmallows before serving.

HOLIDAY CANDY APPLES

Steps:
- Insert lollipop sticks into 4 apples, one-third of the way. Line a baking sheet with parchment paper and coat with cooking spray. Stir together 1 1/4 cups sugar and 1/4 cup each corn syrup and water in a small saucepan; bring to a boil. Reduce the heat to medium and add 1/2 teaspoon red food coloring. Continue cooking, swirling the pan but not stirring, until a candy thermometer registers 290 degrees F, about 10 minutes; remove from the heat. Immediately dip each apple into the candy, then twirl the apple over the pan to let the excess drip off. Decorate (see instructions below).
- How to Decorate
- Spun-sugar apple: Dip the apple as directed, then hold sideways over the pan, dip a fork in the candy mixture and quickly wave it all over the apple to make thin threads. Let set.
- Candy cane apple: Roll the apple in crushed candy canes immediately after dipping. Let set.
- White chocolate apple: Let the coating set, then drizzle the apple with melted white chocolate. Sprinkle with silver nonpareils.
- Coconut apple: Roll the apple in shredded coconut immediately after dipping. Let set.
CHRISTMAS GLAZED APPLE CAKE (WEIHNACHTEN GEDECKTER APFELKUCHEN)
Covered Apple Cake (Gedeckter Apfelkuchen) is one of the cakes you're sure to find in almost every single bakery across Germany. To make it, you line a springform pan with a sweet short pastry, fill the crust with a chunky cooked apple filling studded with raisins and flavored with cinnamon and lemon, and then use the same crust dough to make a lid for the cake. I sometimes wonder if it isn't the precursor to America's apple pie, though in this cake, even after baking, the pastry remains soft and cakey thanks to the moist, cooked apple filling and a lemon glaze that is brushed on the top crust after baking.

- Mix the flour, 3/4 cup granulated sugar, baking powder, and salt together in a large bowl. Cut the butter into cubes and add to the flour mixture. Using a pastry cutter or your hands, work the butter into the flour until it's no longer visible. Add the egg and knead until the dough is smooth. Wrap tightly in plastic wrap and refrigerate for at least 1 hour and up to 24 hours.
- Peel, core, and quarter the apples. Cut them into slices 1/8 to 1/4 inch/3 to 6mm thick and put the slices in a large pot. Add the juice of 1 lemon along with the Lebkuchen Spice and the 1/4 cup/60ml of water. Cover the pot and bring to a simmer over medium heat, stirring occasionally. Cook the apples for 15 to 20 minutes, or until silky and relatively broken down. The apples should not turn completely to mush but still retain some shape. Take the pot off the heat and stir in the cranberries and the remaining 1 Tbsp granulated sugar.
- Preheat the oven to 350°F/180°C. Line the bottom of a 9-inch/23cm springform pan with parchment paper. Take two-thirds of the dough and pat it evenly into the springform pan, forming a 1-inch-/2.5cm-high rim at the edges. Refrigerate the remaining dough. Prick the dough in the pan evenly all over with a fork. Line the dough with a sheet of aluminum foil and fill the pan with pie weights or dried beans. Bake for 20 to 30 minutes, or until the crust is starting to firm up but is not yet browning. Remove from the oven and carefully remove the aluminum foil and pie weights; maintain the oven temperature.
- Scrape the apple mixture evenly into the par-baked shell and smooth the top. The apple filling should precisely fill the crust. Roll out the remaining one-third of the dough between two pieces of plastic wrap until just slightly larger than the circumference of the pan. Trim the edges of the circle and then gently transfer the circle to the top of the cake, laying it over the apple filling. Tuck in the top crust and cut off any excess. Cut 3 small slits in the top of the dough. Put the pan back in the oven and bake for 35 to 45 minutes, or until the top is golden brown and slightly puffed.
- Remove the pan from the oven and let cool for 10 minutes while you prepare the glaze. Sieve the confectioners' sugar into a small bowl and whisk in the 2 teaspoons of lemon juice and the 2 teaspoons of water until smooth. Brush the glaze over the still-hot cake and then let the cake cool completely before serving. The cake will keep at room temperature, covered lightly with plastic wrap, for 2 to 3 days.
WARM CHRISTMAS APPLE CIDER PUNCH
I love to make this during the Holidays, it makes the house smell like Christmas. And it tastes good also.

- Pour the cider in a dutch oven pan, 1/2 at a time.
- Put on the stove on simmer.
- add 2 cinnamon sticks.
- add the navel orange slices.
- add 5 whole cloves.
- you may not like it like this, you might have to add 1 or 2 more cinnamon sticks or more cloves.
- Yummy on the wood stove also.
- Take off Heat after approximately 10 minutes.
- Serve.

CHRISTMAS APPLES
There's really nothing to say except that they are pretty and yummy! This can be a side or a light dessert. It would be pretty on lettuce leaves. Don't throw the water away. You can either drink it or freeze it. In fact, I freeze left over apple, pineapple and cherry juices for a friend that uses them when she bakes her ham.

- 1. In an appropriate sized saucepan add the sugar, water and *red food coloring. Peel and core apples but leave them whole. Place them in the red sugar water and cook until done but still firm. Drain and cool in the refrigerator.
- 2. FILLING: Cream all the filling ingredients together and then stuff into each core of the apples ( I normally pipe it in). Sprinkle top with cheese of your choice if you so desire.
- 3. *Note: use enough food coloring so the sugar water will be really red. I normally use a half of bottle but have used the entire bottle before.

- Divide the pastry into 2 parts, one a little larger than the other. Wrap the larger piece in plastic wrap and reserve. On a lightly floured surface, roll the smaller piece into a round, 1/8 to 1/4-inch thick, large enough to overlap a 10 by 2-inch pie plate. Arrange in the pie plate and even with a sharp knife, leaving about a 1/2-inch overhang. (Add the trimmings to the reserved dough). Tuck the overhang back under, making a slightly thicker edging. Chill for 30 minutes. If using a glass pie plate, remove from the refrigerator 15 minutes before filling.
- On a lightly floured surface, roll out the reserved piece of dough into a 12-inch square, about 1/4-inch thick. Cut out a piece of cardboard, 1/2-inch wide and 10 or 12 inches long. Wrap the strip in plastic wrap and use as a guide. With a sharp knife or a pastry cutter, cut the dough into 20 (1/2-inch) strips. Lay 10 strips vertically on the back of a large baking pan, leaving a very small space between strips. Weave a lattice pattern by placing each of the remaining strips over and under horizontally. (It's easier to weave if the dough is not too firm, but it can't be too soft, either. If it's too soft, refrigerate for a little while and then continue). To weave, turn back every other strip of dough (1, 3, 5, etc.), lay a horizontal strip across, as close to the top as possible, and return the turned-back strips to the original length.
- For the next row, alternate the strips that you turn back (2, 4, 6, etc.) and again place a horizontal strip across, close to the first strip. Repeat this procedure until all the strips are used. Refrigerate just until firm. Using a 9-inch cardboard round, a plate, or a pot cover as a guide, cut out a 9-inch circle of latticework and refrigerate on the baking pan until needed. (Excess dough can be wrapped and refrigerated or frozen for future use).
- Peel, core and quarter the apples. Cut into 1/4-inch slices. In 2 or 3 large skillets, melt the butter (2 or 3 tablespoons in each skillet, depending upon how many you use) and brown. The butter will have a slightly nutty aroma. Divide the apples, arrange in the pans, and coat with the butter. Sprinkle in the sugar and over medium-high heat, saute the apples until lightly caramelized and tender, 15 to 20 minutes, turning often so that the apples cook evenly. Pour in 1 tablespoon of Calvados and the brandy and cook until the alcohol burns off. Pour in the cream and stir through. Transfer and spread over a large baking tray to cool.
- Preheat the oven to 400 degrees F.
- Warm the remaining 1/4 cup Calvados. Combine the chopped prunes, apricots, and figs in a small bowl. Pour the Calvados over and let plump.
- In a large bowl, combine the cooled apples and the plumped dried fruit. Stir in the lemon juice, cinnamon, lemon and orange zests, and nutmeg, and mix well. Spoon the filling into the prepared pie plate. Using a wide spatula, carefully transfer the 9-inch latticework circle and arrange on top of the filling. Brush the latticework with egg white and sprinkle with the crystallized sugar. Bake 30 minutes, turn the oven down to 350 degrees F and bake 35 to 40 minutes longer, until the crust is golden brown. Cool on a rack. Serve warm.
- In a food processor fitted with the steel blade, combine the flour and sugar. Add the butter and process until the texture resembles fine meal.
- In a small bowl, whisk together the yolks and 1 tablespoon of the cream. Scrape into the machine and process until a ball begins to form, using the additional tablespoon of cream, if necessary. Remove the dough from the machine, and on a lightly floured surface, press down into a circle. Wrap in plastic wrap and refrigerate for at least 1 hour.
