¼ pound chorizo, crumbled
1 (6 ounce) package baby spinach leaves
2 cups cherry tomatoes, halved
4 green onions, sliced
6 eggs
½ cup milk
1 ½ cups KRAFT Shredded Pepper Jack Cheese with a TOUCH OF PHILADELPHIA, divided

Steps:

  • Heat oven to 375 degrees F. Cook chorizo in large ovenproof skillet on medium-high heat until done, stirring frequently. Remove chorizo from skillet, reserving drippings in skillet. Set chorizo aside. Add spinach to skillet; cook 2 min. or just until wilted, stirring frequently. Stir in tomatoes and onions. Remove from heat.
  • Whisk eggs and milk in medium bowl until blended; stir in 1 cup cheese. Add to ingredients in skillet; stir just until blended. Top with remaining cheese.
  • Bake 25 min. or until knife inserted in center comes out clean.

3 cups all-purpose flour
1 teaspoon fine sea salt
2 sticks cold butter, cut into cubes
5 tablespoons cold lard, cut into cubes
2/3 cup ice water
6 jalapenos, roasted and seeded (do not remove blistered skin)
1 1/2 cups tightly packed cilantro leaves
1 clove garlic, chopped
3 tablespoons pine nuts
Extra-virgin olive oil
1/4 cup grated Parmigiano-Reggiano
Salt and freshly ground black pepper
1 tablespoon canola oil
1/2 pound Mexican chorizo, casings removed
1 1/2 cups grated fontina cheese
1/4 cup finely grated Cotija cheese
2 to 3 green onions, (dark and pale green part) thinly sliced
2 teaspoons chopped fresh thyme leaves
10 large eggs
1 3/4 cups milk
1 3/4 cups heavy cream
4 ounces soft goat cheese, frozen for 10 minutes and cut into 1/2-inch pieces

Steps:

  • Combine the flour and salt in a food processor and pulse a few times. Scatter the butter and lard over the top of the flour and pulse until the mixture forms large crumbs. Add the water, a few tablespoons at a time, and pulse until the dough just comes together. Divide into 2 equal pieces, flatten each half into a disk, wrap in plastic and refrigerate until chilled through, at least 1 hour.
  • On a lightly floured work surface, roll 1 of the disks into a 16-inch round. (Reserve the other disk for another purpose. It will keep in the freezer, double wrapped in plastic wrap then single wrapped in foil for up to 4 months.) Fit the dough into a 2-inch deep-dish tart pan with a removable bottom, gently pressing it into the sides. Using a sharp knife, trim the dough evenly with the edge of the pan. Cover with plastic wrap; and chill until firm, about 20 minutes.
  • Preheat the oven to 375 degrees F.
  • Put the tart pan on a baking sheet, line the dough with parchment and fill with pie weights or dried beans. Bake until lightly golden brown, about 20 minutes. Remove the weights and paper and continue baking until golden brown, about 10 minutes longer. Let cool slightly (not all the way) on a baking rack.
  • Put the jalapenos, cilantro, garlic, pine nuts and oil in the bowl of a food processor fitted with a metal blade. Pulse until the mixture has a pesto-like consistency; you want a bit of texture. Add the cheese and salt and pepper, to taste, and pulse a few times to distribute the cheese.
  • Preheat oven to 350 degrees F.
  • Heat the oil in a large saute pan over high heat until it begins to shimmer. Add the chorizo and cook until golden brown. Remove with a slotted spoon to a plate lined with paper towels. Let cool slightly.
  • Scatter the fontina, Cotija, green onions, chorizo and thyme over the warm tart shell. Whisk the eggs in a large bowl. Add the milk and cream and whisk until smooth. Pour into the shell and evenly distribute the goat cheese over the top. Bake until the crust is deep golden brown and the center is almost set (still slightly jiggles) but the sides are set, about 40 to 50 minutes. Let sit at room temperature for at least 20 minutes before serving. Cut into wedges and drizzle jalapeno pesto over the top.

6 eggs
80 ml milk
1 teaspoon olive oil
1 red onion, chopped
1 chorizo sausage, sliced
2 garlic cloves, crushed
1 teaspoon dried chili pepper flakes
2 (400 g) cans chopped tomatoes
sea salt
black pepper, cracked
200 g goat cheese (or feta)
1/2 cup coriander, chopped (cilantro)

Steps:

  • Place eggs, milk and chopped coriander in a bowl and lighlty whisk, set aside.
  • Heat the oil in a non stick fry pan over high heat, add the onion, garlic, chorizo and chili and cook for 3-4 minutes or until onion is softened.
  • Add the tomato, salt and pepper and cook for 5-6 minutes or until thickened slightly.
  • Add egg mixture, top with cheese of choice (feta or goat) and cook until egg is just set.
  • Place the frying pan under a preheated grill (broiler) for 5-6 minutes until golden.

Tomato & Goat Cheese Crostata image

I'll always remember making my first crostata. It was from my friend Johanne Killeen's cookbook Cucina Simpatica. Johanne and her late husband George Germon started Al Forno restaurant in Providence; 40 years later, it's still one of my favorite places - and I just adore Johanne's cookbook. Her apple crostata is both elegant and earthy, a flaky, buttery crust filled with sweet apples. It's divine! Over the years, I've played around with lots of other sweet crostatas, like one with a raspberry-rhubarb filling (it's in my book Cooking for Jeffrey), but I also love savory crostatas. I make this tomato and goat cheese version with the same flaky crust (minus the sugar), a layer of creamy goat cheese on the bottom and big slices of gorgeous heirloom tomatoes on top. The trick is to bake it on an upside-down sheet pan: Because there are no sides on the pan to block the heat, the tart browns more evenly. This crostata, served with a salad, is a perfect summer lunch!

1 cup all-purpose flour
Kosher salt
1/4 pound (1 stick) very cold unsalted butter, diced
3 tablespoons ice water
4 tablespoons (1/2 stick) unsalted butter
4 cups chopped leeks, white and light green parts, spun dry (4 leeks)
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
1 pound heirloom tomatoes, cored and sliced 3/8 inch thick (see Cook's Notes)
Good olive oil
4 ounces creamy fresh goat cheese, crumbled
1 egg beaten with 1 tablespoon milk, for egg wash
Chopped fresh basil leaves and chives

Steps:

  • For the pastry, place the flour and 1/2 teaspoon salt in the bowl of a food processor fitted with the steel blade and pulse to combine. Add the diced butter and toss carefully with your fingers to coat each piece of butter with flour. Pulse 12 to 15 times, until the butter is the size of peas. While pulsing, add the ice water all at once through the feed tube. Pulse to combine, stopping just before the dough forms a ball. Turn the dough out onto a well-floured board and form it into a disk. Wrap in plastic and refrigerate for one hour.
  • Meanwhile, preheat the oven to 450˚ F. Heat the 4 tablespoons butter in a large (12-inch) sauté pan over medium to medium-high heat. Add the leeks, thyme, 1 teaspoon salt and 1/2 teaspoon pepper and sauté for 8 minutes, until the leeks are tender and starting to brown. Set aside. Place the tomatoes on a plate, sprinkle them with salt and pepper and drizzle lightly with olive oil. Set aside.
  • On a floured board, roll the dough into an 11-inch circle, then place it on a sheet of parchment paper. Turn a sheet pan upside down and transfer the paper to the inverted pan. Spread the leeks on the pastry, leaving a 1 1/2-inch border. Crumble the goat cheese evenly on top. Arrange the tomatoes over the goat cheese, overlapping the slices because they will shrink. Turn the edges of the pastry up and over the tomatoes, crimping so they lie flat. Brush the pastry with the egg wash. Bake for 25 to 30 minutes, until the pastry is nicely browned. Allow to cool on the pan for 5 minutes, sprinkle lightly with the fresh herbs and salt, cut in wedges and serve warm.

1 large baking potato, like Russets, peeled and cut into 1/2-inch cubes
6 eggs
1/2 teaspoon salt
1/4 teaspoon white pepper
1/2 cup grated asiago cheese or 1/2 cup shredded cheddar cheese
1/2 lb chorizo sausage, removed from casing and crumbled
1 small onion, finely chopped
1/2 green bell pepper, finely chopped

Steps:

  • Put potatoes in a saucepan and cover with water.
  • Boil for 4 minutes or until tender; drain and cool slightly.
  • In a mixing bowl, whisk together the eggs, salt and pepper; add 1/4 cup cheese and set aside.
  • In a large non-stick, broiler-proof skillet, heat the oil over medium heat;.
  • Add sausage and cook, stirring constantly for about 3 minutes.
  • Add onion, garlic and bell pepper and saute until soft, about 4 minutes.
  • Add potatoes to the pan and continue to cook until golden brown, about 4 minutes.
  • Stir in egg mixture and mix well.
  • Cover, reduce heat to low; cook until the eggs are almost set, about 10 minutes.
  • Preheat broiler.
  • Sprinkle frittata with remaining cheese.
  • Place frittata under the broiler and cook until top is set and starts to brown, about 3 minutes.
  • Place a large serving plate over the pan, and carefully invert to turn out the frittata or serve right from the pan.

1/4 cup nonfat sour cream
2 teaspoons Dijon mustard
1/2 teaspoon table salt

4 ounces semi-soft goat cheese, crumbled

Steps:

  • Preheat broiler. Coat a large ovenproof skillet with cooking spray and warm over medium heat.
  • In a large bowl, whisk together egg whites, sour cream, mustard, salt and pepper; stir in parsley, dill and goat cheese.
  • Pour into skillet and cook until almost cooked through to the surface, about 5 to 6 minutes. Note: Frequently smooth the surface of the frittata with a spatula, and lift the mixture from the sides of the pan to allow any uncooked eggs to run to the bottom.
  • When approximately 1/2 inch of the surface is still uncooked, place frittata under broiler and broil until cooked through and golden on top, about 1 to 2 minutes. Cut into 4 slices and serve.

4 medium potatoes (about 600g/1lb 5oz), thinly sliced
1 garlic clove , finely chopped
8 large eggs , lightly beaten
1 tbsp olive oil
100g pack soft rindless goat's cheese , sliced
3 tbsp pesto
handful rocket leaves
tomato and basil salad, to serve (optional)

Steps:

  • Boil the potatoes in salted water for 5 mins until just tender. Meanwhile, heat oven to 220C/200C fan/gas 7. Mix the garlic and eggs together with some seasoning, then drain the potatoes and stir into the egg.
  • Heat the oil in an ovenproof frying pan, then tip in the egg and potato mixture. Cook over a low heat for 5 mins or until two-thirds of the frittata is set, then cook in the oven for 10-15 mins until cooked through.
  • Arrange the goat's cheese round the edge of the frittata and drizzle with the pesto. Top with rocket and serve with a tomato & basil salad, if you like.
