Some folks might call this recipe a form of Swedish potato sausage. I call it getting my meat and potatoes in one dish-deliciously!-Mary Arnold, Long Prairie, Minnesota

1 pound ground beef
2 cups grated peeled potatoes
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup water
Hamburger buns, optional

Steps:

  • In a bowl, combine beef, potatoes, onion, salt and pepper; mix well. Shape into six to eight patties., In a skillet, brown patties. Add water; simmer for 15 minutes or until the patties are cooked through. Serve on hamburger buns, if desired, or as a breakfast sausage.

I got this from a local cookbook. It's great for someone like me who is is not-so-hot at making gravy. Serve with sliced cantaloupe or tomatoes and hot biscuits.

1 1/2 lbs ground round
3 tablespoons margarine
1/3 cup all-purpose flour
3 cups milk
salt, to taste
black pepper, to taste
1 pinch cayenne pepper
hot cooked mashed potatoes

Steps:

  • Brown ground round. Drain any grease. Add margarine and flour. Cook for a few minutes over medium heat. Add milk. Increase heat and cook, stirring constantly until thickened. Add salt and pepper to taste. Add the cayenne pepper.
  • Serve over mashed potatoes.

This is one of my favorite comfort foods. This is from Miriam B. Loo's (the founder of Current) Budget Cookbook. This recipe is not gluten-free as posted - sub 1 T cornstarch for the flour to thicken the gravy.

1 lb lean ground beef
1 large potato, peeled and grated
1/2 onion, chopped
1 egg
1 teaspoon dried parsley
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1/4 teaspoon dried sage, crushed
1 1/3 cups beef bouillon
2 tablespoons flour
1 cup milk

Steps:

  • Thoroughly mix meat, potato, onion, egg, parsley, salt, pepper, and sage.
  • Shape into six patties 1/2-inch thick.
  • Brown in a skillet over medium heat.
  • Reduce heat; add boullion.
  • Cover and simmer, about 35 minutes, depending on the thickness of patties.
  • Remove patties from Skillet and keep warm while preparing the gravy.
  • Scrape meat drippings from bottom of skillet.
  • Remove excess fat, if desired.
  • Stir in flour and cook 3 minutes.
  • Add milk and bring to boil; taste for additional salt and pepper.
  • Serve with patties.

1 lb ground beef, lean
4-5 medium potatoes
1 medium onion
1 pkg dry onion soup mix
2 pkg brown gravy mix
3 c water, divided

Steps:

  • 1. Brown ground beef until no longer pink and drain.
  • 2. Wash & peel potatoes.
  • 3. Slice potatoes into 1/4 inch strips and place in the bottom of a large deep dish casserole pan that has been sprayed with cooking spray.
  • 4. Add one cup of water to cover potatoes.
  • 5. Sprinkle with onion soup mix.
  • 6. Slice onion and place over the potatoes.
  • 7. Mix brown gravy mix with 2 cups of water and whisk to mix.
  • 8. Place cooked hamburger meat over the onions and potatoes. Then pour gravy over meat.
  • 9. Cover with foil. Bake 1 hour at 350 degrees.

4 medium potatoes, peeled and chopped
1 medium onion, chopped
4 cloves garlic, chopped
2 cups water, or as needed to cover
salt and ground black pepper to taste
3 pounds ground beef
⅔ cup water
2 (1.2 ounce) packages dry brown gravy mix

Steps:

  • Place potatoes, onion, and garlic in a large pot. Add enough water to cover. Season with salt and pepper and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until potatoes tender, 15 to 20 minutes.
  • While potatoes are cooking, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Add beef to the stew mixture; cook over medium heat for 15 minutes.
  • Combine 2/3 cup water and gravy mix in a small bowl. Stir into the stew very slowly. Let simmer until thickened, about 20 minutes more. Taste and adjust salt and pepper.

These are sooooo great (and EZ)! I grew up eating these about once a week and they are incredible with mashed potatoes or buttered egg noodles and a veggie. While this recipe is basically my mom's, I have changed one thing...instead of using chopped onion in the burgers, I use an envelope of onion soup mix...it gives them the PERFECT flavor! This is now one of my family's favorite meals...try it and it will probably become one of your's, too. P.S. These burgers also work for grilling (without the gravy :).

2 lbs ground beef
6 pieces bread, broken into small bits (potato bread works great, but I usually use white bread)
1 envelope onion soup mix, dry
to taste salt, to taste (because of the soup mix, you may not need it, although we still do)
1/2 teaspoon pepper
2 tablespoons ketchup
1/2 teaspoon garlic powder
2 teaspoons parsley flakes
2 eggs
2 envelopes brown gravy mix
2 cups water

Steps:

  • Combine ground beef, bread, soup mix, salt, pepper, ketchup, garlic powder, parsley and eggs in a large bowl until well mixed.
  • Prepare each burger with approx 1/3 cup of meat mixture and form into patties about 1/2 inch thick.
  • Heat a 12" skillet over med-high heat and fry burgers for about 5 minutes on each side, until they are almost done.
  • Remove burgers to a plate and discard all but about a tablespoon of drippings from skillet.
  • Lower heat under skillet and prepare brown gravy with water in a bowl or measuring cup; slowly pour into skillet, stirring constantly, scraping up any brown bits from the bottom.
  • When gravy has thickened, place burgers back in the pan and cover.
  • Simmer for about 20 minutes, or until burgers are done.
  • Serve with mashed potatoes or egg noodles.

This is my hubby's all time favorite recipe! He never had it growing up; how can that be? I thought it was a "staple" that every 50's housewife had. I know my Mom (rest her soul) made this alot when I was growing up. Anyway, he and the kids just love this. Hope you like it too.

1 1/2 lb lean ground beef
1 large onion, chopped
1 tsp salt and pepper or to taste
1-2 tsp kitchen bouquet (to brown-up the gravy)
4 Tbsp flour - or more if gravy is still too thin
1 1/2 c skim or 1% milk or more to thicken
fresh mashed potatoes

Steps:

  • 1. In a large skillet w/ 2 tsp olive oil brown the hamburger and chopped onion. Add salt and pepper to taste. Stir until ground meat is no longer pink and the onions are soft.
  • 2. Stir in the flour and add the milk, stirring constantly until gravy starts to thicken. Add Kitchen Bouquet for color (opt) and if not as thick as you would like stir 4-tbls flour into a cup of hot water and stir until flour absorbed. Then slowly add to your gravy as much as you need. Be careful of adding too much because then you will need to add more milk! Salt and pepper again if needed.
  • 3. Serve over your mashed potatoes. My family likes this served with green beans. Enjoy!

1/2 cup onion chopped
1 egg beaten
1 teaspoon parsley dried
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon sage dried, crushed
1 cup beef broth
2 tablespoons flour
1 cup milk
6 sprigs parsley

Steps:

  • Peel and grate potato (you will need about 1 1/2 cups). Place potato in a medium bowl. Add beef, onion, egg, dried parsley, 1 teaspoon of the salt, 1/4 teaspoon of the pepper and sage. Mix thoroughly and shape into six 1/2 -inch thick patties.In a large skillet over medium heat, brown patties. Reduce heat to low. Add beef broth. Cover and simmer for 20 to 25 minutes or until potato is tender. Remove patties from skillet and keep warm.Drain off all but 1/3 cup liquid, removing excess fat. Whisk flour into milk until smooth stir into liquid in skillet. Stirring over medium heat, bring to a boil and boil until thickened. Stir in remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper. Pour gravy over patties. Place parsley sprig on each patty and serve.
