1 pound Mexican chorizo (casings removed, coarsely chopped)
1 1/2 whole white onions (peeled and chopped)
4 cloves garlic (peeled, coarsely chopped)
4 stalks celery (rinsed and sliced)
2 Granny Smith apples (cored and chopped)
1 cup slivered almonds (or chopped pecans)
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/2 teaspoon kosher or coarse sea salt
1 1/2 pounds corn bread (cubed (about 8 cups))
1 1/2 cups homemade chicken broth (or store bought)
1 cup cooking juices from the Thanksgiving Turkey ((or substitute 1 additional cup chicken broth))

Steps:

  • Heat a large 12-inch skillet over medium heat. Once it is hot, add chorizo, and cook, crumbling as it cooks with a wooden spoon or spatula, until it has browned and crisped, about 5 minutes.
  • Stir in the onion and sauté for 2 to 3 minutes, until it softens. Stir in the garlic and cook until fragrant, less than 1 minute. Add the celery, apples, pecans, thyme, marjoram, and salt and continue cooking for 5 to 6 more minutes, until the celery and apples have softened.
  • Scrape the mixture into a big bowl. Toss in the corn bread, pour in the chicken broth, and mix gently with a spatula or large wooden spoon until well combined.
  • Transfer the stuffing to a baking dish. Pour the reserved 1 cup cooking juices from the turkey over the stuffing and bake at 350 degrees Fahrenheit for 20 minutes, or until it is hot throughout and the top is crisped.

14 ounces Mexican chorizo
1 medium onion, (finely chopped)
2 stalks celery, (finely chopped)

1 tablespoon fresh chopped sage leaves ((about 8-10 leaves))
1 tablespoon fresh chopped rosemary
2 teaspoons fresh thyme leaves, (chopped)
1 1/2 cups chicken stock ((or vegetable stock))
1 large egg
8 1/2 cups roughly chopped cornbread ((the amount made from a 15-oz box of cornbread mix))

Steps:

  • Preheat oven to 350°F. Grease the inside of a large casserole dish with butter and set aside.
  • Heat a large nonstick skillet over medium-high heat. Add chorizo and crumble it up with a spatula. Cook until browned, about 5 minutes.
  • Add onion, celery, garlic, sage, rosemary and thyme and cook, stirring occasionally, for 10 minutes until vegetables begin to soften. Remove from heat.
  • In a medium bowl, add the chicken stock and egg. Whisk until fully combined.
  • Add the cornbread and cooked chorizo mixture to the greased casserole dish. Gently toss together to combine.
  • Pour the chicken stock mixture evenly over the cornbread stuffing.
  • Bake for 25 minutes. Garnish with fresh herbs if desired and serve immediately.

Steps:

  • For corn bread:
  • Heat oven to 400°F with rack in middle and butter an 8-inch square baking pan.
  • Whisk together cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  • Whisk together milk, egg, and butter in a small bowl and stir into dry ingredients. Pour batter into buttered baking pan.
  • Bake until golden and a tester comes out clean, 25 to 30 minutes.
  • Cool corn bread in pan on a rack 10 minutes, then turn out onto rack to cool completely.
  • Cut corn bread into 3/4-inch cubes and put in a large bowl.
  • For stuffing:
  • Melt butter in a 12-inch heavy skillet over medium heat, then add onions and cook, stirring occasionally, until softened, about 8 minutes.
  • Add chorizo, corn, sage, salt, and pepper and cook, stirring occasionally, 10 minutes. Remove from heat and add parsley.
  • Toss chorizo mixture with corn bread and transfer to a 13- by 9-inch baking pan. Drizzle with chicken broth.

1 cup Aaron's Achiote Paste, recipe follows
1 pound Aaron's Chorizo, recipe follows (store-bought is fine)
3 cloves garlic, finely chopped
1 medium carrot, finely chopped
1 celery stalk, finely chopped
1 medium white onion, finely chopped
2 cups coarsely crumbled cornbread
1/4 cup chopped fresh cilantro
1/2 cup chicken stock (low-sodium store-bought is fine)
1/2 cup freshly squeezed lime juice
1/2 cup freshly squeezed orange juice
1/4 cup olive oil
2 tablespoons achiote paste
2 teaspoons dried whole oregano (preferably Mexican) or dried marjoram
1/2 teaspoon ground cumin
2 large cloves garlic, roughly chopped
1 pound ground beef chuck
1 pound ground pork
1/4 cup white wine vinegar
1 tablespoon salt
3 cloves garlic, very finely chopped
2 tablespoons crushed dried oregano (preferably Mexican)
1 teaspoon ground canela (Mexican cinnamon) or 1/2 teaspoon ground cinnamon
1 teaspoon freshly ground black pepper
1 teaspoon ground star anise
1/2 teaspoon ground cloves
1/4 cup dry white wine
1 teaspoon sugar
1/2 cup ancho chile powder

Steps:

  • For the Cornish hens: The night before you plan to cook, rub the chickens all over with Aaron's Achiote Paste (underneath the skin, on the skin, inside the cavities). Let them marinate, covered, overnight in the refrigerator.
  • Preheat the oven to 375 degrees F.
  • For the stuffing: Heat a large skillet over medium heat. Cook Aaron's Chorizo, breaking it up with a spoon and stirring occasionally as it cooks, until it begins to brown, about 5 minutes. Add the garlic, carrots, celery and onions and cook, stirring occasionally, until the vegetables have browned, about 10 minutes. Add the cornbread and cilantro. Gradually stir in enough of the stock so that the stuffing is not too dry but at the same time not too wet. Stir gently and well.
  • Divide the stuffing equally and spoon into the cavity of each bird. Arrange the birds with plenty of space between them on a rack on a baking sheet or in a roasting pan. Roast the chickens until an instant-read thermometer inserted into the thickest part of the thigh reads 180 degrees F, about 40 minutes.
  • Combine the lime juice, orange juice, olive oil, achiote paste, oregano, cumin and garlic in a blender. Puree until the mixture is the consistency of a smooth vinaigrette. Store in an airtight container in the refrigerator for up to 2 weeks.
  • Put the ground beef and pork in a large bowl. Add the vinegar, salt and garlic, and mix well (your hands are the best tools for this job). Sprinkle with the oregano, canela, pepper, star anise and cloves, and mix well. Add the wine and sugar and mix well.
  • Bring 1 cup water to a boil in a small saucepan. Put the chile powder in a small bowl, pour in the boiling water and stir well to make a paste. Let it cool to room temperature. Work the paste into the meat with your fingers until it's well incorporated. Cover and refrigerate overnight before you use it. Store in 2-ounce portions in zip-top bags in the refrigerator for up to a week, or freeze for up to 3 months.

1 loaf firm white sandwich bread (about 1 pound)
2 tablespoons olive oil
2 ears corn
1/2 pound Spanish chorizo (about 3 links)
1 large onion
6 celery ribs
1/2 stick (1/4 cup) unsalted butter
1 1/2 cups coarsely crumbled salted tortilla chips
1/2 cup dried currants
3 tablespoons chopped fresh flat-leafed parsley leaves
1/2 teaspoon dried rubbed sage
2 1/2 cups water

Steps:

  • Preheat oven to 350°F.
  • Cut bread into 1/2-inch pieces and spread evenly in a shallow baking pan. Toast bread in middle of oven, stirring occasionally, until golden, 10 to 15 minutes, and transfer croutons to a large bowl.
  • Increase temperature to 400°F.
  • In shallow baking pan put 1 tablespoon oil and add corn, turning it to coat. Season corn with salt and roast in middle of oven, turning it once halfway through roasting, about 30 minutes. Cool corn to room temperature. Cut corn kernels from cobs and transfer to a bowl.
  • Cut chorizo into 1/2-inch cubes. Coarsely chop onion and celery and in a large skillet cook in butter over moderate heat, stirring occasionally, until tender, about 10 minutes. Add vegetables and any butter remaining in skillet to corn. In skillet cook chorizo in remaining tablespoon oil over moderate heat, stirring occasionally, until browned and with a slotted spoon transfer to paper towels to drain.
  • Preheat oven to 350°F.
  • To croutons add corn mixture, chorizo, and all remaining ingredients except water, tossing to combine well, and season with salt and pepper. Drizzle water over dressing and toss to evenly distribute. Transfer dressing to a 4-quart shallow casserole dish. Dressing may be made up to this point 1 day ahead and chilled, covered.
  • Bake dressing, covered, in middle of oven until heated through, about 30 minutes. Uncover dressing and bake until top is crisp, about 15 minutes more. Makes about 12 cups, serving 6 generously.

2 cloves garlic, minced 1 onion, diced
1 carrot, peeled and diced
1 stalk celery, diced
2 cups diced jalapeno cornbread, homemade or store-bought
2 tablespoons chopped fresh cilantro leaves
1/2 cup chicken stock
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat oven to 350 degrees F. Lightly coat an 8×8 baking dish with nonstick spray. Heat a large skillet over medium heat. Add chorizo and cook until browned, about 3-5 minutes, making sure to crumble the chorizo as it cooks. Add garlic, onion, carrot and celery. Cook, stirring occasionally, until vegetables have browned, about 8-10 minutes. Stir in cornbread, cilantro and chicken stock; season with salt and pepper, to taste. GRILL-ROASTED BRINED TURKEY WITH ANAHEIM CHILE SALSA VERDE



Grill-Roasted Brined Turkey with Anaheim Chile Salsa Verde image

a 12- to 14-pound turkey
8 quarts cold water
2 cups coarse salt
1/2 cup packed brown sugar
1 tablespoon chili powder
kitchen string
Garnish: fresh Anaheim chiles, small heads of garlic, and tomatillos
Accompaniment: Anaheim chile salsa verde

Steps:

  • Rinse turkey inside and out and reserve neck, giblets, and liver for another use. In a container large enough to hold turkey and 8 quarts water (we used a 5-gallon bucket lined with a large heavy-duty plastic bag) stir together water, salt, and brown sugar until solids are dissolved. Soak turkey in brine, covered and chilled, 10 hours.
  • Remove turkey from brine and pat dry inside and out. Fold neck skin under body and fasten with a small skewer. If desired, secure wings to body with small skewers. Set an oiled metal rack in a roasting pan that will fit in covered grill. Transfer turkey to rack in pan and sprinkle with chili powder. Loosely tie drumsticks together with kitchen string. Turkey may be prepared up to this point 1 day ahead and chilled, covered.
  • Prepare grill:
  • Preheat gas grill. (If using a charcoal grill, open vents in lid and bottom of grill and divide 50 briquettes between 2 opposite sides of bottom, leaving middle clear. Position grill rack with wider openings over briquettes and light briquettes. They will be ready for cooking as soon as they are lightly coated with gray ash, 20 to 30 minutes.)
  • Put turkey in roasting pan on grill and cover grill. Turn all gas settings to low. Grill-roast turkey, basting with pan juices and rotating pan 180 degrees every hour, 3 hours. (If using charcoal grill, add 10 more briquettes to each mound of coals every hour to maintain even temperature.)
  • After 3 hours insert an instant-read thermometer in fleshy part of an inner thigh. If thermometer registers 175°F. and juices run clear when thigh is pierced, turkey is done. If turkey is not done, continue to cook (if using charcoal grill, add 10 more briquettes to each mound of coals), checking for doneness every 20 minutes. Transfer turkey to a heated platter and discard string. Loosely cover turkey with foil and let stand 20 minutes before carving. Garnish turkey with chiles, garlic, and tomatillos and serve with salsa verde.

  • Meanwhile, cook chorizo in oil in a 12-inch heavy skillet over medium-high heat, stirring occasionally, until crisp, 1 to 2 minutes. Add onions, celery, garlic, oregano, and 1 1/4 teaspoon salt and sauté until vegetables are softened, about 10 minutes. Add to corn bread.
  • Whisk together broth and egg, then pour over stuffing and toss well. Transfer to baking dish and cover tightly with buttered foil. Bake in upper third of oven 1 hour. Remove foil and bake until top is golden, about 15 minutes more.
