Ingredients

1 pound White American Cheese (cut in cubes)
2/3 cup Milk
1/2 cup Water (optional for thinner dip, if desired)
One 4-ounce can Green Chiles
2 Pickled Jalapeños (chopped)
1 ounce Juice from the Pickled Jalapeño
Pinch Cumin

Steps:

Using a microwaveable bowl, combine cheese cubes and milk, plus water, if using.
Place bowl in microwave. Microwave on high for about 5 minutes, stirring mixture after every minute.
Remove bowl from microwave and add remaining ingredients. Mix well to combine.
Serve immediately with tortilla chips.

My daughter has been craving Moe's Queso, so we came up with this recipe. It definitely satisfied the craving, and came pretty close to the real thing.

3/4 cup monterey jack pepper cheese, grated
6 tablespoons canned milk
3/4 teaspoon onion salt

Steps:

Heat all ingredients together over low heat, stirring until melted.
Eat with tortilla chips!

Moe's is my FAVORITE restaurant and I've been looking for copycat recipes. I found this online and I'm storing it here for safe keeping. I'm kind of skeptical about the onion because I don't recall onion in the queso at Moe's... but its worth a shot!

1 cup shredded asadero cheese
4 ounces jalapenos or 4 ounces poblano peppers, chopped & drained
1/4 cup half-and-half cream
2 tablespoons onions (finely chopped)
2 teaspoons ground cumin
1/2 teaspoon salt

Steps:

Heat all ingredients over low heat, stirring constantly, until the cheese is melted.
Service warm with tortilla chips.
