COUSCOUS WITH FETA, CHICKPEAS AND TOMATO
This is one of my vegetarian sister's favorite salads, from Mom (I'm not sure where she got it). She just eats it as is, but it is also good with grilled chicken, for the non-vegetarian set. A simple, tasty, one-pot dish, excellent hot or cold.

Steps:
- Heat olive oil in a medium saucepan or large skillet over medium heat.
- Add red pepper and garlic and cook for three minutes, stirring frequently.
- Stir in a half a cup of the broth, along with the dried oregano or basil and chickpeas. Turn heat up to boil the mixture, then lower heat and simmer for 15 minutes.
- Add remaining 1 and 3/4 cups of broth and salt, then bring to the boil. Add tomatoes. Gradually stir in couscous, then remove from heat, cover, and let stand 5 minutes until couscous cooks.
- Stir in green onions and feta, toss well, and serve. May add some cracked black pepper, if you like.
- Great next-day leftovers!

Steps:
- Mix the oil, mustard, vinegar, tabasco & caraway seeds into a thin dressing.
- Pour over the sliced beet & leave for ½ hour in a cool place, for the flavours to develop.
- Before serving, mix in the parsley, red onion, seasoning & chorizo.
- Arrange the mixed lettuce leaves onto a large plate or serving dish & arrange the beetroot & sausage mixture on the top, followed by the crumbled feta cheese.

Steps:
- Combine couscous, ½ tablespoon olive oil, minced chili, cumin, coriander, and garlic and edamame in a bowl.
- Add two cups boiling water to mixture, cover, and let stand 5 minutes, until water is absorbed.
- While couscous mixture is absorbing water, combine halved tomatoes, mint or basil leaves, scallions, and lemon juice in a separate bowl.
- Combine cooled couscous mixture with tomato mixture, add remaining olive oil, and mix.
- Add feta cheese and gently mix to combine.
- Garnish with black olives, if desired.
- Add salt and pepper to taste and enjoy!

- Heat broth until boiling and stir in couscous. Cover and remove from heat. Let it stand for five minutes. Transfer to a large bowl and fluff couscous with with and let cool for ten minutes.

- Put the couscous into a large bowl and add the lemon juice and olive oil.
- Pour in the boiling water, stir, then cover with plastic wrap, and leave for about 10 minutes.
- Cook the leek in plenty of boiling salted water until soft. Drain and stir into the couscous with the onion, parsley and mint.
- Season to taste with salt and freshly ground black pepper and stir in the feta.
- Serve immediately.

Pulled from Guy Fieri's recipe Recipe #510969. I made the recipe noted but wanted to share the couscous recipe with everyone. It is TDF! I used Israeli Couscous and it was divine and so pretty! It's company worthy and very easy to make.

Steps:
- In saucepan over medium heat add olive oil, when hot, add the garlic and red pepper flakes, warm through for 10 seconds. CAREFUL not to burn the garlic.
- Add the sun-dried tomatoes and sauté 30 seconds more.
- Add olives and chicken stock and bring to a boil.
- Add the couscous, and simmer on lowest setting until liquid is absorbed, per package instructions. approximately 8-10 minutes.
- Fluff with fork, and season with salt and pepper. Add in 1/2 pound feta.

Steps:
- Cook the couscous in the chicken stock.
- Remove the papery skin of the chorizo and hack the sausage into bite sized chunks.
- Fry them off in a dry pan for a couple of minutes to release loads of tasty, spicy oils.
- Stir the sausage and all of its oil into the cooked and fluffy couscous to infuse flavour and impart colour.
- Crumble the feta and finely slice the spring onions.
- Mix everything together, loosening with a little extra oil if necessary and season well with salt and pepper.
