CHOPPED SALAD WITH TUNA



Chopped Salad with Tuna image

A super fresh, healthy and tasty chopped salad with tuna. Tossed in a mustard yogurt dressing. Makes a beautiful & bright lunch!

Number Of Ingredients 12

1/2 yellow pepper deseeded (around 80 g) - diced into small pieces
1 small cucumber (around 80 g) - seeds removed and diced into small pieces
6 cherry tomatoes cut into quarters (around 80 g) - cut into quarters
1 handful of parsley (around 10 g) - finely chopped
1/2 small red onion (around 40 g) - diced finely
2-3 leaves of romaine or gem lettuce - sliced in half lengthways and then into strips
1/2 tin of tuna in brine (50 g drained weight)
2 tbsp low fat natural yogurt
1/2 tsp olive oil
1/2 tsp dijon mustard
1/2 tsp chopped fresh dill (or 1/4 tsp dried dill)
1/2 tsp lemon juice

Steps:

  • Prepare all the vegetables and lettuce as described and mix together in a large bowl with a shake of salt and pepper.
  • Make the salad dressing by mixing all the ingredients together in a bowl with a little black pepper to taste.
  • Pour the dressing over the salad and toss everything together
  • Flake the tuna over the top and serve!

1/3 cup cucumber, chopped
1/3 cup tomatoes, chopped
1/3 cup avocado, chopped
1/3 cup celery, chopped
1/3 cup radish, chopped
1 cup romaine lettuce, chopped
4 teaspoons extra virgin olive oil
2 tablespoons fresh lime juice
2 garlic cloves, finely chopped
1/2 teaspoon black pepper

Steps:

  • To make the salad: Layer the tuna, cucumber, tomato, avocado, celery, radishes, and lettuce in a large bowl.
  • To make the dressing: Mix the olive oil, lime juice, garlic and pepper.
  • Drizzle dressing over the salad.

1/3 c chopped cucumber
1/3 c chopped tomato
1/3 c chopped avocado
1/3 c chopped celery
1/3 c chopped radishes
1 c chopped romaine lettuce
DRESSING:
4 tsp extra-virgin olive oil
2 Tbsp fresh lime juice
2 clove garlic, finely chopped
1/2 tsp black pepper

Steps:

  • 1. To make the salad: Layer the tuna, cucumber, tomato, avacado, celery, radishes, and lettuce in a decorative glass bowl.
  • 2. To make the dressing: Mix the olive oil, lime juice, garlic, and papper. Drizzle over the salad.

This recipe for Martha's Favorite Tuna Salad Sandwich makes a healthy meal for lunch or dinner.

12 ounces good-quality tuna, packed in oil, drained
2 stalks celery, halved lengthwise and thinly sliced
1 apple, such as McIntosh or Gala, peeled, cored, and cut into 1/4-inch pieces
3 tablespoons light mayonnaise, preferably Ojai Cook's Lemonaise Light
2 tablespoons freshly chopped basil leaves
1 tablespoon freshly squeezed lemon juice
Coarse salt and freshly ground pepper
8 slices best-quality sourdough

Steps:

  • In a medium bowl, combine tuna, celery, apple, mayonnaise, basil, and lemon juice; mix well. Season with salt and pepper.
  • On a work surface, divide tuna salad among 4 slices bread; top with remaining 4 slices bread. Serve.

1 tablespoon sliced black olives

Steps:

  • Put dressing in the bottom of a resealable salad sized container.

1/3 cup drained canned white tuna in water, flaked
3 Tbsp. ATHENOS Crumbled Feta Cheese with Basil & Tomato

Steps:

  • Spoon dressing into 3-cup resealable container; top with remaining ingredients. Cover with lid.
