CHOPPED SALAD
The key is chopping the veggies into small pieces. This is what gives the salad such a clean, fresh taste. The small pieces impart juices and flavor. No dressing required. This is good for lunch or as a side dish for dinner. It can be kept in the refrigerator for several days. NOTE: For a Fatoush-type of salad, toast or broil a slice of pita bread; break-up the crispy pieces into the salad.

STRAWBERRY ROMAINE SALAD
"I love to entertain and cook for family and friends when they drop in," remarks Ileen Adkins of Randle, Washington. "When strawberries are in season, I serve this salad often. But because of its unusual combination of onion and berries, I sometimes have to encourage guests to try it. Once they do, they always come back for more."

THE ORIGINAL WALDORF SALAD
"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.

CHOPPED ROMAINE SALAD WITH THOUSAND ISLAND DRESSING
This dressing is much better than any store-bought. I'm not usually a Thousand Island type of person, but this is great on this salad, and on crab or shrimp Louis as well. I found this in Bon Appetit magazine, February 1998. Prep time does not include making hard-boiled egg.

SPLENDID LETTUCE SALAD WITH THOUSAND ISLAND DRESSING
"'Oh, Anne, mayn't I help you cook the dinner?' implored Diana. 'You know I can make splendid lettuce salad.'" (from Anne of Avonlea, by L.M. Montgomery) The recipe is from the Anne of Green Gables Cookbook. I usually substitute a yellow or other colored bell pepper for the green.

ROMAINE SALAD WITH BREADCRUMBS AND SIMPLE DRESSING
Steps:
- Melt the butter in a medium skillet over medium heat. Add the breadcrumbs, 1/2 teaspoon salt and a bunch of grinds of pepper (about 20 grinds) and cook, stirring constantly, until the crumbs are golden brown, about 5 minutes. It's important to stir the whole time to make sure that they do not burn--which will happen if they sit too long in the skillet untouched. Once golden, immediately transfer them to a plate to cool and stop the cooking process. Set aside.
- Whisk the yogurt, mustard, Worcestershire, lemon zest and juice, garlic, 3 tablespoons water, 1/2 teaspoon salt and about 20 grinds of black pepper in a small bowl until smooth, creamy and combined.
- And add the romaine to a serving bowl. Sprinkle in 3/4 cup of the breadcrumbs, 3/4 cup of the Parmesan and the dressing and toss until the lettuce is nicely coated. Sprinkle the remaining breadcrumbs and Parmesan on top and serve immediately.

- Begin by adding your turkey burger to a non stick skillet on medium heat with a little bit of olive oil. Separate it with your spatula into large chunks so it cooks evenly. Add in the seasonings for your turkey burger and make sure they are mixed in well. Cook for 5-10 minutes, stirring occasionally until completely brown.
- While your turkey is cooking, finely chop your romaine lettuce. Place it in a large bowl. Finely chop your red onion, pickles and roma tomatoes. Place them all in the bowl as well. By now, your turkey burger should be fully cooked. Place it into the salad bowl.
- As you let that sit for a moment, begin making your dressing. Combine the mayonnaise, pickle juice, apple cider vinegar, ketchup and spices together in a small bowl. Add a splash of water if it needs to be thinned out.
- Pour the dressing directly onto the salad. Toss it with tongs. Add a crack of salt and pepper. Eat immediately! Also tastes great cold the next day!
