1 pound beef liver (sliced)
2 onions (medium, diced)
2 tablespoons chicken fat ( or oil)
3 eggs (hard-cooked)
1/2 teaspoon garlic powder
salt and pepper to taste

Steps:

  • Broil the liver to medium doneness or sauté in oil on both sides. Cool the liver completely. Brown the onions in a bit of hot oil.
  • You can process the liver mixture in one of two ways.
  • 1. Grind the liver, eggs and fried onions in a meat grinder.
  • 2. Process the liver in a food processor until minced. Add the remaining ingredients and process until blended. Add the seasonings. You can add a bit chicken broth if needed to reach the desired texture.

1 pound chicken liver
1 onion, thinly sliced
¼ cup chopped onion
3 tablespoons cooking sherry
¾ cup butter, softened
¼ teaspoon salt
¼ teaspoon ground black pepper
⅛ teaspoon ground mace

Steps:

  • In a medium saucepan, combine water, chicken livers, and sliced onion. Bring to a boil, reduce heat to low, and cover. Simmer for about 20 minutes, or until liver is cooked and tender. Remove from heat, drain, and discard onions. Also remove and discard any hard portions of the liver.
  • Place cooked livers in a blender or food processor, and process until smooth. Add chopped onion, sherry, butter or margarine, salt, black pepper, and mace; pulse to blend. With hands lightly greased, form pate mixture into a mound, and place on a serving platter. Chill for 1 hour before serving.

This unique chopped liver recipe is made with extra-virgin olive oil instead of the traditional chicken fat. It's not as refined as chicken liver pate, but it's wonderfully flavorful.

1 lb. chicken livers
3 large hard-boiled eggs (halved)
4 tablespoons extra virgin olive oil (divided)
1 large onion (finely chopped (8 oz))
1 tablespoon minced fresh garlic
1 teaspoon Diamond Crystal kosher salt ((not table salt))
1/4 teaspoon black pepper

Steps:

  • Place the chicken livers on paper towels to drain. Place the eggs in your food processor bowl.
  • Heat 2 tablespoons of the olive oil over medium-high heat in a large 12-inch skillet. Add the chopped onion and fry until golden, stirring occasionally, for about 5 minutes.
  • Add the garlic and cook a few more seconds, just until no longer raw. Using a spatula, transfer the skillet contents, including any remaining oil, to the food processor.
  • Add 2 more tablespoons of oil to the skillet. Add the chicken livers and cook them over medium heat (not higher or they could burst) until brown on the outside and barely pink on the inside, about 3 minutes per side. Overcooked livers are dry and grainy.*
  • Again, use the spatula to transfer the skillet contents, including the livers, the oil, and any tasty bits left on the bottom of the skillet, to the food processor.
  • Add the salt and pepper. Process briefly, about 30 seconds, stopping once to scrape the sides and bottom with a spatula. You don't want the chopped liver to be as smooth as a liver pate. It should have a bit more texture to it.
  • Transfer the chopped liver to a serving dish. Cover and keep in the fridge for at least two hours, allowing the flavors to meld. Don't eat it when still warm! It won't be very good. It needs time to develop its deep flavor. Its flavor, as well as its texture, greatly improves after a rest in the fridge.

Jewish-Style Chicken Liver Pâté image

Chopped liver or chicken liver pâté is a Jewish favorite that almost everyone loves. This version may be made in advance and frozen.

1 large sweet onion (finely chopped)
1 medium clove garlic (crushed)
1/3 cup margarine (softened, or 5 tablespoons rendered chicken fat )
1 teaspoon sea salt (or Kosher salt )
4 hard-boiled eggs (reserve 1 for the garnish)
1 pound Kosher chicken livers (cooked)
20 grinds black pepper
Generous pinch of ground nutmeg

Steps:

  • Gather the ingredients.
  • Gently sauté onion and garlic in the fat over low heat until browned but not burned. Sprinkle onions and garlic with salt as soon as they begin to wilt.
  • Slice 3 of the hard-boiled eggs in half. Refrigerate the remaining egg to be used for garnish.
  • Scrape the sautéed onion, garlic, and drippings into the bowl of a food processor fitted with the metal blade. Blend until smooth.
  • Add hard-boiled eggs, cooked chicken livers, black pepper, and nutmeg. Process until smooth. Taste and adjust seasoning, keeping in mind that flavor will increase during refrigeration.
  • Scrape chicken liver mixture into plastic wrap-lined decorative mold or bowl.
  • Cover with another layer of plastic wrap, pressing wrap to touch the top of the pâté . Refrigerate at least 12 hours or overnight.
  • When ready to serve, take the pâté from the refrigerator and remove plastic wrap covering. Invert onto a decorative dish and remove the bottom layer of plastic wrap.
  • Let rest at room temperature 30 minutes to 1 hour, then grate remaining hard-boiled eggs over the top before serving.

1 pound fresh chicken livers
2 tablespoons olive oil
1/2 cup finely diced onions
2 tablespoons dry Marsala wine (or dry white wine, brandy, chicken broth, or water)
3 hard-boiled eggs
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Rinse and drain the chicken livers. Discard anything that looks unusually colored (while not bad, sometimes these can add strong flavors).
  • Heat the oil in a pan over medium heat.
  • Add the onions and sauté until they are golden brown. Remove the onions from the pan.
  • Add the chicken livers to the pan and cook for approximately 15 minutes, until done. Add more oil to the pan if needed.
  • Remove the livers and deglaze the pan with a few tablespoons Marsala wine, chicken broth, or water.
  • Process the livers and 2 hard-boiled eggs by chopping them finely, running them through a grinder, or pulsing them a few times in a food processor.
  • Return the livers, eggs, and onions to the pan and stir to combine.
  • Transfer the mixture to a bowl, cover it, and set it in the refrigerator for at least 2 hours.
  • Before serving, chop the remaining hard-boiled egg and place it on top of the liver pâté.

  • Heat chicken fat or vegetable oil in sauté pan over medium heat for 1 minute, and sauté onion in it 20 to 25 minutes, or until very soft and lightly golden. add uncooked liver, and cook until just pink inside, a few minutes.
  • Place onions and liver in food processor with eggs, brandy and starch, and process until smooth. Season to taste with salt and pepper.
  • Arrange bay leaves shiny side down in loaf pan, and spoon liver mixture on top, pressing gently with spoon to get rid of any air bubbles. Set pan in a larger pan two-thirds filled with warm water, and bake 20 minutes. Cool, and unmold. Serve with rye bread.

Now before the word "liver" scares you off, this iconic spread often seen at a Jewish gathering is really a French pâté. The secret is in sautéing the onions until caramelized to create that super rich foundation of flavor.

1/4 cup of vegetable oil
3 large Spanish onions, chopped coarsely
1 lb of chicken livers, drained
4 hard-boiled eggs, cut up (this is the only thing I used my Instant Pot for in this recipe)
Seasoned salt, kosher salt and pepper to taste

Steps:

  • In your Instant Pot, make 4 hard-boiled eggs (click here for recipe) and LIGHTLY pulse in a food processor so it's still coarse and slightly crumbled. Set aside
  • Using a large pan or skillet on your stovetop, heat the oil on medium heat
  • Add the onions. This step is everything as a HUGE portion of that classic chopped liver flavor comes from them. You are going to be cooking them for a solid 20-40 minutes (stoves vary) over medium heat - stirring and then letting it set and repeating that process until the onions are a beautiful deep brown color, but NOT burned. Basically, they should be cooked just before they enter the burned phase
  • While you're cooking the onions, set your oven on broil. Add the drained chicken livers to a tin foil lined baking sheet and then pop into the oven for 10 minutes
  • Remove the broiled livers and place in a good blender or food processor and pulse until it's nice and chopped
  • When the onions are done, transfer every last one as well as every last drop of oil from the pan to the food processor. SCRAPE that pan! Don't leave any behind!
  • Pulse the livers and onions together and blend until all is mixed in and to your desired consistency
  • Add kosher salt (about 1/2 tbsp) and pepper to taste. Pulse again
  • Transfer to a serving bowl and, with a mixing spoon, add in the crumbled eggs and stir until it's all combined. Everything will be hot. Add about 1/2 tbsp of seasoned salt and mix in and season however else you wish to taste but don't change things up too much or it won't be the classic Jewish chopped liver you know and love
  • Cover the bowl and let set in the fridge for at least 2 hours so it gets firm and cold - THAT'S how we serve this
  • Serve with Tam Tams, matzoh or your favorite veggies for dipping
  • Enjoy!

It's also delicious on bagels the rest of the year. The pinch of sugar keeps the liver from having any bitter taste and makes such a difference when you use it.

2 large onions, chopped
2 tablespoons canola oil
salt
1 pinch sugar

Steps:

  • In a frying pan, heat oil. Add onions and sautee until golden brown. Remove to a plate. Add chicken livers to pan and fry until completely cooked, and no longer wet. Remove to a plate and let onions and livers cool completely.

This is an authentic Jewish (not Kosher) recipe for the best Chopped Chicken Liver pate you have ever had. It is actually a recipe of my maternal grandmother, Anna Buhal'tsev (Bell) Mersky, who came from Smela Gubernyia, which is near Cherkassy and Kiev in the Ukraine. A few minor additions were made thru the years.

1/2 cup peanut oil
1 onion, diced fine (in food processor)
2 lbs chicken livers (give or take)
3 ounces cream sherry
2 teaspoons garlic powder
4 hard-boiled eggs
2 tablespoons butter
1 small onion (thinly sliced)
6 tablespoons schmaltz (chicken fat)
1 tablespoon sugar or 1 tablespoon Splenda sugar substitute
salt
pepper

Steps:

  • In a skillet, place 2 tablespoons butter and 1 small thinly sliced onion and sautè until golden brown.
  • Add the 6 tablespoons of schmaltz (chicken fat) and mix real well as you crumble the onion slices.
  • This is called schmaltz with grieven. I also have a separate recipe posted on RecipeZaar for Schmaltz. See that recipe.
  • You can use this right away; however, it is better to make this a couple of months ahead of time and place it in the freezer to cure.
  • When ready to make the patè, in a skillet sautè the onions in the peanut oil over a medium flame until golden brown and add the schmaltz with grieven.
  • Boil the 4 eggs until hard boiled.
  • Add the chicken livers to the pan with the onions, schmaltz with grieven& garlic and cook 2 or 3 minutes until done.
  • Add the cream sherry and cook an additional minute.
  • Remove from pan and allow to cool.
  • In a food processor, gently PULSE the livers and hard boiled eggs into a rough chop.
  • DO NOT OVERMIX!
  • Add salt, pepper and sugar and adjust as necessary.

1 1/2 lbs chicken livers
1/4 cup schmaltz, divided ((see note below))
2 large onions, (sliced (for a sweeter chopped liver, use up to 4 onions))
5 hard boiled eggs, (peeled and diced (divided))
Salt, (to taste)
Black pepper, (to taste)
1/2 cup gribenes ((optional - see note below))
2 tbsp minced fresh parsley for garnish ((optional))

Steps:

  • Prepare schmaltz and gribenes ahead of time, or purchase schmaltz from your local kosher market. Goose fat or duck fat can be used in place of schmaltz if desired. Prepare the livers by cutting off any tough pieces or stringy tendons. You should also cut away any pieces of liver that look discolored, yellow or strange. This is pretty much the worst prep job ever, as uncooked liver has a soft and slimy texture, so make sure this step is done by someone with a strong stomach.
  • Add 2 tbsp schmaltz or oil into a large cast iron or nonstick skillet and melt over medium heat. Put half of the chicken livers into the skillet and fry them for 3 minutes on each side (about 6 minutes total). Season the livers generously with salt and pepper as they are cooking. *Note: If you plan to kosher your chicken livers by broiling them prior to making chopped liver, you will only need to sauté them in the skillet for about 1 minute on each side. Koshering the livers cooks them, so there is no need to sauté them for a long period of time. Be careful not to overcook or burn the livers, or they will become dry.
  • After cooking, livers should be firm and browned on the outside while slightly pink on the inside. They will continue to cook internally after you remove them from the skillet; don't overcook them, or they will turn dry. When the livers are brown and firm, pour them into a medium-size mixing bowl along with the leftover schmaltz/oil from the pan. Add another 2 tbsp of schmaltz/oil to the skillet, melt it, and fry the remaining livers repeating the same process as above. Add the livers and leftover schmaltz/oil from the pan to the mixing bowl.
  • The skillet should now be seasoned with schmaltz or oil, so you don't need to grease the pan again. Add the onion slices to the skillet and reduce heat to medium low.Cover the skillet and let the onion cook undisturbed over medium low heat for 10 minutes. Check once or twice during cooking just to make sure they are not over-browning or starting to burn. The onions should be softening, but not darkening at this point. This "steaming" process kick-starts the caramelization needed for sweetness in the chopped livers.
  • Uncover the skillet, stir the onions, and continue to sauté them for another 30-40 minutes, adjusting heat as needed to keep the onions from burning. Ideally the onions should be deeply caramelized, tender and sweet - this is what gives Jewish chopped liver its trademark savory-sweetness.Don't try to speed up the caramelization process, it takes time-- and that's ok. Good things are worth waiting for. When the onions have reduced to about 1/3 of their original size and are soft, sweet, and golden, they're ready.
  • Add the cooked onions to the mixing bowl along with 4 of the diced hard boiled eggs and the ½ cup of gribenes (optional). Season all ingredients generously with salt and pepper.
  • Now it's time to chop all of the ingredients together into a blended mix. There are various schools of thought on the "right" way to chop liver. The old fashioned way is to chop it by hand with a knife, mincing and mincing until it resembles a rough pâté.
  • Another popular method is using a meat grinder. I use a meat grinding attachment on my Kitchen Aid mixer on the fine hole setting. Works like a charm.If you want to take a more modern approach, fit your food processor with a metal blade. Place all ingredients into the processor and pulse for about 30 seconds, stirring once halfway through processing, until a roughly textured paste forms.
  • Whatever method you choose, it's important to taste the chopped liver once it is ground. Add salt or pepper to taste, if desired. Be a bit generous with the seasoning, as the liver is best served chilled and the seasoning won't taste as strong after chilling.
  • Chill the chopped liver in the refrigerator until ready to serve. Garnish with remaining diced hardboiled egg and minced parsley.

2 pounds chicken livers
1 cup rendered chicken fat
2 cups medium-diced yellow onion (2 onions)
1/3 cup Madeira wine
4 extra-large eggs, hard-cooked, peeled, and chunked
1/4 cup minced fresh parsley leaves
2 teaspoons fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Pinch cayenne pepper

Steps:

  • Drain the livers and saute them in 2 batches in 2 tablespoons of the chicken fat over medium-high heat, turning once, for about 5 minutes, or until just barely pink inside. Don't overcook the livers or they will be dry. Transfer them to a large bowl.
  • In the same pan, saute the onions in 3 tablespoons of the chicken fat over medium-high heat for about 10 minutes, or until browned. Add the Madeira and deglaze the pan, scraping the sides, for about 15 seconds. Pour into the bowl with the livers.
  • Add the eggs, parsley, thyme, salt, black pepper, cayenne, and the remaining chicken fat to the bowl. Toss quickly to combine. Transfer half the mixture to the bowl of a food processor fitted with a steel blade. Pulse 6 to 8 times, until coarsely chopped. Repeat with the remaining mixture. Season, to taste, and chill. Serve on crackers or matzo.

1 lb fresh calf liver
1 egg, hard-cooked, mashed
2 tablespoons salad oil
salt
3 tablespoons butter
pepper, Freshly Ground
1 large Spanish onion, chopped

Steps:

  • With a sharp knife, remove the tough outer membranes from liver.
  • In a heavy skillet, heat oil and add chopped onions.
  • Cook over medium high heat until translucent and golden brown.
  • Remove with a slotted spoon and set aside.
  • Add butter to skillet.
  • Heat until melted.
  • Add liver pieces.
  • Over medium heat, fry liver until just done - 3 minutes on each side.
  • Alternatively, liver can be brushed with butter and broiled.
  • To test for doneness, cut a piece from liver slice.
  • If still pink, continue cooking for 30 - 60 seconds.
  • Overcooking causes the liver to be dry and tough.
  • For finely mashed egg that disappears in the liver mixture, force egg through a wire strainer.
  • For best results, separate the hard cooked whites from yolks and sieve them separately.
  • Set aside.
  • Fit meat grinder with a medium blade and place cooked liver and cooked onions in the grinder.
  • Grind, then regrind the ground mixture.
  • In a medium mixing bowl, combine the twice ground meat and onions mixture with the sieved eggs.
  • Add salt and pepper.
  • Taste and adjust seasoning.
  • If desired, add a few drops of commercial gravy browning liquid to heighten color.
  • Refrigerate for 24 hours before serving.
  • Serve with slices of tomato, cucumber and dark rye bread.

CHOPPED LIVER

1 1/2 pounds beef liver
1 pound chicken livers
Corn oil for drizzling, 1 tablespoon plus 2 teaspoons corn oil
2 tablespoons plus 2 teaspoons schmaltz (rendered chicken fat)
4 cups coarsely chopped onions
4 hard-boiled eggs, peeled
2 teaspoons salt
1/4 teaspoon pepper

Steps:

  • Turn on broiler. Rinse beef and chicken livers thoroughly, and cut away membranes and extra fat. Cut beef liver into 1-inch pieces; chicken livers can remain whole. Place beef and chicken livers in a large baking pan, and drizzle with corn oil (pour oil into a flatware tablespoon and drizzle over livers; 2 tablespoons are ample.) Broil 8 to 10 minutes (keep an eye on it to make sure it doesn't burn.) Turn liver pieces, and broil for another 5 minutes. Liver should be fully cooked and lightly browned on both sides. Chill in refrigerator. In a large skillet, heat 1 tablespoon plus 2 teaspoons corn oil and the same amount of schmaltz, and saute onions, stirring occasionally, until well browned. Chill in refrigerator. In food processor, combine liver, onions, hard-boiled eggs, 2 tablespoons schmaltz, salt and pepper, and blend until smooth. You will have to do it in batches. Chill before serving.

Number Of Ingredients 7

7 hard-cooked eggs, peeled (see NOTE)
1/4 cup schmaltz (chicken fat) or vegetable oil
2 large onions, thinly sliced
1 1/2 teaspoons kosher salt, plus more as needed
8 ounces raw chicken livers, connective sinew and veins removed
2 to 3 tablespoons honey
Chopped fresh parsley, for garnish

Steps:

  • 1 Place 1 whole, hard-cooked egg in a food processor
  • 2 Cut the remaining 6 eggs in half lengthwise and add 4 of those eggs' yolks to the whole egg
  • 3 Reserve or discard the remaining yolks; reserve all 12 egg white halves
  • 4 Heat half the schmaltz or vegetable oil in a large pan over medium heat
  • 5 Once it shimmers, stir in the onions and 1/2 teaspoon of the salt
  • 6 Cook for about 10 minutes or until the onions are golden, stirring as needed
  • 7 Add the livers; cook for 3 to 5 minutes or just until they are no longer pink inside
  • 8 Transfer the livers to the food processor along with the onions and any rendered fat in the pan
  • 9 Add the remaining teaspoon of salt and pulse, gradually adding the remaining schmaltz or oil and the honey (to taste) to form a smooth, emulsified pâté
  • 10 The consistency may be loose at this point, but it will firm up as the pâté cools
  • 11 Cool to room temperature or refrigerate in an airtight container, with plastic wrap pressed directly on the surface, before serving
  • 12 To fill the egg white halves, spoon the pâté into a pastry bag fitted with a wide, round tip, or use a quart-size zip-top bag and cut off one of its bottom corners
  • 13 Garnish the filled halves with parsley and a sprinkle of salt
  • 14 Place any remaining chopped liver pâté in a bowl for serving
  • 15 NOTE: Fill a bowl with ice cubes and water
  • 16 Fill a medium saucepan with a few inches of water; bring to just under a boil over medium heat
  • 17 Place a steamer basket with the eggs in it on top and cover; let steam for 12 minutes, then remove from the heat
  • 18 Transfer the eggs to the ice-water bath; let them sit for 5 minutes, or until cooled, before peeling

4 (20 ounce) chicken livers
3 sweet onions
6 hard-boiled eggs
salt and black pepper
1 cup chicken fat
1/2 cup vegetable oil
1 sweet onion

Steps:

  • The most important part of cooking with an iron skillet is to heat the pan first without any fat inside. When it is really hot, add your chicken fat ) shmaltz. Turn down the heat to simmer. I play with the gas burner while cooking, up and down according to the heat in the pan. If you notice the oil burning, turn down the heat. I immediately add the chopped onions after I added the oil. Keep stirring with a wooden spoon. The onions will turn translucent. If there is not enough shmaltz oil in the pan add a little vegtable oil and continue cooking the onions. Try not to overcook the onions. Take them out before they turn brown. While this is going on, rinse the livers under cold water and drain. After the onions are removed from the pan clean the pan with a slotted spoon of any dark pieces of onion. Then add a little more shmalltz to the pan and some livers. Do not crowd the pan. Cook livers one pan at a time. I constantly keep turning the livers. I cut into the liver to see if it is done. It should be cooked all the way thru just not burned. Next, combine the livers and the onions in a bowl. In the cuisinart fitted with the blade on the bottom place a small amount of the ingredients and pulse until you like the consistancy. I like it soft like a pate. Do this until all of the liver and onions are finely mashed. I then combine the pate with the hand chopped onions. Add salt and pepper to taste. I like the pate to be slightly more peppery. It looks nice to garnish with the extra chopped raw onions and if you like, some chopped hard boiled eggs. During passover, you can eat this with matzah or serve with crackers. Place in refrigerator immediately after preparation for at least a few hours in a sealed container. I enjoy the liver after it is removed from the frig for 20 minute Happy Cooking!

1 pound (454g) chicken livers
Kosher salt
1/4 cup (60ml) schmaltz , plus more as needed (see note)
1 large (8-ounce; 225g) yellow onion, finely minced
3 large hard-boiled eggs , peeled
1/4 cup gribenes (browned, crispy bits of fat and onion left over from making schmaltz), finely minced (optional)
Freshly ground black pepper
Additional minced gribenes and hard-boiled egg, for garnish (optional)
Matzo or other crackers, for serving

Steps:

  • If Using a Grill for the Livers: Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over half of coal grate. Alternatively, set all the burners of a gas grill to high heat. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Clean and oil the grilling grate. Proceed to step 3.
  • If Using a Broiler for the Livers: Preheat broiler and move oven rack to highest position. Oil a slotted broiler pan, or a wire rack set in a rimmed baking sheet.
  • Using a paring knife, clean livers well of any fat, green spots, or large veins. Season all over with kosher salt. If using a grill, grill livers over high heat, turning frequently, until they are very lightly charred in spots and only the last traces of pink remain in their centers. If using the broiler, arrange livers on the prepared broiler pan or wire rack and broil, turning frequently, until exteriors are well-browned and only the last traces of pink remain in the centers. (If you are unsure about whether the livers are done, cut them open to check.) Remove from oven or grill and set aside.
  • Scrape minced liver and egg mixture into a mixing bowl. Scrape in cooked onion, along with all of the cooking fat. Add minced gribenes, if using. Stir until thoroughly combined, seasoning with salt and pepper as you go.
  • Add as much extra schmaltz as needed, 1 tablespoon at a time, to reach desired consistency. Exactly how much this is will depend on several variables, including your personal preference, though we recommend that chopped liver be spreadable and moist, not dry and crumbly.
