This recipe makes a light tasty muffin that stays moist. They're flavorful whether served plain, with butter and jam or dipped in cinnamon-sugar right out of the oven. -Alice Muradliyan, Covina, California

Number Of Ingredients 12

3/4 cup old-fashioned oats
1/2 cup all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1 egg
1/3 cup milk
1 tablespoon vegetable oil
1/2 cup grated peeled tart apple
1/4 cup mashed ripe banana

Steps:

  • In a small bowl, combine the first seven ingredients. In another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened. Fold in apple and banana., Fill greased muffin cups about three-fourths full. Bake at 375° for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

2 Ripe bananas (smashed)
1 medium apple (peeled, finely chopped)
1/3 c melted butter
1/2 c sugar
1 egg (beaten)
1 1/2 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt
1 1/2 c all purpose flour
1 tsp cinnamon

Steps:

  • Preheat oven to 350°F
  • Add the paper liners into the muffin tins or spray with a non-stick baking spray
  • In a large bowl, use a fork to mash up the bananas then pour the melted butter into the bananas.
  • Add in the sugar, egg and vanilla. Mix well.
  • Stir in baking soda, salt, and cinnamon.
  • Slowly incorporate the flour into the mixture and stir until blended
  • Using a food processor (or by hand) fine chop the apples
  • Stir apples into the mixture
  • Pour the muffin mixture into the tins, filling each paper baking cup about 2/3's of the way up.
  • Bakes 25 - 30 minutes
  • Cool on rack before storing.

2 cups self-rising flour
½ cup white sugar
½ teaspoon salt
1 teaspoon ground cinnamon
1 ½ cups nonfat milk
2 large banana, mashed
2 Granny Smith apples - peeled, cored and shredded
1 tablespoon grated orange zest
1 teaspoon vanilla extract
¼ cup white sugar
3 tablespoons water
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
  • In a large bowl, stir together flour, 1/2 cup sugar, salt and 1 teaspoon cinnamon. Stir in milk, banana, apples, orange zest and vanilla extract. Spoon batter into prepared muffin cups.
  • Bake in preheated oven until golden brown, about 25 to 30 minutes. Check bake time by inserting a toothpick into the center of a muffin. The muffins are done when the toothpick comes out clean.
  • While muffins bake, combine 1/4 cup white sugar and 3 tablespoons water in a small saucepan. Bring mixture to a boil and cook for 1 minute. Brush glaze over baked muffins, then sprinkle muffins with as much cinnamon as you like.

1 egg
1/4 cup oil
1/3 cup low-fat milk
1/2 teaspoon vanilla
3/4 cup sugar
2 medium apples, chopped into small pieces
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 3/4 cups oats
3 teaspoons baking powder
1 pinch cinnamon
1/4 cup raisins or 1/4 cup dried cranberries
1/4 cup walnuts (optional)

Steps:

  • Preheat oven to 350F degrees. Grease a 1/3-cup muffin pan or line with paper cups .
  • In a bowl combine bananas, milk, oil, sugar, vanilla and egg. In another bowl whisk together dry ingredients - flours, oats, cinnamon and baking powder. Add dry mixture to wet mixture, mix well. Dust apples, raisins, and walnuts (if using) lightly to cover with flour, then fold inches.
  • Spoon the mixture evenly into muffin cups. Bake for 20-25 minutes or until tester comes out clean.
  • Make sure you remove muffins immediately after they are done. Let them cool on a wire rack.

I got this recipe out of a Gooseberry Patch cookbook and it is one of my stand-by recipes when I am watching my calories and fat. Since I am doing just that right now, thought I would put it on the zaar for easy access and hopefully someone else likes this recipe as good as I do. (I prefer to sub 3/4 of the white flour for whole wheat and use brown sugar instead of granulated sugar. I think fresh nutmeg is the key in this!)

  • Preheat oven to 350 degrees.

  • Pour into muffin tin.
  • Bake for 15 - 20 minutes. (My oven baked right around 17 minutes.).

1 Tbsp Cinnamon
1 tsp Baking soda
1/2 tsp Salt
1 1/2 Cups Ripe banana, mashed ((342g))
1/2 Cup Avocado oil (or any neutral flavored oil)
1 Egg
1/4 Cup Honey
1 Tbsp Vanilla
2 Cups Chopped apples ((about 1 large apple - I used fuji))

Steps:

  • Pre heat your oven to 400 degrees and spray a muffin pan with cooking spray.
  • In a medium bowl, whisk the flour, cinnamon, baking soda and salt.
  • In a separate bowl, whisk all the remaining ingredients except the apples.
  • Whisk the flour mixture into the wet ingredients JUST until combined - don't over-mix. Gently fold in the apples.
  • Spoon into the muffin cavities - they will be quite full.
  • Bake for 5 mins. Then, lower the heat to 375 degrees and bake for 12-14 mins, until a toothpick inserted comes out clean.
  • Let cool COMPLETELY in the pan and then DEVOUR!
