CHOICE APPLE AND BANANA MUFFINS
This is an excellent recipe where no butter, oil or any type of fat is added. It is not to dry and not too moist. The best thing about them is you can snack on them anytime you wish and how many as you like and not be worried. They also taste EXCELLENT! The glaze is a must.

NO-FAT BANANA APPLESAUCE MUFFINS
I got this recipe out of a Gooseberry Patch cookbook and it is one of my stand-by recipes when I am watching my calories and fat. Since I am doing just that right now, thought I would put it on the zaar for easy access and hopefully someone else likes this recipe as good as I do. (I prefer to sub 3/4 of the white flour for whole wheat and use brown sugar instead of granulated sugar. I think fresh nutmeg is the key in this!)

- Preheat your oven to 180C/350F (160C/320F fan forced) and line a 12 hole muffin tin with squares of baking paper or muffin cases.
- Peel and grate the apples and chop the butter into cubes. Transfer the apple and butter into a small saucepan and cook for 5 minutes over medium heat, stirring occasionally until the butter has melted and the apple has softened.
- Meanwhile, mash the bananas in a large mixing bowl, using the back of a fork and then add the flour, baking powder, cinnamon, and eggs. When the apple and butter mixture is ready, transfer it to the mixing bowl, and stir all the ingredients together until well combined.
- Spoon the mixture into the muffin tin. If you have an extra banana, slice it into rounds and pop a slice of banana on top of each muffin.

- Preheat your oven to 350 degrees F (175 degrees C) and grease, butter, or spray muffin pan(s) with non-stick cooking spray. You can also use the paper muffin liners.
- Melt the butter (or use oil, we prefer coconut oil) and allow to cool slightly while mashing your over-ripe bananas. Mix in the beaten eggs.
- Chop apples by hand or use a food processor, if desired. Add finely chopped apples (we use honeycrisp the most, also braeburn and galas) to the mashed bananas and stir until evenly distributed through the banana mixture.
- Add the melted butter or oil, stir to combine. Then add sugar, vanilla bean paste, baking soda, salt, cinnamon, and nutmeg. Mix thoroughly, then add the flour and combine until the flour is fully mixed in to make a lumpy batter.
