Grilled Garlic Cajun Shrimp Skewers image

Putting shrimp on the grill provides a lightly charred smokiness that makes it irresistible. This grilled shrimp recipe is easy to prep and quick to cook. Brushing on extra marinade at the end ensures great flavor in every bite.

1/2 cup unsalted butter (or 8 Tbsp)
4 cloves of garlic (pressed or minced)
1 Tbsp cajun spice (provides light heat; it's not too spicy)
1/2 tsp salt (omit if using salted butter)
1 Tbsp lemon juice (from 1/2 medium lemon)
2 lbs uncooked large shrimp (21-25 count, peeled and deveined)
12 medium wooden skewers

Steps:

  • Soak wooden skewers in water 30 min (reduces burning of the sticks). Preheat Grill to med/high (400˚F).
  • Combine all marinade ingredients in a small sauce pan. Bring to a simmer then remove from heat. Pour half of the mixture into a ramekin and leave remaining marinade in pan (You'll brush on half now and brush on remaining marinade after shrimp are grilled).
  • Skewer 4 shrimp on each damp skewer without leaving spaces. Lay skewers flat on a rimmed cookie sheet. Brush one side of the skewered shrimp with sauce and refrigerate for 2 min until butter firms up. Flip shrimp over, brush second side and refrigerate 2 min until butter firms up.
  • Place skewers on the barbie and grill shrimp with the lid on about 2 minutes per side or just until cooked through and no longer transparent. Remove shrimp from grill. Don't overcook or they will be rubbery. Brush on reserved sauce and serve.

1/2 cup olive oil
3 cloves garlic, crushed
1 tablespoon Calabrian chile flakes
1 tablespoon fresh oregano leaves, plus for garnish
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 pound extra-large (16 to 20 per pound) shrimp, shelled and deveined, tail-on

Steps:

  • Put the olive oil, garlic and chile flakes in a small skillet. Turn the heat to low and let the mixture heat for about 10 minutes; the oil should just barely simmer around the garlic in the last few minutes. Remove from the heat and cool slightly. Transfer to a blender, add the 1 tablespoon oregano and some salt and pepper, and blend until the garlic and oregano are finely chopped. Set aside half of the chile-garlic oil for serving.
  • Heat the grill to high. Thread the shrimp onto skewers, about 4 or 5 shrimp per skewer, threading so that the skewers goes through the tail and thick end of each shrimp. Brush the shrimp with some of the chile-garlic oil and season with salt and pepper. Grill until lightly golden brown on both sides and opaque, 1 to 1 1/2 minutes per side. Transfer the skewers to a platter and immediately drizzle with some of the reserved chile-garlic oil (not the oil you used for brushing the raw shrimp). Garnish with oregano, and serve with more of the reserved oil.

4 cloves garlic, minced
3 tablespoons salted butter, melted
2 teaspoons Cajun Select Seasoning, recipe follows
1 lemon, halved
Kosher salt and freshly ground black pepper
Hot sauce, for grilling, optional
4 tablespoons kosher salt
2 tablespoons granulated garlic
2 tablespoons paprika
1 tablespoon cayenne pepper
1 tablespoon onion powder
1 tablespoon ground black pepper
1 tablespoon sugar
1 teaspoon dried basil
1 teaspoon ground celery seed
1 teaspoon dried oregano

Steps:

  • Preheat a grill for cooking over medium-high heat.
  • Add the shrimp, garlic, butter, Cajun Select Seasoning, juice of 1/2 lemon and some salt and pepper to a bowl and toss all together. Skewer the shrimp on metal skewers. Grill the shrimp, drizzling with hot sauce if desired, until plump and pink, about 2 minutes per side.
  • Grill the remaining 1/2 lemon until charred, 3 to 4 minutes. Serve with the shrimp.
  • Blend together the salt, granulated garlic, paprika, cayenne, onion powder, black pepper, sugar, basil, celery seed and oregano in a bowl until combined. Store in an airtight jar for up to 6 months.

This grilled shrimp recipe came from a neighbor, Katie. These shrimp are a nice change from the regular Cocktail shrimp. The ingredient list looks long, but very easy to make with sprices/herbs that are usually onhand. Easy make-ahead, or bring with appetizer. Frozen shrimp work great.

2 lbs shrimp, peeled deveined, and be sure they are thawed, if using frozen. (I buy mine at Sam's 2 lb bag)
1/2 cup olive oil
2 tablespoons lemon juice
2 tablespoons parsley
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon paprika
2 1/2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne pepper
3/4 teaspoon white pepper
3/4 teaspoon black pepper
1/2 teaspoon thyme
1/2 teaspoon oregano

Steps:

  • Mix together. Marinade for up to 24 hours. Skewer and grill, 3 minutes per side, or until tender. Serve warm or refrigerate to serve later.

This is an adaptation of BBQU recipe. My favorite way to cook and eat shrimp. Adjust the heat according to your taste.

3 lbs shrimp, peeled and deveined
3 tablespoons Old Bay Seasoning
3 tablespoons cajun seasoning
1 tablespoon ground coriander
1 tablespoon fresh ground black pepper
1 -3 teaspoon cayenne pepper
1/4 cup olive oil
3 tablespoons fresh lemon juice

Steps:

  • Rinse the shrimp under cold running water.
  • Place the Old Bay seasoning, Cajun Rub, coriander, black peppercorns, and cayenne in a small bowl and stir to mix. Sprinkle the rub over the shrimp and toss to mix. Stir in the olive oil and the lemon juice and stir to mix. Let the shrimp marinate in the refrigerator, covered, for 1 hour.
  • Thread shrimp onto skewers. Set up the grill for direct grilling and preheat to high. If using a gas grill, place all the wood chips or chunks in the smoker box or in a smoker pouch and run the grill on high until you see smoke. If using a charcoal grill, preheat it to high, then toss all of the wood chips or chunks on the coals. When ready to cook, brush and oil the grill grate. Place the marinated shrimp on the hot grate and grill until just cooked through, 1 to 3 minutes per side. When done, the shrimp will turn a pinkish white and feel firm to the touch.
