CHOCOLATE WAFER ICE BOX CAKE

Chocolate Wafer Ice Box Cake image

My daughter whipped this up for dessert on Easter Sunday. It was delicious and very easy to make. It didn't last long as we all wanted seconds--at least I did. When I went over the next day, it was gone. You use those thin yummy chocolate wafer cookies. They are so good.

Time 6h15m

Yield 1 14

Number Of Ingredients 6

2 3/4 cups heavy cream (chilled)
1/2 cup confectioners' sugar
1 teaspoon vanilla
36 nabisco famous chocolate wafer cookies
2 tablespoons unsweetened cocoa powder (sifted)
2 tablespoons rainbow multicolored sugar nonpareils or 2 tablespoons candy sprinkles

Steps:

  • Whip 1 1/2 cups of the cream, 1/4 cup of the confectioners sugar and the vanilla together in a large bowl with an electric mixer until you have soft peaks.
  • Stack 6 cookies on top of each other, spreading about 1 tablespoon whipped cream on top of each wafer, and topping the final wafer in the stack with some whipped cream.
  • Repeat until you have 6 stacks of 6 wafers.
  • Lay the cookie stack on their sides, next to each other, on a rimmed baking sheet to make a 14" log.
  • Wrap the log in plastic wrap and freeze till firm, at least 6 hours.
  • When ready, combine the remaining 1 1/4 cups heavy cream, the remaining 1/4 cup confectioners sugar, and the cocoa powder in a medium bowl and whip with mixer until it holds stiff peaks.
  • Spread the cocoa whipped cream evenly over the log.
  • Loosen the cake from the baking sheet with a wide spatula and carefully transfer to a long serving platter.
  • Let stand at room temperature for 15-20 min before slicing.
  • Sprinkle the nonpareils just before serving because they might bleed from the moisture.

FAMOUS CHOCOLATE WAFER ROLL

Famous Chocolate Wafer Roll image

This recipe comes from the box of Famous Chocolate Wafers and is just so sweet and impressive. I figured creamy, dreamy desserts like this would take hours to prepare. Rich, fabulous, and fast!

Categories     Dessert

Time 35m

Yield 6 serving(s)

Number Of Ingredients 5

1 cup heavy cream
1/4 cup confectioners' sugar
1/2 teaspoon pure vanilla extract
20 Famous chocolate wafers
chocolate curls (to garnish)

Steps:

  • Whip the heavy cream with the sugar and vanilla until stiff.
  • Set aside 1 cup of mixture.
  • Spread wafers with remaining cream and arrange in stacks of five.
  • Chill for 15 minutes.
  • Lay stacks on edge to make one long roll.
  • Spread remaining 1 cup of cream on outside of roll.
  • Cover and chill for at least four hours or overnight.
  • Garnish with chocolate curls or shavings before serving.
  • To serve, cut DIAGONALLY.
  • Note- To make chocolate curls you can slightly warm a large candy bar of good quality chocolate in the microwave (only a few seconds should do) Slowly scrape back of bar with a vegetable peeler and transfer curls using a toothpick, to a baking sheet or large plate/ Refrigerate until firm/ For shavings, I like to thinly slice miniature Dove Dark Chocolate candies (about eight or so) and sprinkle on your dessert.

CHOCOLATE STACKS

Chocolate Stacks image

My grandmother started the whole tradition when she began making this delicious treat in the 1940s. The recipe has been handed down from her to my mother and finally to me. Today, I am the one in charge of making it for our family during Christmas. I have modified the recipe from the original since my turn at bat came back in the late '70s. In my mind's eye I can see family members past and present losing their belts to enjoy it. And I hope you find it as wonderful as we do!

Number Of Ingredients 9

4 boxes of Nabisco Famous Wafers
2 pints of heavy whipping cream
1 cup of sugar
3 jiggers of Canadian whiskey (use a blended whiskey for better results)
2 teaspoons of real vanilla extract
1 jar of maraschino Cherries
1 can of Hershey's chocolate syrup (refrigerated)
1 pound of slivered almonds
1 bottle of Betty Crocker's Decor Nonpariel's

Steps:

  • In a cold metal bowl, beat the whipping cream to the soft peak stage and add the sugar and vanilla extract slowly. As the whipping cream comes up to the hard peak stage, add the whiskey slowly. (Sample to insure taste.)
  • In a food processor, grind 3/4 of the slivered almonds into a fine powder. Place in a bowl and set aside. (Reserve 1/4 as decoration during final assembly.)
  • Assembly: Begin by placing one wafer on your tray. Paint the top of it with a thin layer of Hershey's sauce. Next add a teaspoon of the ground almonds and spread it evenly. Then add a teaspoon of the whipping cream mixture.
  • Repeat this until you have 6 layers and top it with a dollop of whipping cream. Add a cherry to the top of each stack and a few whole slivered almonds. Then garnish lightly with the Decor Nonpariels. Cover the completed pan of stacks with a sheet of Glad wrap and put them into the refrigerator overnight.
  • Note: The whipping cream will soften the wafers. You will need to serve and eat these stacks within the next two or three days. After that the cream starts to harden and they don't taste a good. ENJOY!
  • This recipe will yield two trays of 24 stacks. Two per person will serve 12. You will need two aluminum roasting pans to hold the completed dessert.
