This recipe came from the KitchenAid Great Baking and More cook book, my sister in law gave it to at Christmas, thanks Shannon for this recipe. These cupcakes were easy to make and I love the cappuccino flavor both in the cake and in the coffee cream, with a hint of cinnamon in the fudge sauce these are sure to make someones day, they did mine. I baked mine at 350 F for about 14-15 min. in regular cupcake tins not custard cups like the recipe calls for, and I got about 18 cupcakes.

1/2 cup butter or 1/2 cup margarine, softend
1 1/2 cups sugar
3 eggs
3/4 cup milk
1 tablespoon instant espresso or 1 tablespoon instant coffee granules
2 teaspoons instant espresso or 2 teaspoons instant coffee granules
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
coffee creamer
1 1/2 cups heavy cream
1/4 cup sugar
1 1/2 teaspoons instant espresso or 1 1/2 teaspoons instant coffee granules
fudge sauce
4 semi-sweet chocolate baking squares (1 ounce each)
1/2 cup whipping cream
1/2 teaspoon ground cinnamon

Steps:

  • Place butter in mixer bowl. Attach bowl and flat beater to mixer. Turn to speed 6 and gradually add sugar, beating about 3 minutes, or until light and fluffy. Turn to speed 4 and add eggs, one at a time, beating for 30 seconds after each addition. Stop and scrape bowl. Dissolve instant espresso in milk. Set aside.
  • Combine flour, baking powder, and salt. Turn to stir speed and add a third of the flour mixture alternately with half of the milk mixture, mixing 15 seconds after each addition.
  • Spoon batter into 8 greased and floured custard cups. Place cups on a baking sheet. Bake at 350 F for 30-35 minutes, or until toothpick inserted into cupcake comes out clean. Remove from custard cups and cool on wire rack.
  • Coffee Cream, Combine cream, sugar, and espresso in mixer bowl. Attach wire whip to mixer. Turn to speed 8 and whip cream until stiff.
  • Fudge Sauce, Place chocolate, cream, and cinnamon in a small saucepan. Cook and stir over low heat until chocolate is melted an mixture is combined.

1/2 cup sugar
2/3 cup whipping cream or 2/3 cup heavy cream
1/4 cup whipped margarine
1 teaspoon instant coffee (or grain beverage powder)
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 (12 ounce) bag semi-sweet chocolate chips
1 cup toasted chopped hazelnuts or 1 cup walnuts

Steps:

  • Line 8" square baking dish with aluminum foil; set aside.
  • In a 2 qt saucepan, combine marshmallow cream, sugar, cream, margarine, coffee powder, cinnamon and salt.
  • Bring to a boil over medium heat, stirring constantly.
  • Continue to boil 5 minutes, stirring constantly.
  • Remove from heat.
  • Stir in chocolate chips until smooth.
  • Stir in nuts.
  • Pour into prepared pan.
  • Cover and refrigerate at least 4 hours or overnight.
  • Using foil, lift fudge onto cutting board.
  • To serve, cut into 36 squares.

1 tablespoon butter, melted
1 egg
2 tablespoons caster sugar
2 tablespoons self-raising flour
1/4 cup plain flour
40 g good quality dark chocolate, grated
1 cup thickened cream
1 teaspoon drinking chocolate
1 teaspoon cocoa powder
cocoa powder, to serve
chocolate-covered coffee beans, to serve

Steps:

  • Preheat the oven to 180°C and line a 12-hole (2 tablespoon capacity) flat-based cupcake or patty pan with paper cases.
  • Dissolve the coffee in 1 tablespoon of hot water in a small jug and stir in the butter.
  • Using an electric hand mixer, beat the egg and sugar in a medium-sized bowl until pale and thick; sift the flours together over the egg mixture and using a large metal spoon, gently fold in until just combined; gently stir in the coffee mixture and the grated chocolate.
  • Half fill each paper case with the mixture and bake for 15-18 minutes or until a skewer inserted into the centre of one of the cupcakes comes out clean.
  • Leave the cupcakes standing in the pan for 10 minutes, then transfer them to a wire rack to cool.
  • Using an electric mixer, beat the cream until it is thick; sift the drinking chocolate and cocoa over the cream and fold it through the cream to create a marbled effect; spoon the cream mixture over the cupcakes, dust with extra cocoa and top each cupcake with a chocolate-coated coffee bean.

200g plain chocolate , under 70% cocoa solids is fine
200g light, soft brown sugar
2 eggs , beaten
1 tsp vanilla extract
250g self-raising flour
Smarties , sweets and sprinkles, to decorate
200g plain chocolate
100ml double cream , not fridge-cold
50g icing sugar

Steps:

  • Heat oven to 160C/140C fan/gas 3 and line a 12-hole muffin tin with cases. Gently melt the butter, chocolate, sugar and 100ml hot water together in a large saucepan, stirring occasionally, then set aside to cool a little while you weigh the other ingredients.
  • Stir the eggs and vanilla into the chocolate mixture. Put the flour into a large mixing bowl, then stir in the chocolate mixture until smooth. Spoon into cases until just over three-quarters full (you may have a little mixture leftover), then set aside for 5 mins before putting on a low shelf in the oven and baking for 20-22 mins. Leave to cool.
  • For the icing, melt the chocolate in a heatproof bowl over a pan of barely simmering water. Once melted, turn off the heat, stir in the double cream and sift in the icing sugar. When spreadable, top each cake with some and decorate with your favourite sprinkles and sweets.

3 Tbsp. Irish cream liqueur, divided
1 cup chopped walnuts
1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), broken into pieces

Steps:

  • Mix 1/4 cup flavored instant coffee and 1 can condensed milk in large microwaveable bowl until blended. Add semi-sweet chocolate; stir. Microwave on HIGH 2 min. or until chocolate is almost melted; stir until completely melted. Stir in 2 Tbsp. liqueur and nuts; spread onto bottom of foil-lined 8-inch square pan.
  • Mix remaining coffee and condensed milk in medium microwaveable bowl until blended. Add white chocolate; stir. Microwave 2 min. or until chocolate is almost melted; stir until completely melted. Stir in remaining liqueur. Spread over chocolate layer in pan.
  • Refrigerate 2 hours or until firm before cutting into squares.

  • Preheat oven to 350 degrees for silver pans or 325 degrees for black pans (if hotter temps. are used with black pans dessert will taste overcooked). Place cupcake liners in cupcake pans. Melt the chocolate squares in the microwave and set aside to cool. Whisk together the flour, baking soda, and salt (medium sized bowl). In a seperate bowl (large size), beat the margarine till light and fluffy. Add the sugar and vanilla and beat together. Add the eggs, one at a time, beating well. Stir in the cooled chocolate. Then, add the dry ingredients and water alternately to the chocolate mixture beating after each addition. Scoop the batter into the liners.
  • Cook silver cupcake pans for 23-25 minutes at 350 degrees.
  • Cook darker pans for 20 minutes at 325 degrees.
  • To check to see if cake is done, insert a toothpick into the middle. The toothpick should come out clean. Remove the finished cupcakes from the oven and let cool for 10 minutes. Then, place them on wire racks to cool. Once cooled (completely or frosting will melt), eat plain or frost with your favorite buttercream or other frosting.
  • Buttercream frosting can be made easily by starting with mostly confectioners sugar and adding 1-2 sticks of margarine or butter, a teaspoon of vanilla, and by slowly adding milk till mixture reaches consistency for piping or spreading. Once frosting is done to the taste and texture, food coloring (paste) can be added to color it.

  • Spoon batter into muffin cups, filling two-thirds full.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean.
  • Cool on wire rack 10 minutes.
  • Remove from pan; cool completely.
  • To make chocolate curls for garnish, line 4x2x2-inch mini loaf pan with plastic wrap.
  • Melt 6 oz of the chocolate in metal bowl set over pan of barely simmering water (do not let bowl touch water).
  • Pour into mini loaf pan; cool until firm.
  • Unmold chocolate; remove plastic wrap.
  • Using vegetable peeler, make curls.
  • In medium saucepan, combine remaining 6 oz semisweet chocolate and whipping cream.
  • Heat over low heat until melted and smooth, stirring frequently.
  • Spread each cupcake with frosting; let cupcakes stand until frosting is cool but not set.
  • Garnish with chocolate curls.
