If you're a member of the cake-y brownie club, move along. If fudge-y is your jam, step right up. These brownies are soft, dense and super-rich, but the best part is that they are incredibly simple to make. Melt butter in a saucepan (we often melt ours in the microwave because who needs another pot to clean?) then stir in the chocolate until it's melted. Combine the wet ingredients with the dry ingredients, pour it all into a buttered pan, slide it into the oven and in about a half hour: brownies worthy of their name.

11 tablespoons (155 g) unsalted butter, plus extra for greasing the pan
6 ounces (170 g) good unsweetened chocolate, chopped
2 1/3 cups (465 g) sugar
6 large eggs
1 1/2 tablespoons vanilla extract
1 1/3 cups (165 g) all-purpose flour
3/4 teaspoon salt
1 cup/120 grams chopped nuts or 1 cup/175 grams chocolate chips (optional)
Cocoa powder (optional)

Steps:

  • Heat oven to 325 degrees. Lightly grease a 9-by-13-inch baking pan.
  • Place the butter in a medium saucepan, and melt over low heat. Remove from the heat, add the chocolate and stir constantly until melted. Set aside.
  • In a large bowl, combine the sugar, eggs and vanilla. Stir until well mixed. Add the melted chocolate mixture, and mix until combined. Add the flour and salt, and mix just until combined. Fold in the nuts or chocolate chips if desired.
  • Place the batter in the greased pan, and bake for 25 to 30 minutes, or until the top is dull and an inserted toothpick comes out mostly clean. Do not overbake. Cool completely. If desired, dust the top with cocoa powder before cutting.

2 eggs
1/2 teaspoon salt
1 cup sugar
1 tablespoon pure vanilla extract
1 stick margarine
3 ounces unsweetened chocolate chopped
1/2 cup all-purpose flour
Chocolate ganache for topping, recipe follows
1/2 cup (4 ounces) semisweet chocolate chips
1/4 cup heavy cream

Steps:

  • Preheat oven to 350 degrees F.
  • Using a hand held electric mixer, beat the eggs and salt together in a large mixing bowl until frothy. Add the sugar and beat until the eggs are thick and pale yellow, about 2 to 3 minutes. Add the vanilla extract and beat an additional 30 seconds.
  • Put the margarine and chocolate in a microwave safe container and microwave on high for 1 minute. Stir to insure that the chocolate has melted. Microwave an additional 30 seconds, if needed.
  • With the mixer running, pour the melted chocolate into the egg mixture. Add the flour and beat 1 minute. Scrape down the sides of the bowl and beat an additional 30 seconds.
  • Spray the cake pan with a pan release spray and pour in the brownie batter. Place the pan on the top rack of the oven and bake 15 to 20 minutes until the center is barely set.* Remove the pan from the oven and let cool. Top with the ganache and place in the freezer for at least 1 hour.
  • To serve, remove from freezer and slice immediately. Allow to come to room temperature before serving.
  • Put the chocolate chips and cream into a microwave safe bowl. Microwave on high for 1 minute. Remove the bowl and stir with a whisk or fork until well mixed. Use immediately. If using the ganache later it will need to be reheated.

Steps:

  • Cooking Aids: mini muffin baking pan, mini muffin cups, medium scoop (cookie drop size or tablespoon).
  • Preheat oven to 350 degrees and prepare mini muffin pan with paper liners.
  • Stir brownie mix, water, oil and eggs until well blended.
  • Fill muffin cups 3/4 full with batter, use the medium scoop for less mess.
  • Bake 20 to 22 minutes or until tooth pick comes out clean.
  • Cool completely before glazing.
  • Glaze: Heat whipping cream in small saucepan over low heat just until hot but not boiling; remove from heat.
  • Stir in chocolate until melted.
  • Let stand about 15 minutes.
  • Spoon mixture over brownie and add sprinkles.

These sinful little bites are a double-blast of chocolate decadence. The idea was inspired by a recipe my mother made at Christmas time as well as the latest craze of cake pops. These little devils pack a big chocolate punch with moist, chewy brownie inside surrounded by a chocolate shell. Just be sure to have a big glass of ice-cold milk close at hand. For easier dipping and serving, spear with festive toothpicks.

1 (18 1/3 ounce) box brownie mix (Betty Crocker Fudge Brownies, Family Size)
1/4 cup water
2/3 cup vegetable oil
2 eggs
2 cups semi-sweet chocolate chips
2 tablespoons shortening
1 teaspoon cocoa powder (optional)
1 tablespoon powdered sugar (optional)

Steps:

  • Preheat oven to 350°F.
  • In a medium sized mixing bowl, combine brownie mix, oil, water and eggs. Mix well and pour into a greased 13 x 9 inch cake pan.
  • Bake for 24-26 minutes or until a toothpick inserted into the center comes out clean. Allow brownies to cool completely. Cooling overnight is best, but be sure to cover them securely.
  • Once cool, cut brownies into 1-inch squares. Remove each brownie from the pan and roll in the palms of your hands until rounded. If desired, trim the chewy outside edge from the brownies before cutting into 1-inch squares. Spear each brownie ball with a toothpick.
  • On a large cookie sheet, lay a sheet of waxed paper.
  • Place chocolate chips and shortening in a microwave-safe glass mixing bowl. Microwave for 30 seconds, stir, and repeat until chips are melted and the mixture is smooth.
  • Carefully dip the bottom of each brownie ball into the chocolate. Hold sideways and spoon chocolate over the ball until completely covered. Allow excess chocolate to drip off into the bowl. Place each ball on the waxed paper 1 inch apart. If the chocolate mixture thickens, re-microwave for 15-20 seconds at a time until it reaches the desired consistency.
  • If desired, garnish each truffle with a dusting of cocoa & powdered sugar: In a small mixing bowl, combine cocoa and powdered sugar. Sprinkle lightly over truffles. Refrigerate until chocolate hardens. Store at room temperature in a tightly covered container for up to one week.
  • Pour a tall glass of ice-cold milk, sit back and enjoy!

According to the site, "Store the finished bars in an airtight container to prevent from drying out.These have a better eating quality if eaten at room temperature."

8 ounces unsalted butter
7 ounces unsweetened baking chocolate, chopped
2 cups granulated sugar
4 large eggs
1 cup all-purpose flour, not sifted
1 teaspoon vanilla extract
1 cup walnuts, chopped
8 ounces dark chocolate
3/4 cup heavy whipping cream
1 tablespoon light corn syrup
1 tablespoon unsalted butter, softened

Steps:

  • Truffle Bar Crust:.
  • Preheat the oven to 350_F.
  • Lightly spray a 9" x 13" cake pan with some pan spray. Set aside.
  • Place the butter in a heavy saucepan.
  • Melt the butter over low heat.
  • Remove the pan from the heat.
  • Add the unsweetened chocolate to the melted butter, stirring constantly with a wooden or nylon spoon until the chocolate is completely melted. Add the sugar and stir to completely combine.
  • Add the eggs, one at a time, stirring vigorously after each addition to thoroughly combine the egg into the batter.
  • Add the flour and stir to combine.
  • Add the Vanilla extract and walnuts.
  • Pour batter into prepared pan.
  • Bake for 20 to 25 minutes only. The brownie may still look soft and shiny. Care must be taken not to over bake the base or it will end up being dry and crumbly.
  • Remove from the oven and place on a cooling rack.
  • Cool completely.
  • Topping:.
  • Chop the chocolate and place in a stainless steel or glass bowl.
  • Place one inch of water in a small heavy saucepan.
  • Place the saucepan on the stove and bring the water to a simmer.
  • Remove the saucepan from the stove.
  • Place the bowl containing the chopped chocolate on top of the pan of simmering water.
  • Stir the chocolate until it is completely melted.
  • Remove the bowl from the top of the pan and dump the water out.
  • Place the cream and light corn syrup into the sauce pan and bring to a boil.
  • Pour the hot liquid over the melted chocolate.
  • Whisk the hot liquid and the chocolate together to completely combine.
  • Set the chocolate mixture aside and allow the Ganache to cool for five minutes.
  • Whisk the softened butter into the chocolate mixture.
  • Allow the Ganache to cool to room temperature. The mixture will be a thick, custard-like consistency.
  • Whisk the Ganache just until it begins to lighten in color slightly.
  • Spread the whipped Ganache evenly over the brownie base.
  • If desired, cover the top of the bars with shaved dark chocolate.
  • Allow the bars to sit at room temperature until the Ganache firms up.
  • Dust lightly with cocoa powder.
  • Cut into 1 1/2 inch squares.

A naughty chocolate version of a traditional trifle, and so easy to make. Layer chocolate brownies, custard, Irish cream liqueur and whipped cream for an indulgent treat

500ml pot ready-made chilled custard (look for one with real vanilla)
100g dark chocolate, broken into pieces
400g shop-bought chocolate brownies
3 tbsp coffee
100ml Irish cream liqueur, plus 1 tbsp extra for soaking the brownies
121g bag Maltesers
500ml double cream
25g icing sugar

Steps:

  • Put the custard and chocolate in a saucepan. Gently heat, stirring, until the chocolate has completely melted into the custard. Cover the surface with cling film to stop the custard forming a skin, then cool.
  • Sit the brownies in a trifle bowl and mix together the coffee with the 1 tbsp Irish cream liqueur. Drizzle all over the brownies. Use a rolling pin or saucepan to gently bash the bag of Maltesers a few times to crush a little, then sprinkle about three-quarters over the brownies. Spoon the cooled chocolate custard all over the top, then cover and chill.
  • Make the final layer by combining the cream and 100ml Irish cream liqueur in a bowl. Sift over the icing sugar, then whip until soft peaks form. Cover and chill until you're ready to serve.
  • To serve, give the cream a quick mix, then spoon on top of the chocolate custard. Scatter over the last few crushed Maltesers to decorate.

This is a chocolate-lover's dream dessert! If you don't have a trifle dish then use a large glass bowl, I use my recipe#87925 for this, use your own favorite brownie recipe but must be baked in a 13 x 9-inch pan or use a packaged brownie mix. Plan ahead the brownies must be baked and refrigerated until completely cold before slicing, I advise to make the brownies a day in advance. Prep time does not include making the brownies. You can use all chocolate pudding if desired.

1 (3 ounce) package instant chocolate pudding mix

  • Prepare chocolate and cream cheese pudding separately in two bowls using 2-3/4 cups milk for each.
  • Line the bottom of the trifle bowl with HALF of the brownie cubes.
  • Pour the prepared chocolate pudding over the brownies then sprinkle with 1/3 of the crushed cookies.
  • Cover with one 8-ounce container of the Cool Whip topping.
  • Layer the remaining brownie cubes over the Cool Whip, then pour the cream cheese pudding over the Cool Whip.
  • Sprinkle 1/3 of the crushed cookies over the cream cheese pudding, then top with the second 8-ounce container of Cool whip topping.
  • Sprinkle the remaining crushed cookies over the Cool Whip.
  • Refrigerate until ready to serve.
