DARK CHOCOLATE BROWNIE BITES

Nonstick cooking spray, for greasing the pan
4 sticks (2 cups) salted butter
10 ounces unsweetened chocolate, chopped
1/2 cup unsweetened cocoa powder
4 cups sugar
2 tablespoons vanilla
6 large eggs
2 1/2 cups all-purpose flour
1 1/2 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Grease an 18-by-13-inch pan (half sheet pan) with cooking spray.
  • In a medium-large saucepan, heat the butter and unsweetened chocolate over low heat, whisking occasionally, until smooth and melted. Sprinkle in the cocoa powder and whisk to combine. Remove the pan from the heat and allow to cool for about 5 minutes.
  • Stir the sugar and vanilla into the chocolate mixture until just combined. One at a time, stir in the eggs. Gently stir in the flour until halfway incorporated. Add the chocolate chips and stir just until combined.
  • Pour the batter (it will be very thick!) into the prepared pan, spreading to even out the top. Bake for 30 minutes, then check the brownies with a toothpick. If they are overly gooey/messy, return to the oven for 5 to 10 more minutes (just be careful not to burn the edges). Allow to cool completely (important!), then cut into small squares.

A rich, chocolate coating over decadent, double-chocolate bite-size brownies with festive toppings. I got this recipe at a TOH Christmas Show and they are INCREDIBLE!! They are probably the absolute best cookie/candy type treat I've ever made!! We noticed they tasted even better on day 2 & 3 so you might want to make them ahead of time. I used candy coating wafers to dip them in rather than more chocolate chips. One of the reasons was, I wanted to dip half of them in white chocolate. If you try that, make sure you do the white chocolate first...when the brownies are right out of the freezer. As they warmed up, I had trouble with crumbs getting in the coating. Both kinds, the white and dark chocolate, were fantastic though!

3/4 cup sugar
1/3 cup butter
2 tablespoons water
4 cups semi-sweet chocolate chips, divided
1 teaspoon vanilla extract
2 eggs
3/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
2 tablespoons shortening
other christmas candies or candy sprinkles

Steps:

  • For Brownies: In a saucepan, bring the sugar, butter and water to a boil over medium heat; remove from the heat.
  • Stir in 1 cup chocolate chips and vanilla; stir until smooth. Cool for 5 minutes.
  • Add eggs, one at a time, beating well after each addition.
  • Combine flour, salt and baking soda; stir into chocolate mixture. Stir in 1 cup chocolate chips.
  • Pour into a greased 9-inch square baking pan. Bake at 325°F for 35 minutes or until set.
  • Cool completely. Place in the freezer for 30-40 minutes (do not freeze completely). Cut into squares.
  • For Coating: In a heavy saucepan or microwave, melt remaining chips with shortening; stir until smooth.
  • Using a small plastic fork with two middle tines broken off, dip brownies to completely coat; shake off excess.
  • Place brownies on waxed paper-lined baking sheets; immediately decorate with M&M's or other toppings as desired or drizzle with melted baking chips.
  • Let stand until set. Store in a sealed container in a cool place.

Notes: This is a great way to get your chocolate fix in warm weather since the chocolate is stirred into the toffee and so no melting on the fingers! It's great to snack on and nice at the end of a meal with coffee. I learned this from the head pastry chef at Valrhona Chocolates.

Steps:

  • Place the sugar in a heavy-bottomed saucepan and caramelize on high heat stirring constantly. It will turn amber brown in about 5 minutes. When it is a uniform caramel color, add the butter, and stir it in. Once mostly combined, add the chocolate, and stir to blend. Pour it out onto a silpat or parchment lined sheet pan, and spread it with an offset spatula 1/8-inch thick. Let cool and break into small pieces. Store in an airtight container.

  • Preheat oven to 350ºF (180ºC). Line a 9" x 13" (3 L) baking sheet with parchment paper.
  • Mix flour, sugar and butter until mixture resembles coarse crumbs. Mixture will be ery dry. Press into prepared pan. Sprinkle pecans evenly over mixture.

  • Cook butter and sugar in a small saucepan, stirring constantly until mixture begins to boil. Boil one minute. Pour over pecans.
  • Bake in preheated oven 18-20 minutes, until topping is bubbling.
  • Remove from oven and immediately sprinkle with chocolate chips. Let stand 3-5 minutes. Carefully spread to cover. Cool in refrigerator until chocolate sets. Cut into squares.

These Chocolate Toffee Brownie Bites are so easy to make and seriously taste amazing. The brownie is so thick, dense, and moist.

1 cup unsalted butter (cut into slices)
2 ounces unsweetened chocolate (chopped)
½ cup flour
⅛ teaspoon baking powder
pinch salt
1 cup sugar
2 eggs
1 ½ teaspoons vanilla
¼ teaspoon almond extract
4 ounces bittersweet chocolate (chopped)
½ cup heavy whipping cream
1 Tablespoon light corn syrup
⅛ teaspoon almond extract
⅓ cup Heath toffee bits

Steps:

  • Pre-heat oven to 325 degrees. Generously grease and flour 2 mini 12 cup muffin tins. Be sure to grease them well so they don't stick when removing.
  • Combine butter and chocolate in a medium bowl. Microwave until melted and smooth. Microwave for about 30 seconds and stir. Then repeat for another 30 seconds until the mixture is completely smooth. Let cool until tepid, about 10 minutes at room temp.
  • Sift the flour, baking powder and salt together in a medium bowl. Stir until combined. Set aside.
  • Stir the sugar, eggs, vanilla, and almond extract into the chocolate/butter mixture until well combined. Then add the flour mixture and stir til it's all well blended.
  • Spoon Batter into the prepared mini muffin tins. Fill them 2/3 full. Bake 14 - 15 minutes, until set but still soft in the center. Let them cool in the pan for about 10 minutes. Then invert them onto a plate or rack and let them cool completely.
  • For the glaze heat the chocolate, cream, and corn syrup in a microwave safe bowl. Stirring every 30 seconds until mixture is melted and smooth. Then stir in the almond extract. Then add in the toffee bits and stir until well blended.
  • Spoon glaze over the brownie bites covering tops and let it drip down the sides. You can sprinkle extra toffee bits on top (optional).
  • Let the glaze set up for about 10 minutes. Store any leftover brownie bites in the fridge.

  • Preheat oven to 325 degrees. Grease two 12-cup miniature muffin pans well and dust them with flour. I find the best way to do this is to fold a square paper towel into fourths so you have a padded square and use the paper napkin to dip a dollop of shortening out of the can and coat each muffin tin with the shortening.
