This chocolate ice cream has a premium taste, without all the work that typically goes into a premium ice cream.

2 cups heavy cream
1-1/2 cups milk
1/2 cup sugar
1/2 cup unsweetened cocoa powder (natural or Dutch-processed)
1 tsp vanilla extract

Steps:

  • Whisk all the ingredients together in a large measuring bowl, until cocoa and sugar dissolve.
  • Pour chocolate ice cream base into ice cream maker, and churn, until it reaches the consistency of soft serve.
  • For hard-scoop ice cream, transfer to a freezer-safe container, and freeze for an additional two hours (longer is fine).

200 g chocolate
1/2 cup sugar
5 egg yolks
500 ml milk

Steps:

  • Melt Chocolate in a double boiler.
  • Beat egg yolk and sugar together.
  • Heat the milk in low heat and remove from heat just before it starts to boil.
  • Add the milk to the yolk mixture little by little mixing thoroughly.
  • Heat the mixture again stirring occasionally until it boils and remove from heat.
  • Add melted chocolate and mix thoroughly.
  • Transfer to a chilled metal container and freeze.
  • Stir it every 45 minutes to break any ice lumps and put it back in the freezer.
  • Continue to do this 2 more times.
  • After about 7 hrs of freezing, put it through a food processor (or break it up and stir with a fork).

Wow! Here's a recipe for an awesome sherbet ! That's for me! Cool, refreshing, delicious! What could be better? Try this with my sooooooo good recipe#300914! I usually make a couple or three batches when I know I'm going to be having guests. Three's no harder than one! I truly hope you will try this and let me know what you think. I have not tried this with a sugar substitute, yet. Note:The times will differ greatly, because it will depend on if you use an ice cream maker or not. So for the sake of the computer, I will approximate, and the temperature will differ also.

1/4 cup sifted unsweetened cocoa powder
6 tablespoons sugar
1 cup low-fat milk

Steps:

  • In a small saucepan over medium heat, whisk cocoa, sugar, and 2 tablespoons water to form a smooth paste. Add another 2 tablespoons water; stir until mixture is warm and sugar dissolves. Remove from heat; stir in milk.
  • Pour mixture into a metal bowl, cover, and chill until cold, about 1 hour. Process in an ice cream maker according to manufacturer's directions. Or, pour mixture into a shallow metal pan, or ice cube tray and freeze 3 hours or up to overnight; then whirl in a food processor, adding up to 2 tablespoons water to smooth mixture if necessary.
  • Transfer mixture to a freezer-safe container, cover, and freeze until hard, about 30 minutes.

3 cups water, divided
1 cup sugar
1 (12 ounce) can frozen orange juice concentrate, thawed
2 tablespoons lemon juice
1/2 cup half-and-half cream (or use 18% table cream)

Steps:

  • In a saucepan bring 1 cup water and sugar to a boil stirring frequently.
  • Boil for 1 minute or until the sugar is completely dissolved.
  • Remove from heat then stir in the thawed orange juice concentrate, lemon juice and remaining 2 cups water.
  • Transfer to a freezer-safe bowl mixing.
  • Cover and freeze until semi-frozen but still a mixable consistency.
  • Remove from freezer then using an electric mixer beat until blended, then add in the cream and beat until combined.
  • Cover and return to the freezer until solid.
  • Remove about 12-15 minutes before scooping out of the bowl.
