DARK CHOCOLATE CUPCAKES WITH RASPBERRY FILLING
This dark chocolate cupcake is super easy, and the raspberry/mascarpone filling makes them devine. This recipe inspired by Giada De Laurentiis

- Make the cake mis as directed on the package for cupcakes. Using cupcake foil is easy clean up. bake according to package directions and let cool.
- In a food processor combine the mascarpone cheese, raspberries, 1/4 sugar, and lemon juice. Process the mixture till smooth. Transfer the raspberry mixture to a pastry bag fitted with a small tip. Push the tip gently into the top of the cupcake, and squeeze in the mixture till the cupcake plumps. Continue with all cup cakes.
- In a small saucepan bring 1/2 cup sugar, water, and vanilla extract to a simmer over medium heat. Simmer until the sugar is dissolved. In a medium bowl combine the vanilla syrup with the confectioner's sugar. Stir until smooth. Working quickly, dip the top of the cupcake into the icing, lightly shaking off additional icing, and allow to set.

CHOCOLATE-RASPBERRY CAKE
This beauty is baked with a splash of Chambord and layered with a sweet raspberry filling, both of which offer bright counterpoints to the thick layer of chocolate-cream cheese frosting and whole berries scattered on top. You won't be able to have just one slice.

- Cake: Preheat oven to 350 degrees. Lightly coat three 8-by-2-inch round cake pans with cooking spray. Line bottoms with parchment. In a large bowl, whisk together flour, cocoa, baking soda, and salt. In another large bowl, beat butter with sugar on high speed until light and fluffy, 3 minutes. Add eggs, one at a time, beating well after each addition. Beat in liqueur. Reduce speed to low and add flour mixture in three batches, alternating with buttermilk in two batches. Beat to combine, scraping down sides of bowl as needed. Beat in melted chocolate.
- Divide batter evenly among prepared pans, smoothing tops with an offset spatula. Bake, rotating pans halfway through front to back and top to bottom, until a tester inserted in centers comes out clean, about 25 minutes. Let cakes cool in pans on a wire rack 10 minutes. Run a small sharp knife around edges, then invert onto rack. Remove parchment and let cool completely, about 25 minutes. With a serrated knife, trim tops of cakes so they're level.
- Filling: While cakes are baking, stir together 3 cups raspberries, sugar, salt, and lemon juice in a medium saucepan. Cook over high, stirring frequently and mashing with the back of a spoon, until mixture comes to a boil, 2 minutes. Continue to cook, stirring, until mixture thickens and clings to spoon, 7 to 8 minutes more. (You should have 1 1/3 cups.) Let cool 30 minutes. Stir in 2 cups raspberries, reserving remainder.
- Spread half of filling over one cake. Top with second layer; spread remaining filling over top. Top with final layer, cut-side down. Refrigerate, covered, at least 1 hour and up to overnight. Spread frosting over top and sides of cake. Garnish with remaining raspberries.
CHOCOLATE ROULADE WITH MASCARPONE FILLING
We made this for Rosh Hashonah this year. It is a wonderful and very pretty chocolate roulade. This recipe is also wheat-free(uses potato flour), so it is suitable for coeliacs. Diana's Desserts, have had this since 2006 and I felt that, this, was the dessert for the High Holy Days. It was scrumptious and decadent!

- CAKE:.
- Preheat oven to 350º F/180ºC.
- Line a 15 x 10-inch jelly roll pan (swiss roll tin) with parchment paper.
- Using an electric mixer, whisk yolks and sugar until thick and pale.
- Sift cocoa and starch over then fold in gently.
- Add chocolate and 2 tablespoons water and stir gently to combine.
- Using an electric mixer, whisk egg whites in a clean bowl until soft peaks form, then fold into chocolate mixture.
- Spoon mixture into prepared pan and smooth top.
- Bake in preheated oven for 12-15 minutes or until cake springs back when lightly pressed.
- Dust top of cake heavily with cocoa then cover with a piece of parchment paper.
- Invert cake, with paper, on to a work surface, then gently peel away the parchment paper.
- Working quickly while cake is still hot, gently roll up from long side, using paper as a guide.
- Let cool completely before filling.
- MASCARPONE FILLING:.
- Combine marmalade, liqueur and 2 tablespoons water in a small saucepan and stir over low-medium heat until combined and marmalade has melted.
- Combine with mascarpone in a bowl and whisk until thick.
- Stir in pistachios.
- Gently unroll cake and spread with filling, leaving a half inch (2 cm) border.
- Re-roll cake (it may crack a little), then wrap in foil and refrigerate for 30 minutes or until filling is firm.
- Cake will keep, refrigerated, for up to 3 days.
- Serve topped with raspberries, edible flowers or mint sprigs.
- *The cream filling may be made without the marmalade and pistachio's. If desired, you may make a cream filling with just the mascarpone cheese and orange liqueur.
- **Tips:
- Grease the jelly roll pan before lining it. This will make the paper sit flat and adhere to the corners.
- To fold egg whites into a batter, always use a large metal spoon and a light hand to preserve the air. Start by stirring 1/4 of the egg whites into the batter to lighten it, then gently fold in remaining egg white.
- Potato flour (potato starch) is available at most supermarkets in the baking or flour section.
- For the best flavor, use a dark chocolate with at least 60 % cocoa solids.

CHOCOLATE RASPBERRY MASCARPONE CAKE

- 1. Preheat oven to 350 degrees. Grease and flour bundt cake pan and make cake mix according to directions on box. When done cool and slice cake horizontally, making a total of 4 pieces. This will give you 3 layers. Note: cake does not have to cut, but this would only give you 1 layer of cream in the center.
- 2. FOR CREAM: In large mixing bowl whip heavy cream until peaks form.
- 3. Add mascarpone cheese and white frosting, mix well but do not overbeat. Add red food coloring until you reach desired color.
- 4. Start layering cake by placing first piece of cake onto your serving platter; frost. Repeat layers. I protect bottom edges with torn pieces of wax paper that later will be removed. This will keep your plate clean while frosting.
- 5. Add raspberry flavor to chocolate frosting, mix well.
- 6. Frost sides of cake with chocolate frosting, sealing cut edges. Microwave any leftover frosting to drizzle over top of cake. (Add drops of milk to loosen, if needed.) Chill to set frosting. Remove wax paper. Before serving add raspberries to center of cake and around edge. Garnish with mint leaves.
