EASY OVEN FRIES



Easy Oven Fries image

Get your fry fix with only four teaspoons of oil. These make-at-home versions of the restaurant favorite are better (and better for you) than their fast food counterparts.

3 pounds russet potatoes (about 6 large), cut lengthwise into 1/4-inch-wide strips
Nonstick cooking spray
4 teaspoons vegetable oil
Coarse salt and ground pepper

Steps:

  • In a large bowl, cover potatoes with water by 2 inches. Refrigerate at least 3 hours (or up to overnight).
  • Preheat oven to 400 degrees, with racks in upper and lower thirds. Lightly coat 2 rimmed baking sheets with cooking spray. Drain potatoes and pat dry; wipe out bowl. Toss potatoes in bowl with oil and season with salt and pepper. Divide potatoes between sheets and arrange in a single layer. Bake until golden and crisp, 45 minutes. Toss potatoes and rotate sheets. Bake 15 minutes more.

2 medium russet potatoes (about 1 1/2 pounds), cut into matchsticks
3 tablespoons extra-virgin olive oil

6 or 7 Idaho potatoes, peeled and sliced into 1/3-inch-thick French fry-style strips, soaked in cold water
4 tablespoons (1/4 cup) extra-virgin olive oil
1 tablespoon dried Italian herbs or some combo of dried oregano, thyme, marjoram, and basil
2 cups freshly grated Romano cheese
1/4 cup parsley leaves, finely chopped
4 tablespoons (1/2 stick) salted butter, cut into 6 cubes
Coarse salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees.
  • Drain the potatoes and pat dry with paper towels. Spread 1 tablespoon of the olive oil on each of 2 rimmed baking sheets and spread out the potatoes. Overlapping is fine.
  • Sprinkle the dried herbs evenly over the potatoes. Liberally spread the cheese and parsley on top. Drizzle the remaining 2 tablespoons of olive oil over the cheese. Scatter the cubed butter around the pans.
  • Bake until the potatoes are golden brown, rotating the pans after 30 minutes, for 45 to 50 minutes total. Use a spatula to lift off the potatoes with all the crusty cheese adhered to them. Sprinkle with salt and pepper to taste. Serve hot.

4 potatoes, preferably Yukon Gold or russet
2 tablespoons olive oil
6 sprigs fresh thyme, or 2 teaspoons dried
Salt and freshly ground pepper

Steps:

  • Heat oven to 425 degrees. Cut potatoes lengthwise into thick slices, then into 1/2-inch-by-1/2-inch-thick strips. Place in a bowl of cold water until ready to use. Drain and dry well on paper towels.
  • Toss potatoes with oil and spread out on a dark roasting pan or baking sheet. Scatter thyme over potatoes. Bake for 35 to 40 minutes, turning occasionally, until potatoes are brown and crisp on all sides.
  • Remove from oven, discard thyme stems (the leaves will have fallen off), sprinkle with salt and pepper, and serve immediately.

2 1/2 pounds small Yukon gold potatoes
Coarse salt
3/4 pound thick-sliced bacon, cut into 1/2-inch pieces
1 small red bell pepper, cut into 1/2-inch dice
1 small yellow bell pepper, cut into 1/2-inch dice
1 red onion (about 10 ounces), cut into 1/2-inch dice
1 tablespoon fresh thyme leaves
2 tablespoons roughly chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Place potatoes in a medium saucepan. Cover with water; bring to a boil over high heat. Salt the water. Reduce heat to medium-high; cook until potatoes have softened but are still slightly firm, 12 to 15 minutes. Drain in a colander. When cool enough to handle, peel potatoes; cut into 1-inch pieces. Set aside.
  • Cook bacon in a large skillet set over medium heat until all fat has been rendered and bacon is crisp and brown, about 15 minutes. Remove bacon with a slotted spoon; set aside on a paper towel to drain. Pour off all but 2 tablespoons of the bacon fat. Add reserved potatoes; cook over medium heat, stirring occasionally, until golden on all sides, about 10 minutes. 2 tablespoons margarine or 2 tablespoons butter
1/2 teaspoon salt

  • Preheat oven to 400 F.
  • Melt margarine/butter over medium heat in a large heavy bottomed fry pan which has a heat resistant handle(I use cast iron)
  • When butter starts to sizzle add potatoes and let fry for 2 minutes.
