I just love this with some nice big prawns. It is one of those recipes that you can substitute any fruit you wish.

2 ripe avocados
1 lemon, juice of
1 lime, juice of
2 ripe tomatoes
2 nectarines or 2 peaches
4 cups lettuce greens, approx
2 kiwi fruits
2 tablespoons unsalted dry roasted peanuts
3 tablespoons grated ginger
1/4 cup chopped basil leaves
1/4 cup fresh lime juice
3 tablespoons Thai fish sauce
3 tablespoons brown sugar
3 tablespoons no flavour cooking oil
1 chili, finely sliced

Steps:

  • Pit, peel and slice the avocados, squeeze on a little lemon or lime.
  • Thinly slice the tomatoes.
  • Peel the mangoes and cut the flesh from the pits in large sections and slice thinly.
  • Peel and slice the kiwi fruit.
  • Place the peanuts in a food processor and chop finely.
  • Combine the dressing ingredients.
  • In a large bowl put in all ingredients, pour over dressing, toss well.
  • Place on serving platter or dinner plates.
  • Sprinkle with peanuts and serve immediately.

2 cups 1-in. papaya cubes (from 1 papaya)
2 cups 1-in. pineapple cubes (from 1 pineapple)
2 cups 1-in. mango cubes (from 1 to 2 mangoes)
2 kiwis, peeled and cut into half-moons
2 tablespoon granulated sugar
1 tablespoon fresh lime juice (from 1 lime)
Pinch of kosher salt
2 cups plain coconut milk yogurt, such as Cocojune
0.25 cup lightly toasted unsweetened flaked coconut

Steps:

  • Place papaya, pineapple, mango, and kiwis in a large bowl. Add sugar, lime juice, and salt; gently toss to combine. Let stand for 15 minutes at room temperature, or cover and refrigerate for up to 1 hour.
  • Spread yogurt in a thick layer on a platter. Mound fruit mixture on top of yogurt using a slotted spoon. Top with flaked coconut.

  • Thinly slice 1/2 small red onion and soak in ice water, 10 minutes. Whisk 1/4 cup olive oil with the juice of 1 lime and 1/2 orange in a large bowl. Add a 15-ounce can hearts of palm (drained and sliced), 1 sliced mango and 1 sliced jalapeno. Drain the onion; add to the salad along with 1 bunch trimmed watercress. Season with salt and toss.

3 tablespoons red wine vinegar
1 tablespoon fresh orange juice
3 small shallots, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 tablespoons extra virgin olive oil
1/2 cup pepitas (raw hulled green pumpkin seeds)
1 tablespoon soy sauce
3 small bunches baby arugula leaves, washed and dried
1 ripe papaya, halved
1 cup crumbled Cabrales cheese, or substitute Roquefort
Seeds of 1 pomegranate (see Note)

Steps:

  • In a small bowl, whisk together the vinegar, orange juice, shallot, salt and pepper. Drizzle in the olive oil, whisking constantly until emulsified.
  • In a dry, heavy skillet, toast the pepitas over medium heat for 3 to 5 minutes, or until slightly puffed and golden. Add the soy sauce and stir to mix, then immediately remove from the heat and turn the pepitas out onto a plate to cool.
  • Remove any tough stems from the arugula. Scoop out seeds from papaya, slice into eighths and pare off skin. Cut into julienne.
  • In a large serving bowl, combine the arugula, papaya, Cabrales, and pomegranate seeds. Drizzle on enough vinaigrette to coat and toss gently. Sprinkle on the toasted pepitas and serve immediately.
