Chocolate-covered raspberry jelly candies are sweet treats that are equally rich as they are delicate.

Bottom Layer:
6 ounces chocolate (special dark or semisweet, chopped)
2 tablespoons shortening (not butter or margarine)
2 ounces food-grade paraffin (Gulf wax)
Jelly Layer:
1 cup raspberry puree (canned or homemade)
2 cups water
5 packages raspberry-flavored gelatin mix (3 ounces each)
Coating:
12 ounces chocolate (special dark or semisweet, chopped)
3 tablespoons shortening (not butter nor margarine)
4 ounces paraffin (Gulf wax, chopped)

Steps:

  • Gather the ingredients.
  • Melt chocolate, shortening, and paraffin in a double boiler. Remove from heat and cool until just warm to the touch but still liquid.
  • Spread evenly into the bottom of the pan and chill to set while making the jelly layer.
  • Gather the ingredients.
  • Bring raspberry puree and water to a boil. Remove from heat.
  • Add the gelatin and stir until gelatin is completely incorporated; at least 3 minutes. Let cool to room temperature, stirring occasionally.
  • Pour over bottom chocolate layer and refrigerate, uncovered, at least 4 hours until set.
  • Line a large 15-inch cookie sheet with butcher paper, shiny side up. Remove the sheet of candy on the foil or plastic wrap to a flat surface and peel down the sides until flat.
  • Using a long, sharp knife, cut the candies into even squares and place each piece 1/2 inch apart on butcher paper.
  • Gather the ingredients.
  • Melt chocolate, shortening, and paraffin in the top of a double boiler until smooth. Remove from heat and let cool until just warm to the touch.
  • Spoon liquid chocolate over each square to cover each completely. Chill about 30 minutes to set chocolate.

3 cups raspberries, plus more for topping
1 cup sugar
6 teaspoons unflavored gelatin powder (about three 1/4-ounce packets)
Cooking spray
2/3 cup half-and-half
2 ounces semisweet chocolate, finely chopped
Whipped cream, for topping

Steps:

  • Puree the raspberries with 3/4 cup sugar and 1/3 cup water in a blender. Pour through a fine-mesh sieve into a bowl.
  • Bring half of the raspberry puree to a boil in a small saucepan over medium heat. Sprinkle 4 teaspoons gelatin over 1/2 cup cold water in a medium bowl; let stand 1 minute. Stir in the hot raspberry puree until the gelatin dissolves, then stir in the remaining raspberry puree.
  • Spray nine 5-ounce paper cups with cooking spray. Fill each cup about three-quarters full with the raspberry gelatin mixture. Refrigerate until the gelatin starts setting but the surface is still tacky, about 45 minutes.
  • Meanwhile, bring the half-and-half and the remaining 1/4 cup sugar to a boil in a small saucepan, stirring until the sugar dissolves. Add the chocolate, reduce the heat to low and cook, stirring, until smooth. Sprinkle the remaining 2 teaspoons gelatin over 1/2 cup cold water in a medium bowl; let stand 1 minute. Pour in the chocolate mixture and stir until the gelatin dissolves. Pour the chocolate gelatin mixture into the cups on top of the raspberry gelatin and refrigerate until fully set, about 3 hours.
  • Unmold the gelatin: Invert the cups onto plates and carefully tear off the paper. Top with whipped cream and raspberries.

Easy and delicious, these homemade raspberry jellies are the perfect pick-me-up snack.

½ cup (125 mL) raspberry purée (pureed and strained frozen raspberries work best)
⅓ cup (80 mL) unsweetened applesauce
⅔ cup (200 g) white corn syrup
1 ¼ cups (250 g) granulated sugar
1 pouch (80 mL) liquid pectin

Steps:

  • Lightly grease an 8-inch (2 L) square baking pan and line it with parchment paper.
  • In a medium saucepan, whisk the raspberry purée and applesauce and bring to a simmer over medium heat. Add the corn syrup and sugar and (increase the heat- is this needed you mentioned still on medium heat to) bring this up to a gentle but even simmer, whisking constantly. Keep simmering the liquid, stirring constantly until it reaches 225 ºF (107 ºC), 8-10 minutes. Remove the pan from the heat, pour in the pectin and whisk in. Return this to the heat to reach a simmer and then immediately pour this into the prepared pan. Let this cool, uncovered, until set, about an hour.
  • Turn the jellies out onto a cutting board and peel off the parchment paper and cut into 36 squares. Options for finishing the jellies include: a) Rolling in granulated sugar (for a gumdrop look); b) Roll in cornstarch (for a Turkish delight look); c) Dipping in chocolate - to prepare the chocolate for dipping, melt 7 oz (210 g) of the chocolate in a metal bowl placed over a pot of barely simmering water, stirring until it has melted and is within a temperature between 113-122 ºF (45-50 ºC). If the chocolate gets warmer than this, then you need to let it cool below 113 ºF (45 ºC) and re-warm. Remove the bowl from the heat and stir in 3 oz (90 g) of chocolate and stir to melt, continuing to stir until the chocolate reaches a temperature of 82 ºF (28 ºC). Return the bowl to the water bath and stir to warm up to between 88-90 ºF (31-32 ºC) - this doesn't take long. At this point the chocolate is ready for using and will set at room temperature with a nice satin finish (this process is called tempering.)
  • To dip the jellies, have a baking tray lined with parchment paper ready. Use truffle forks or other fine-tined forks to immerse each jelly into the chocolate, lift out and gently shake off excess and place on the baking tray to set. After the jellies are dipped, pop the tray into the fridge for just a minute to set the chocolate and then the jellies can be stored at room temperature in an airtight container.

6 tablespoons semi-sweet chocolate chips
3 tablespoons seedless raspberry jam

Steps:

  • Place the chocolate chips in a small microwavable bowl and microwave on high, stirring every 15 seconds, until the chocolate is melted and smooth, about 1 minute.
  • Spoon 3/4 teaspoon melted chocolate into one foil cup (1-inch wide by 3/4-inch high).
  • Use a small flat paint brush to spread the chocolate evenly over the bottom and sides.
  • Repeat with the remaining cups, place them on a plate and refrigerate for 3 minutes or until the chocolate is firm.
  • Spoon 3/4 teaspoon jam into each chocolate-lined cup.
  • Tap the bottom of each cup on the counter to settle jam.
  • Reheat the remaining melted chocolate in the microwave for 10 seconds on high.
  • Stir and repeat microwaving until the chocolate is completely smooth.
  • Spoon 1/2 teaspoon melted chocolate over the top of the jam in one cup.
  • Use the brush to spread the chocolate to the sides so that it seals in the jam.
  • Repeat with the remaining 11 cups.
  • Refrigerate 3 minutes or until the chocolate is firm, or allow the chocolate to firm up at room temperature, about 3 hours.

  • Place the chocolate in a glass bowl and microwave for 45 seconds, then stir. Continue to microwave in 15 second intervals, stirring in between each interval until the chocolate is completely melted. I also drizzled a little white chocolate on top just for fun. Enjoy!
