A southern recipe for a rich chocolate pie with pecans. Passed down from my Mother and Grandmother.

1 (9 inch) pastry for a 9 inch single crust pie
1 ½ cups white sugar
3 ½ tablespoons cocoa
½ cup butter, melted
1 (5 ounce) can evaporated milk
2 eggs, beaten
1 teaspoon vanilla extract
¾ cup chopped pecans

Steps:

  • Preheat oven to 400 degrees F (200 degrees C)
  • Mix together sugar, cocoa, and melted butter. Stir in evaporated milk, beaten eggs, vanilla, and chopped pecans.
  • Pour nut mixture into unbaked pie shell. Bake for 10 minutes. Reduce heat to 325 degrees F (165 degrees C) and bake for 30 minutes.

1/2 pkg refrigerated pie crust
1/2 c butter
2 oz unsweetened chocolate squares
5 oz can evaporated milk
2 large eggs
2 tsp vanilla extract, divided
1 1/2 c sugar
3 Tbsp unsweetened cocoa
2 Tbsp all-purpose flour
1/8 tsp salt
1 1/2 c pecan halves and pieces
2/3 c light brown sugar, firmly packed
1 Tbsp light corn syrup

Steps:

  • 1. Preheat oven to 350 degrees. Roll the piecrust into a 13-inch circle on a lightly floured surface. Fit into a 9-inch pie plate; fold edges under, and crimp.
  • 2. Microwave butter and chocolate squares in a large microwave-safe bowl at Medium (50% power) for 1 1/2 minutes or until melted and smooth, stirring at 30-second intervals. Whisk in the evaporated milk, eggs, and 1 tsp vanilla.
  • 3. Stir together the sugar and next three ingredients. Add the sugar mixture to the chocolate mixture, whisking until smooth. Pour the mixture into a prepared crust.
  • 4. Bake the pie at 350 degrees for 40 minutes. Stir together the pecans, next two ingredients, and the remaining 1 tsp vanilla; sprinkle over the pie.
  • 5. Bake an additional 10 minutes or until set. Remove from the oven to a wire rack and let cool. (about 1 hour).

1/2 cup (1 stick) unsalted butter
2 ounces unsweetened chocolate, chopped
1 cup sugar
2 large eggs
1 tablespoon bourbon
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup chopped pecans
1 purchased frozen 9-inch pie crust
Whipped cream

Steps:

  • Preheat oven to 325°F. Place baking sheet in oven. Stir butter and chocolate in heavy small saucepan over low heat until melted and smooth. Remove from heat; cool 10 minutes.
  • Whisk sugar and eggs in medium bowl to blend. Whisk in chocolate mixture, then bourbon, vanilla and salt. Stir in pecans (filling will be thick). Spoon filling into crust.
  • Place pie on baking sheet in oven. Bake until edges of filling puff and begin to crack and center is just set, about 30 minutes. Transfer pie to rack and cool completely. Serve with whipped cream.

3 eggs, slightly beaten
1 cup light corn syrup or 1 cup dark corn syrup
1 cup sugar
2 tablespoons margarine
4 (1 ounce) squares semisweet chocolate
1 teaspoon vanilla
1 1/2 cups pecan halves
1 unbaked 9-inch pie shell

Steps:

  • Preheat oven to 350 degrees.
  • Melt margarine with chocolate squares.
  • In a large bowl, stir together eggs, corn syrup, sugar, chocolate mixture, and vanilla until well blended. Stir in pecans. Pour into pie shell.
  • Bake for 50-55 minutes or until knife inserted halfway between center and edges comes out clean. Cool and serve.

1 sour cream pie crust, rolled out to fit 9 inch pie dish (in my recipes)
1 1/2 cups sugar
5 tablespoons dutch process cocoa
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/2 cup evaporated milk
3 eggs, room temperature
1/3 cup butter, melted and cooled
1 tablespoon vanilla extract
whipped cream

Steps:

  • Preheat oven to 350 degrees F.
  • Prick pie shell with fork.
  • Bake 10 minutes.
  • Set aside.
  • Decrease oven temperature to 330 degrees F.
  • Combine sugar, cocoa, flour and salt in large bowl and mix well.
  • Blend in milk.
  • Beat in eggs, one at a time.
  • Add butter and vanilla and beat until smooth.
  • Pour into crust.
  • Bake until filling is puffed and set, 55-60 minutes.
  • Let cool to room temperature before serving.

2 tablespoons butter
1 cup brown sugar
2 eggs, beaten
2 tablespoons flour
1 pinch salt
1 cup pure maple syrup
1 1/2 cups pecans, coarsely chopped
1 9 inch pie shell or 8 4 inch prepared tart shells

Steps:

  • In a mixing bowl, cream together the butter and sugar.
  • Add the eggs, flour salt and maple syrup.
  • Fold in the pecans.
  • Combine well then pour the mixture into the pie shell Bake at 400 for 5 minutes then reduce heat to 375F and bake for 30-40 minutes or until the mixture is firm and a skewer inserted in the center of the pie comes out clean.
  • Serve plain or with whipped cream flavored with vanilla.

1/3 cup shortening
3 tablespoons hot water
1 cup all-purpose flour
1/4 teaspoon salt
FILLING:
1/2 cup butter, softened
2 cups sugar
4-1/2 teaspoons all-purpose flour
1/2 teaspoon salt
3 large eggs
1/2 cup evaporated milk
1 tablespoon vanilla extract
1-1/2 cups finely chopped pecans
Whipped cream

Steps:

  • In a bowl, beat the shortening and water until combined. Add flour and salt; beat until crumbly. Shape into a b all. Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. trim pastry to 1/2 in. beyond edge of pie plate; flute edges. Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Remove to a wire rack; reduce heat to 350°., In another bowl, cream the butter, sugar, flour and salt. Add the eggs, milk and vanilla; beat well. Stir in the pecans. Pour into prepared crust. Bake at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack for 1 hour. Refrigerate for at least 1 hour. Serve with whipped cream.

2 (9 inch) unbaked pie crusts, in glass baking dishes
1 cup butter
6 ounces dark chocolate
3 cups sugar
2 tablespoons flour
6 eggs
2 teaspoons vanilla
12 ounces evaporated milk
whipped cream (optional)

Steps:

  • Preheat oven to 400 degrees.
  • Bake both pie crusts blind for 8 minutes. Remove from oven to rack. Decrease oven temperature to 375 degrees.
  • In large saucepan on low melt butter and chocolate, stirring occasionally. In medium bowl, combine sugar and flour with wire whisk. In another bowl, whisk together eggs, vanilla and evaporated milk. Add a couple of tablespoonfuls of the melted chocolate mixture to the egg mixture and stir.
  • Add both sugar and egg mixtures to pan of melted chocolate. Stir to combine. Increase heat to medium and stir constantly for 10 minutes.
  • Evenly divide filling between the 2 pie pans. Bake for 30 minutes.
  • Makes 2 Pies. (One to share and one to eat?)
  • Serve with whipped cream.
