- In a large bowl, mix together the turkey mince, onion, garlic, curry powder, coriander and egg yolk with a little salt and pepper. Combine well with your hands, then shape into 4 flat burger patties.
- Heat the oil in a frying pan over a high heat, then cook the burgers for 5 mins each side or until cooked through. Toast the cut sides of the burger buns. Place the salad on the bottom halves of the warm buns, then top with the burgers and chutney or lime pickle.

- Heat oven to 200C/180C fan/gas 6. Heat the oil in a small pan, add the onion, fry for a few mins until lightly browned and soft, then cool. Mix the turkey with the lemon zest, thyme, parsley, onion and seasoning until well combined.
- Shape the mixture into 4 burgers and wrap a rasher of bacon around each. Put in a roasting tin, bake for 20-25 mins, then pan-fry for a few mins on each side to crisp up the bacon. Serve in a bun with lettuce, sliced tomato, tomato sauce and vegetable chips (recipe below).

Love these. Very high in protein, low in fat. This was originally a hamburger recipe but I changed it a bit to work for turkey breast. The onions make these burgers awesome so be sure and include them. These arn't really for grilling more for baking because they don't hold together well. Does work alright if they are frozen first.

- Slice up onions and satuee them in butter until dark and carmalized.
- Set aside and allow to cool for 3 minutes.
- While onions are cooler remove turkey from wrapping and put in a large bowl.
- Add either 2 whole eggs or 4 egg whites. Add ranch powder. Add Pepper.
- Mix and then add in onions when cool and mix again.
- Will be gooey, cook on foil then freeze or freeze them raw and cook later.
- I cook these on foil at 425 in the oven until brown. Maybe 10 minutes or so max in a convection oven.

- Heat oven to 180C/160C fan/gas 4. Zap the sweet potato wedges in the microwave for about 6 mins on full power until just turning soft. Leave to rest for 30 secs.
- While the sweet potato is spinning in the microwave, mix the mince in a bowl with the onion, garlic, egg and apple. Get your hands stuck in and work the ingredients together with a good pinch of salt and pepper, the oregano and paprika. Shape the mixture into two burgers about 3cm thick. Place on a lined baking tray in the oven for 20-25 mins, turning half way through cooking, until cooked through.
- Heat the coconut oil in a large frying pan over a high heat. Add the sweet potato wedges and shallow-fry for about 3 mins each side until they are nicely browned all over and cooked through to the centre. (Alternatively, toss in the oil and roast in the oven for 15-20 mins.) Drain on kitchen paper, then season with a good pinch of salt.
- Serve the burgers with the sweet potato wedges and a portion of green veg either steamed, blanched or boiled.

- Season the meat with salt and pepper to taste. Weigh out 4 oz/125 gm of meat and shape into a pattie. Do this with the remaining meat. Place patties on a platter, cover with plastic wrap/cling film and set aside.
- Pour water into a large fry pan/skillet over medium high heat. Add stock cubes (use beef cubes for veal, chicken cubes for turkey), onions and mushrooms. Bring to a boil and then lower heat to simmer. Cook until onions are just about cooked. You may need to add more water as the veggies cook as you want to have about 2 cups worth of gravy at the end.
- Gently place the burgers in the pan with the veggies and poach for about 5-7 minutes on each side, pressing down with a spatula to flatten a bit. Cook until juices run clear. Remove the cooked burgers to a plate and keep warm. Return sauce to a boil and add more water if necessary.
- Put cold water into a small cup or bowl and stir in cornstarch with a fork or whisk. Slowly pour into the sauce in the pan and thicken.
- Place rice or noodles on plate, place two burgers on top, and pour gravy over burgers.

HEALTHY LOW-FAT BLACK BEAN VEGGIE BURGERS
This is the first veggie burger I have ever tried and I was very impressed. I am not vegetarian, But I really enjoyed these! I don't know how these compare up to other black bean burgers, but I know these are super cheap, healthy, and very yummy! I found this recipe somewhere on Google and changed it to my tastes. I don't think they will hold up enough to be just thrown on the BBQ because these are soft burgers, but if you refrigerate your leftovers they are nice and firm and work in the oven or BBQ the next day after they were fried. Don't be scared to lightly fry these because they are so low fat anyways, so you still aren't hurting yourself! Enjoy!

THAI INSPIRED TURKEY BURGERS (LOW FAT)
This is my latest concoction in my mission to bring healthier food to my household. Over the past few weeks I have been using Fridays to try out different versions of healthier burgers. Tonight we had these Thai inspired turkey burgers. They had a fresh taste and I think it is important to use the fresh versions of the ingredients rather than dried spices to get that taste. I had mine on a bun with some crisp lettuce and some fat free mayo and ketchup. I bet they would be really nice with some sweet chili sauce in place of the ketchup and mayo though. These could easily be made up and frozen raw to have ready when short of time. Cooking time includes chilling time.

- Put the lemongrass, garlic, ginger, green onions, cilantro, chili flakes and lime zest into a food processor or chopper along with the water and blitz them until they are finely chopped and combined.
- Add the mixture to the turkey and also put in the egg white.
- Mix the turkey and the other ingredients together by hand until they are well combined.
- Put into the fridge to chill for about 30 minutes for them to firm up a bit.
- Take out of the fridge and shape into four equal sized burger patties.
- Then either fry them off in a pan as you would normally do or do as I do and brush them very lightly with a bit of extra virgin olive oil and cook them on a Foreman type grill. It takes about 8 minutes or so for them to be fully cooked.
- Serve.

- For the burgers, divide the ground turkey meat into 4 portions. To make uniform burger patties , place a layer of plastic wrap on top of a large mayo or peanut butter lid. Lightly pack the ground turkey into the lid and then lift the plastic wrap up so the patty comes right out. Use your hands to form a thin and uniform patty and move it to a platter. Repeat with remaining ground turkey, making sure each patty is the same size. You can see exactly how I do this in the video below the recipe. Place the formed burger patties in the fridge for at least 15 minutes, or overnight.
- Meanwhile, to make the cloud bread pre heat oven to 300 degrees F. Make sure the cream cheese is at room temperature or it won’t melt into the batter. Carefully crack the eggs in a large bowl and separate the egg yolks and place them in another bowl. If any of the egg yolks breaks into the egg whites, you have to throw them out and start over, so be careful. Add the cream of tartar to the egg whites and use a whisk or hand mixer to beat the egg whites until they reach a stiff peak. If you are not sure what a stiff peak is, watch the video below. Use the same mixer to combine the egg yolks with the cream cheese and beat until smooth, it’s ok if there are little flecks of cream cheese that have not melted. Use a clean spatula and add half of the egg white mixture to the egg yolk. It is very important that you fold the mixture together, and NOT STIR, otherwise you will deflate all the bubbles. Once the first batch of egg whites is mostly incorporated and the rest and fold until combined.
- Place a layer of parchment paper on two sheet trays and use a ½ cup measuring cup to scoop the batter on to the parchment paper. Try to make the shape the size of a bun, and use a spoon to make it even. The batter will spread a little, so make sure not to make them too thin or wide. Grate a little bit of cheese and sprinkle a little of the oregano on the top of the buns. Bake in the oven for 27-30 minutes, or until deep golden brown in color. Remove from oven and place on a wire rack so they can cool, or lean them against a plate so they can cool.
- Pre-heat your grill to high for 10 minutes. Make the onions by combining the paprika, ancho, and cumin in a small bowl, mix well. Peel the onions and cut into ¼ inch thick rounds. Season the onion rounds with a pinch of salt and a generous pinch of spice rub on each side. Drizzle over 1 teaspoon of veggie oil and rub it on both sides of the onions, or you can spray some veggie oil on both sides if you have non-stick spray. Grill the onions for 7-8 minutes on each side, or until slightly charred and soft. Remove and set aside.
