Peanut Butter Chocolate Chip Bread is the perfect quick bread...moist, peanutty, and loaded with chocolate chips! It makes an indulgent breakfast or snack.

1 3/4 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup creamy peanut butter
1/2 cup packed brown sugar
1/4 cup vegetable oil
1 large egg
1 tsp vanilla paste or extract
3/4 cup half and half or buttermilk
1 1/3 cup semi sweet or dark chocolate chips, divided

Steps:

  • Preheat oven to 350F Lightly grease and line a 9x5 loaf pan with a sheet of parchment paper. This will allow you to lift it out easily after baking.
  • Sift the flour, baking powder, soda, and salt together and set aside.
  • Whisk or beat the peanut butter, sugar, oil, egg, and vanilla together in a mixing bowl. Make sure to beat well so it is all evenly combined.
  • Add the dry ingredients alternately to the bowl with the half and half, beginning and ending with the dry. Fold in one cup of the chocolate chips.
  • Spread the batter into your prepared pan and smooth out the top. The batter will seem a bit greasy at this point. Top the bread with the reserved 1/3 cup of chips and bake for 50-55 minutes, or until a toothpick inserted near the center comes out without wet batter on it. I like to tend the bread with foil after about 40 minutes so the top doesn't brown too much.
  • Let the bread cool in the pan for 5 minutes, then gently lift it out to a rack. Try to let the bread cool a bit more before slicing, but I can never wait very long...it's amazing warm.

2 cups semisweet chocolate chunks or chocolate chips
6 large eggs
2 cups milk
1 cup granulated sugar
1 cup creamy or crunchy peanut butter*
1 teaspoon vanilla extract
1/2 cup granulated sugar
1 tablespoon unsweetened cocoa powder
1/8 to 1/4 teaspoon salt, depending on your tastes
1/2 cup water
2 & 1/2 teaspoons cornstarch
2 tablespoons unsalted butter
1 tablespoon rum

Steps:

  • Grease a 9"x 13" baking pan. Place the cubed croissants in the pan. Sprinkle with chocolate chunks.
  • Whisk the eggs in a large bowl. Add the milk, sugar, peanut butter, and vanilla, and whisk until combined. Pour the mixture over the croissants. If necessary, press the croissants down into the egg mixture to coat. Refrigerate for at least an hour or overnight.
  • Remove the chilled bread pudding from the refrigerator and let sit at room temperature for about 30 minutes.
  • Preheat oven to 350°F.
  • Bake the bread pudding for 1 hour to 1 hour 10 minutes, or until a thin knife inserted into the center comes out clean. Serve warm.
  • Combine the sugar, cocoa powder, and salt in a small saucepan. Combine the water and cornstarch, and then whisk into the sugar mixture.
  • Bring the mixture to a boil over medium-high heat, whisking frequently. Allow to boil for 1-2 minutes, or until slightly thickened.
  • Remove from heat. Add the butter and rum, and stir until smooth.

Steps:

  • Butter an 11x7-inch baking dish. Heat oven to 350 F.
  • Put torn bread into a medium bowl.
  • In a bowl, whisk 3 cups of milk with the 4 eggs and vanilla; pour over the bread, stirring to blend.
  • In a saucepan, combine peanut butter, the remaining 1 cup milk, and sugars. Heat the mixture over medium heat until peanut butter is melted and the mixture is smooth.

8 slices whole wheat bread
1/2 cup smooth peanut butter
1/4 cup jam, any flavor
1/2 cup dried fruit, your choice (optional)

2 tablespoons sugar

Steps:

  • Preheat oven to 400ºF.
  • Lightly coat a 9x9" baking dish with cooking spray.
  • Using the bread, peanut butter and jam/jelly, make 4 sandwiches.
  • Cut each sandwich into quarters, then cut each quarter into 4 more pieces.

2 tablespoons pure vanilla extract
1 pinch salt
3 cups whole milk
2 cups heavy cream
1 cup sugar
1/2 cup hershey's dark chocolate cocoa, unsweetened
2 tablespoons instant espresso powder
1 tablespoon unsalted butter
6 ounces bittersweet chocolate, chopped into 1/2-inch pieces, divided
6 ounces semi-sweet chocolate chips, divided
2 loaves challah, cut into one-inch cubes
1 cup peanut butter chips
1/3 cup milk
1/4 cup heavy cream
1/4 teaspoon vanilla extract

Steps:

  • Butter a 10 x 14-inch deep baking dish with 1 tablespoon of the butter and set aside.
  • Whisk together the eggs, vanilla, salt, milk, and cream, sugar, cocoa and instant espresso powder in a large bowl until well combined. Add half the chopped chocolate and chips along with the bread and fold to blend thoroughly and bread is moist. Pour into the prepared baking dish. top with remaining chocolate bits.

1 large egg

Steps:

  • Bring 1 cup of the milk to a boil in a medium saucepan over medium heat.
  • Meanwhile, combine the sugar, cornstarch and salt in a medium bowl. Whisk in the remaining 1 cup milk a little at a time, to avoid lumps, then whisk in the egg.
