CHOCOLATE PEANUT BUTTER BARS (5 INGREDIENTS!)
These Chocolate Peanut Butter Bars are a quick & easy dessert, made with just 5 ingredients.

- Line a 9-inch x 5-inch loaf pan with parchment paper and set it aside. (Tip: Spray the pan lightly with oil to help the parchment paper stay in place.)
- In a medium bowl, stir together all of the chocolate crust ingredients until the dough sticks together. Press the dough evenly into the bottom of the lined loaf pan, and place it in the freezer to set.
- To prepare the filling, stir together the peanut butter, maple syrup, coconut oil, and salt. Remove the crust from the freezer, and add the peanut butter filling on top. Smooth with a spatula, then return the pan to the fridge.
- To make the chocolate topping, combine the cocoa powder, melted coconut oil, and maple syrup, whisking well to break up any clumps. (Make sure the maple syrup is at room temperature, so the topping doesn't thicken up.) Once the mixture has become a smooth chocolate sauce, pour it over the peanut butter layer, smooth the top with a spatula, and return the pan to the freezer to set until firm, about 1 hour.
- To serve, remove the pan from the freezer and grab the edges of parchment paper to easily lift the solid bar from the pan. Use a sharp knife to slice the bars into small pieces. (I usually get about 20-22 pieces.)
- These bars will melt if they sit at room temperature for too long, so be sure to serve them chilled. I like to transfer them to the fridge, so they aren't too hard to bite into. (They also have more flavor when served from the fridge, instead of the freezer.) You can store these in an airtight container for up to 2 weeks in the fridge, or up to 3 months in the freezer.

- Butter and line a 8" / 20cm square dish or pan with baking paper.
- Place the Base ingredients in a bowl and mix until combined. Press into the prepared pan.
- Melt the Topping ingredients (I do it in the microwave in 2 x 30 second bursts). Pour and spread over the Base - smooth the top or do swirls (see photos for examples of each).
- Refrigerate until set - about 1 1/2 hours. Remove from fridge, allow to come to room temp slightly (so top cuts neatly). Cut into 16 squares (or whatever shape you want!). Best served at room temperature.

- Spray a 9 x 13 pan with cooking spray. Set aside.Add butter, powdered sugar, 1 cup peanut butter and graham cracker in a large bowl. Mix to combine.
- Layer into the prepared pan.
- Add the 1/2 cup of peanut butter and chocolate chips to a small bowl. Microwave in 15 second intervals until fully melted.
- Pour onto of the peanut butter layer and smooth with a rubber spatula.
- Place in the refrigerator to firm up for an hour.
- To serve, cut into squares and enjoy!

We all loved this one! It has the texture of a brownie, but the taste of a peanut butter chocolate chip cookie. My kids both helped me make it and eat it!

- Preheat oven to 350 degrees. In a large mixer bowl, beat the peanut butter and butter until smooth, about 1 minute. Add the sugar, eggs and vanilla, and beat until creamy. Blend in the flour and salt. Stir in 1 cup of the chocolate chips and spread into an ungreased 13x9 inch baking pan. Bake for about 25-30 minutes, or until edges begin to brown.
- Immediately sprinkle the remaining morsels over the cookie layer. Either let sit 5 minutes, or put back in the oven for 1 minute, until the morsels become shiny and soft. Spread the rest of the chocolate chips evenly over the top. Cool completely and serve. Enjoy!

- Sift the confectioners sugar into a mixing bowl. Add melted buter and peanut butter.
- Mix on medium speed of electric mixer until well mixed.
- Add graham cracker crumbs to the peanut butter mixture. Use your hands to squish it together until the crumbs are well mixed.
- Dump the mixture into the pan. Use your hands to spread it around. Press very hard to make it one big flat piece.
- Melt chocolate chips in saucepan over very low heat. Stir until creamy and completely melted.
- Pour the melted chocolate over the peanut butter layer. Use the spoon to spread it evenly like frosting.
- Wait until the chocolate hardens (putting it in the refrigerator makes it faster) and cut it into tiny squares.
