Steps:
- Place ingredients in a small saucepan and stir well.
- Cook over medium heat, stirring to dissolve sugar, and pressing berries against the side of pan to crush slightly, until berries get slightly soft and mixture gets syrupy, 10-12 minutes.
- Can serve warm or cool.

- In a large bowl, mix together yolks and sugar, while still whisking, add milk
- Carefully fold in whipped egg whites.
- NOTE: It's better to use a spoon rather than a whisk.
- Add and mix the melted butter and the vanilla.
- In another large bowl, mix the sieved flour, cocoa powder, and the baking powder.
- Form a little well in the middle and pour the milk and eggs mixture. Stir until the batter is smooth.
- Mix in the chopped chocolate. Let the batter sit for 15-20 minutes.
- To make the ganache, in a small saucepan, heat the heavy cream, without letting it boil.
- Take off the heat, mix with the chocolate chips until perfectly smooth.
- Over low to medium heat, pour ¼ cup (60 ml) of pancake batter on a well-oiled pan.
- When bubbles start to form on the surface of the pancake, flip and cook it for a minute on the other side.
- When the pancakes are ready, pour the chocolate ganache on top.
- NOTE: If the ganache has hardened while you were making the pancakes, you can microwave it for 15-20 seconds.
- Garnish with raspberries.

- 1. Syrup: Combine the raspberries, blueberries, sugar, and water in a small saucepan. Bring this mixture to a boil stirring constantly for 5 minutes, scraping the bottom as needed to keep from burning. Then reduce the heat to low and simmer the mixture until thick. This takes about 10 minutes. Serve warm over pancakes or waffles.
- 2. Chocolate Pancakes: In a small bowl combine milk, egg, and butter. Mix until blended. In another bowl, combine flour, cocoa powder, sugar, baking soda and salt. Mix together well. Add milk mixture to flour mixture and stir just until dry ingredients are moistened. Batter should still be lumpy. Then fold in the chocolate chips if you choose to use them. For each pancake, pour a 1/4 cup batter onto a hot, greased skillet. Cook 1-2 minutes or until batter is set around edges. Carefully turn over pancake. Continue to cook for 1 to 2 minutes or until pancakes are cooked through. Repeat with remaining batter.
- 3. To serve pour warm syrup over pancakes and top with whipped cream or topping.
RASPBERRY PANCAKE SYRUP
Homemade Raspberry Pancake Syrup made from fresh or frozen raspberries is a decadent breakfast treat and is excellent on chocolate chip pancakes.

- Combine berries and half of the water in a medium sized pot. Bring to a boil over high heat and then reduce heat to medium and cook for 15-20 minutes. Add remaining water, bring to a boil for a couple of minutes, then remove from heat. Strain mixture thru a fine mesh strainer into a clean bowl using a rubber spatula to press as much pulp through the strainer as possible; discard solids. This left me with 3/4 cup dark red raspberry juice.
- Rinse out any pulp or seeds that may remain in pot and then add hot strained raspberry juice back in. Add sugar and bring to a boil over medium heat. Reduce heat to low and cook for 5-10 minutes, until slightly thickened. Remove from heat. Stir in vanilla.
- Allow syrup to cool from hot to warm, then serve over pancakes. Syrup will thicken as it cools.
- Will keep for a week or two if stored in an airtight container in the refrigerator.
RASPBERRY, BLUEBERRY, AND CHOCOLATE CHIP PALEO PANCAKES (GF)

- In a medium bowl, mash up the banana (this resulted in about 1/3 cup of mashed banana for me), then add 10 raspberries to the bowl and mash them into the mashed banana. Add two eggs, 2 Tbs coconut milk, 1 tsp of honey and 1 tsp of lemon juice to the bowl and mix everything together well with a fork or a hand-held mixer.
- In a second bowl, mix together the 1/4 tsp baking soda, 1/2 cup almond flour, and 1 Tbs +1.5 tsp of coconut flour.
- Pour the dry flour mixture into the wet mixture and mix with a fork until everything is blended. Fold in the blueberries and chocolate chips.
- Heat 1 tsp of olive oil in a large frying pan over medium heat and evenly spread it out using a paper towel. Add 1 Tbs of the batter to the pan per pancake...(you'll probably have to cook these in batches, as this recipe makes 12 small pancakes). I cooked about 3-4 at a time, added a bit more oil to the pan, and then immediately made 3-4 more until all my batter was gone.
- Cook for about 1-2 minutes per side, until golden brown and you can easily flip them over (depending on your stove top or your pan, these may cook more or less quickly, so just keep an eye on them).
- This recipe makes 12 small pancakes, which is perfect for 2 people.
- Top with maple syrup and enjoy!
ALMOND PANCAKES WITH RASPBERRY SYRUP

- Preheat the oven to 200 degrees F. Bring the raspberries and maple syrup to a boil in a small saucepan over medium heat. Reduce the heat to a simmer and cook until the berries soften and the syrup takes on a pinkish color, 7 to 8 minutes. Remove from the heat and mash the berries with a potato masher or fork. Strain the syrup. Keep warm or set aside to cool to room temperature.
- Whisk the flour, sugar, baking powder and salt together in a large bowl. Whisk the milk, eggs, vanilla and almond extracts together in a medium bowl until combined. Whisk in the melted butter. Add the milk mixture to the flour mixture and stir until it just comes together in a thick lumpy batter.
- Heat a large nonstick skillet over medium heat and brush lightly with butter. Drop 2 tablespoons batter for each pancake into the skillet. Cook until bubbles appear on the tops of the pancakes, and the undersides are golden brown, 2 to 3 minutes. Flip the pancakes and continue to cook until golden on the underside and cooked through in the center, about 1 minute more.
- Transfer to the oven to keep warm and continue to make pancakes until all the batter is used. Serve topped with the raspberry syrup and chopped almonds.

- In a small bowl, whisk milk, evaporated milk, egg whites and egg. In another bowl, mix flour, 1/4 cup sugar, cocoa and salt; add to milk mixture and mix well.
