This beautiful, tender, citrus-scented loaf cake filled with bits of candied orange peel is everything you want with your afternoon tea. The key is finding the right marmalade; it needs to be the thick-cut (also known as coarse-cut) marmalade made with bitter oranges, which will be laden with big pieces of peel. Look for the British brands in the international section of your supermarket if the jam aisle lets you down. (And not give up and use the neon orange marmalade that's more like jelly.) Your reward is a fine-grained, not-too-sweet cake that will last for days well-wrapped and stored at room temperature (if you can manage not to eat it up all at once).

215 grams coarse-cut orange marmalade (2/3 cup), divided
12 tablespoons unsalted butter, softened, plus 1/2 tablespoon for glaze, and more for greasing pan
150 grams granulated sugar (3/4 cup)
2 teaspoons grated lime zest
1/2 teaspoon grated orange zest
3 large eggs, at room temperature
2 tablespoons fresh orange juice
190 grams all-purpose flour (1 1/2 cups)
7 grams baking powder (1 1/2 teaspoons)
3 grams fine sea salt (3/4 teaspoon)
30 grams confectioners' sugar (4 tablespoons)

Steps:

  • Heat oven to 350 degrees. Coarsely chop any extra-large chunks of peel in the marmalade. Grease a 9-by-5-inch loaf pan.
  • In the bowl of an electric mixer, beat together softened butter, sugar, lime zest and orange zest until light and fluffy, about 5 minutes. Beat in eggs, one at a time, until incorporated. Beat in 1/3 cup marmalade and the orange juice.
  • In a separate bowl, whisk together flour, baking powder and salt. Fold dry ingredients into wet until just combined.
  • Scrape batter into prepared pan. Bake until surface of cake is golden brown and a toothpick inserted in the center emerges clean, 50 to 55 minutes. Remove from oven and transfer pan to a wire rack. Cool 10 minutes; turn cake out of pan and place on rack right-side up. Place a rimmed baking sheet under rack to catch the glaze.
  • Heat remaining 1/3 cup marmalade in a small pot over low heat until melted; whisk in confectioners' sugar and 1/2 tablespoon butter until smooth. Slather warm glaze over top of cake, allowing some to drizzle down the sides. Cool completely before slicing.

1 3/4 cups of strong coffee
1/4 cup bourbon whisky (if skipping the whisky, just use more coffee)
3/4 teaspoon of salt (if using salted butter, reduce to 1/8 teaspoon of salt)
2 cups all purpose flour
1 teaspoon baking soda
2 eggs
1 1/2 cups sugar
1 teaspoon vanilla extract
3 Tbsp cocoa for dusting the bundt pan
1 Tbsp powdered sugar for dusting the cake (optional)

Steps:

  • Sprinkle with powdered sugar: Transfer cake to a serving platter. Sprinkle with powdered sugar, if using. Slice with a serrated bread knife to serve. Serve with whipped cream or ice cream.

225g very soft butter, plus extra for greasing
225g caster sugar
225g self-raising flour
4 large eggs, beaten
2 tbsp milk
3 tbsp cocoa powder, sifted
1 large orange, zest and 1 tbsp orange juice
a few drops orange food colouring (optional)
50g orange chocolate (we used Green & Black's Maya Gold), broken into pieces

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Grease and line the base of a loaf tin (8 x 21cm/ 2lb) with baking parchment. Beat the butter, sugar, eggs and flour together in a large bowl with an electric whisk or in a food processor until lump free.
  • Split the mixture into two bowls, beat the milk, followed by the cocoa powder into one. Beat the orange juice, zest and orange food colouring, if using, into the other.
  • Spoon alternate dollops of the mixture into the cake tin, then use a skewer to create a marble pattern by dragging it through the mixture in swirls. Make sure you don't overmix or you won't see the pattern. Smooth the surface if necessary.
  • Bake the cake for 45 - 55 mins until golden and risen, and a skewer poked in comes out clean.
  • Leave the cake in the tin to cool, then turn out. Melt the chocolate in a bowl over barely simmering water or gently in the microwave. Use a spoon to drizzle the chocolate over the cake.

55 g light brown sugar
1 large orange, zest of, grated
225 g chocolate, chopped
2 tablespoons coarse cut orange marmalade
170 g self raising flour

Steps:

  • Preheat the oven to 180C/350F/gas mark 4.
  • Line two baking sheets with baking paper.
  • Cream the butter and sugar together until light and fluffy.
  • Add the orange zest.
  • Melt 140 g of the chocolate. Do not allow it to overheat. (over boiling water or CAREFULLY in the microwave oven.).
  • Add the melted chocolate to the creamed butter and sugar. Stir in the marmalade and the remaining chopped chocolate.
  • Fold in the flour and mix.
  • Divide into balls, arrange 5cm apart on baking sheet. Press lightly into flattish rounds.
  • Bake for 10 - 12 minutes or until dry and smooth to touch. Cool on a wire rack.

Just found this recipe on the internet and have not made it yet, but it sure looks different and interesting. Bread is glazed with additional orange marmalade after baking.

2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups orange marmalade, divided
1 egg
3/4 cup orange juice
1/4 cup oil
1 cup pecans, chopped

Steps:

  • Preheat oven to 350°.
  • In a large bowl, combine flour, baking powder, salt and baking soda.
  • In a separate bowl, mix together 1 1/4 cups of marmalade, egg, oil and orange juice.
  • Add wet ingredients to flour mixture and mix well.
  • Stir in the nuts.
  • Pour into a greased loaf pan and bake at 350° for 50 to 60 minutes.
  • When done, cool briefly, then remove bread from the pan and place on a baking dish.
  • Glaze with the 1/4 cup of reserved marmalade and return to the oven for 1 minute.
  • Place on a rack and cool completely.
  • Bread will slice easier if chilled first.

2 tablespoons golden syrup (such as Lytle's) or 2 tablespoons dark corn syrup
1 cup dark brown sugar, packed
1 cup all-purpose flour
1/2 teaspoon baking soda
3 tablespoons unsweetened cocoa powder, sifted
2 eggs
2 small oranges, zest of (1 tablespoon)
1 small orange, juice of (3 tablespoons)

Steps:

  • Preheat oven to 325°.
  • Line a 9x5x3-inch loaf pan with parchment paper.
  • Grease sides of pan.
  • In a large bowl, with electric mixer, beat the butter, syrup and sugar until smooth.
  • In a separate bowl, combine flour, baking soda and cocoa powder.
  • Beat 1 tablespoon of the dry ingredients into the syrup mixture.
  • Beat in 1 egg.
  • Add another couple of spoonfuls of dry ingredients.
  • Beat in the second egg.
  • Beat in remaining dry ingredients, and then add, while still beating, the orange zest.
  • Gradually add the orange juice. (The batter may look slightly curdled.).
  • Pour batter into the prepared pan.
  • Bake for 45 minutes (edges should look dry and center of cake may have dipped slightly).
  • Cool in pan on wire rack.
  • Carefully remove from pan and cool completely.
