EASY 3-INGREDIENT CHOCOLATE ORANGE FUDGE
Steps:
- Break chocolate pieces into a large microwaveable bowl and microwave in 30 second increments at 50% power until completely melted and smooth.
- Stir in the sweetened condensed milk and orange extract (and orange zest, if you wish) until everything is combined and microwave on 50% power for another 45 seconds to 1 minute (stopping after 30 seconds to stir).
- Line an 8-inch x 8-inch square baking pan with parchment paper and pour the fudge mixture into the lined pan, smoothing out the top.
- Chill the fudge in the refrigerator for one to 4 hours, or until completely set.
- Slice into small squares, garnish with some additional orange zest or orange slices (I like to dip my orange slices in sugar before garnishing!) and serve.

- Put the condensed milk and 2 and a half of the chocolate oranges [about 400g] (reserve half of one to decorate), broken into pieces into a large glass bowl.
- Microwave for 30 seconds.
- Beat the mixture very well.
- Microwave and beat again, repeat once more until the mixture is very smooth and thick.
- Pour into a small tin lined with baking paper.
- Add the remaining chocolate orange pieces and sprinkles if using.

- Line a tin with parchment paper - I would use a 7x10″ brownie tin as it makes a nice depth of fudge!
- Put the Condensed Milk and Terry's Chocolate Orange pieces into a deep heavy based pan and melt on a low heat, stiring often so that the chocolate doesn't catch on the bottom and burn and so that all the ingredients mix together well.
- Alternatively, melt the Chocolate in the microwave in short bursts, then beat in the Condensed Milk with a spatula till smooth and combined.
- Once melted, tip in the sifted icing sugar and combine well, it make take a bit of beating. Pour into the tin and smooth over the mixture - store in the fridge for an hour or so.
- Melt the White Chocolate and mix with the Orange Food Colouring to get some orange chocolate... drizzle over the fudge, and sprinkle on some Orange Sprinkles, and any spare bits of Terry's Chocolate Orange!
- Leave the fudge to set for at least 3-4 hours, or overnight! Once set - remove from the tin and cut into the squares (I cut mine 6×6) , return to the fridge for another couple of hours to finish setting - ENJOY!

- Heat oven to 180C/fan 160C/gas 4. Butter and line a traybake tin, 23 x 23cm or thereabouts. Put the chocolate, sugar and butter in a pan, then heat very gently for about 5 mins, stirring every min until the butter and chocolate have melted. Leave to cool for 10 mins. Beat in the egg yolks, flour, vanilla and half the orange zest.
- Put the egg whites into a large, very clean bowl, then whisk until they stand up in peaks. Stir ¼ of the whites into the chocolate mix to loosen it, then carefully fold in the rest with a metal spoon. Pour the mix into the tin, then bake for 25 mins or until evenly risen and just firm to the touch. Cool in the tin, then cut into squares. Can be frozen for up to 1 month.
- Beat together the cheese, vanilla, sugar and remaining zest until smooth. Spread over each chocolate square and serve. If you're making ahead, spread the topping over just before serving.

ORANGE WHITE CHOCOLATE FUDGE
I found this recipe through Pinterest. This fudge tastes very similar to a frozen orange creamsicle! I know the instructions look insane, but it is actually quick and easy to make and does not require a candy thermometer. It is great for gift giving, and one of my new favorites!

- Prepare an 8x8 pan by lining it with foil and spraying the foil with a light coating of nonstick spray.
- Slice the butter into small slices (so it melts faster), and put the chips, milk, and butter in the top of a double boiler, and set it to medium heat.
- If you don't have a double boiler, you can put a small amount of water in a pot, and place a bowl (I use a glass bowl) on top of the pot (but don't let the water touch the bottom of the bowl as the water boils).
- Slowly let the mixture melt and combine, stirring occasionally. It takes a little time and a little patience, especially if you REALLY love fudge!
- Once all the chips are melted, pour ONLY HALF of the mixture into the prepared pan.
- Working fairly quickly, so the bottom half that you just poured out doesn't set, go ahead and add the extract and food coloring to the remaining fudge mixture that is left in the double boiler.
- Stir well to make sure food colorings and extract are combined, and pour on top of white mixture in prepared pan.
- Shake the pan a little if you need to, to make sure the fudge is all the way to the edges, then take a knife and slowly swirl it through the fudge to make -- you guessed it - a swirly design! (Do this slowly, if you go too fast, you'll get air bubbles in your fudge.).
- Let set on the counter, if the kitchen is cool enough, and transfer to fridge to fully harden. Because of the butter content, it will become quite soft at room temperature. To lessen this, the amount of butter can be reduced (or even eliminated, I'm told, though I've never eliminated it myself).

- Preheat the oven to 350 degrees F. Fill the kettle with at least 2 cups of water and turn it on now so your water is boiled when you need it. Butter an 8 X 11 casserole style, oven safe dish.
- Directly in the casserole dish, stir together flour, sugar, cocoa powder, baking powder, espresso powder, salt and stir together thoroughly.
- Pour 2 tbsp of melted butter and milk over the dry ingredients and stir well. This will make a thick, paste-like batter.
- In a separate small bowl or pyrex measuring cup, mix together the brown sugar, cocoa powder, orange zest, orange juice and boiling water. Stir until all the sugar dissolves. Pour this hot mixture over the dough in the casserole dish. Do not stir at all!
- Place the dish immediately in the oven and bake for 25-30 minutes. Sprinkle on some icing sugar for a pretty finish.
- Serve immediately with a dollop of whipped cream sweetened with maple syrup or vanilla ice cream. Enjoy!
