2 cups vanilla wafer crumbs (about 60 wafers)
6 tablespoons butter, melted
1/4 cup sugar
FILLING:
4 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 cup sour cream
4 large eggs
10 ounces white baking chocolate, melted
TOPPING:
1 cup sour cream
3 tablespoons sugar
1/2 to 1 teaspoon orange extract
2 cans (11 ounces each) mandarin oranges, well drained

Steps:

  • Combine the first three ingredients; press onto the bottom and 1-1/2 in up the sides of a greased 10-in. springform pan. Bake at 350° for 10 minutes; cool completely. , In a large bowl, beat the cream cheese, sugar and sour cream until smooth. Add eggs; beat on low speed just until combined. Stir in chocolate. Pour into crust. Place pan on a baking sheet , Bake at 350° for 1 to 1-1/4 hours or until center is nearly set. Cool to room temperature, about 2 hours. , Combine the sour cream, sugar and extract; spread over filling. Bake at 450° for 5-7 minutes or until set. Chill, uncovered, 1 hour. Arrange oranges on cheesecake. Cover and refrigerate at least 4 hours. Refrigerate leftovers.

This moist, darkly bittersweet snacking cake is easily mixed with a whisk. Using a neutral oil rather than butter allows the chocolate flavor to shine, and gives the crumb an especially velvety texture under a sweet-tart glaze. You can use any kind of orange for the topping. Tangerines and mandarins (including clementines) are bright and spicy, but regular navel or juice oranges work just as well. Or if you can find blood oranges, the glaze will take on a pinkish hue and a sweeter, richer flavor.

3/4 cup/95 grams all-purpose flour

Steps:

  • Heat oven to 350 degrees. Grease a 9-by-9-inch pan and line with parchment paper, letting the two long edges hang over the sides by at least 2 inches.
  • In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder and salt.
  • In a heatproof bowl, melt chocolate in the microwave in 30-second intervals, stirring in between. Or you can melt the chocolate in a double boiler over simmering water on the stove, stirring well. Whisk in hot coffee.
  • Whisk together flour mixture, coffee-chocolate mixture, brown sugar, sour cream, oil, eggs and vanilla. Scrape into baking pan and smooth the top. Bake until the top is springy and a toothpick inserted in the center comes out clean, about 35 minutes. Let cool completely before glazing.
  • When cake is cool, make the glaze: Whisk together tangerine zest, tangerine juice and lemon juice, then whisk in confectioners' sugar. Taste, and if it's too sweet, add another drop or two of lemon juice. Pour glaze onto cooled cake, and spread to the edges. Let glaze set for at least 30 minutes before serving.

1 ½ cups graham cracker crumbs
¼ cup white sugar
⅓ cup butter, melted

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together the graham cracker crumbs, sugar and butter until well blended. Press into the bottom and 1 1/2 inches up the side of a 9 inch springform pan.

  • Bake for 60 minutes in the preheated oven, or until the center is almost set. Run a spatula or thin knife around the edge of the pan while it is still warm, so the cake will not crack. Allow cake to cool completely before removing the sides of the pan. Refrigerate for at least 4 hours before serving.

I got this recipe from my Dad, who got it off a recipe card. Not satisfied with the orange flavor of the original recipe, I tweaked a few ingredients to make it more intense. You can use your own graham cracker crust recipe if you prefer; we like the store-bought Oreo (dark chocolate) crust.

9 inches Oreo cookie pie crusts (I use Keebler brand)
2 (8 ounce) packages light cream cheese, at room temperature
2/3 cup sugar
2 whole eggs
1 egg yolk
1/4 cup orange juice concentrate, thawed & undiluted
2 medium whole navel oranges
1 tablespoon flour
1/2 teaspoon pure vanilla extract
1/4 teaspoon pure orange extract
chocolate curls (optional)

Steps:

  • Using a microplane grater or the smallest holes on a box grater, zest one entire orange onto a plate or into a bowl; set aside, and refrigerate zested orange for a later use.
  • In a large mixing bowl, beat cream cheese until smooth, making sure there are no lumps; add sugar and mix well.
  • Add eggs and egg yolk; then add orange juice concentrate, orange zest, flour, vanilla extract& orange extract and mix until thoroughly combined, scraping down sides& bottom of bowl frequently to make sure all of the cream cheese is incorporated.
  • Preheat oven to 350°F.
  • Place prepared pie crust in center of a cookie sheet (preferably without sides).
  • Brush crust with some of the orange juice concentrate.
  • Pour cream cheese mixture into prepared crust and bake 45-50 minutes or until center is almost set but still wiggles slightly when shaken gently (cheesecake will continue to cook after removing from oven).
  • Remove cheesecake from oven, and let cool thoroughly on a wire rack (without the cookie sheet).
  • When cooled to room temperature, refrigerate cheesecake for several hours.
  • While cheesecake is chilling, remove some of the rind from the second orange with a vegetable peeler or citrus zester, being careful to only remove the orange part (the white pith is bitter).
  • If using a vegetable peeler, cut the pieces of rind into very thin julienne strips; set aside.
  • Make chocolate curls by scraping a large chocolate bar with a heavy knife, holding knife at a 90-degree angle to bar.
  • When ready to serve, place a mound of the chocolate curls in center of cheesecake; sprinkle with julienned strips of orange.
  • Refrigerate any leftovers.

I love the combination of chocolate and orange and they unite wonderfully in this recipe. We usually make this for Christmas but it would be good anytime of the year. If you cannot find orange and tangerine marmalade, substitute orange marmalade. I like to drizzle chocolate ganache over the marmalade glaze which creates a beautiful presentation. 30 chocolate wafers, ground fine in a food processor (1 3/4 cups)
1/4 cup unsalted butter, melted
1 1/2 lbs cream cheese, softened
1 1/4 cups sugar
1 cup sour cream, at room temperature
2 tablespoons freshly grated orange zest (from about 4 navel oranges)
1/4 cup fresh orange juice
2 tablespoons fresh orange juice
2 tablespoons Grand Marnier or 2 tablespoons other orange-flavored liqueur
1/2 teaspoon salt
1/4 cup all-purpose flour
4 large whole eggs
1 large egg yolk
3/4 cup orange and tangerine marmalade (about 7 1/2 ounces)

Steps:

  • Crust:.
  • In a small bowl stir together wafer crumbs and butter until combined well. Pat crumb mixture onto bottom and 1 inch up side of a 9-inch springform pan and chill crust 30 minutes.
  • Filling:.
  • Preheat oven to 300°F
  • In a bowl with an electric mixer beat cream cheese until light and fluffy. Beat in sugar gradually until mixture is combined well. Beat in sour cream, zest, orange juice, liqueur, salt, and flour. Beat in whole eggs and yolk, 1 at a time, beating well after each addition.
  • Wrap bottom and side of springform pan with three 14- by 12-inch pieces of foil, 1 at a time, arranging each piece in a different position to make sure foil is at least 1 1/2 inches up side all around. Put pan in a large baking dish and pour filling into crust. Put dish in middle of oven and with a measuring cup slowly add enough water to it to reach 1/4 inch up side of springform pan, being careful not to let any water inside foil. (Cooling in water bath prevents cheesecake surface from cracking.)
  • Bake cheesecake 1 hour 15 minutes, or until edges are just set but middle still trembles slightly. Turn off oven and let cheesecake stand 1 hour (cheesecake will continue to set as it stands). Remove dish from oven carefully and transfer cheesecake in pan to a rack to cool completely. Remove foil and chill cheesecake, covered loosely, 6 hours or overnight.
  • Glaze:.
  • In a small saucepan melt marmalade over moderate heat, stirring, and cool to warm.
  • Remove side of springform pan and spread marmalade evenly on top of cheesecake. Chill cheesecake 2 hours (glaze will soften if served at room temperature).

1½ cups graham cracker crumbs
1/2 cup brown sugar
5 Tbsp butter (melted)
1 tsp vanilla
Cheesecake:
3 8- oz cream cheese packs
2/3 cup of white granulated sugar
¾ cup of heavy cream
2 eggs
2 Tbsp sour cream
2 Tbsp fresh orange juice
Zest from 2 medium oranges
2 tsp vanilla extract
2 Tbsp corn starch
Whipped Cream:
1 cup heavy whipping cream
2 tsp orange zest
2 Tbsp white granulated sugar
Orange Glaze:
½ cup powdered sugar
1 tsp oange zest
1 Tbsp heavy whipping cream (warm)
1 Tbsp fresh orange juice (warm)
Candied Orange Peels:
2 medium oranges
1 cup of water
1 cup of sugar
2 tbs of extra fine sugar for coating

Steps:

  • Preheat the oven to 325 degrees and grease a 9 inch springform pan. You will need a large roasting pan that's bigger and longer than the springform pan. (I use the aluminum foil disposable ones). If you are not sure about your springform holding up in water, you can wrap the outside of the springform pan in heavy duty aluminum foil from bottom up to the sides. I recommend wrapping the outside of the springform in foil before adding the crust and cheesecake batter.)
  • Crust:
  • Mix the graham cracker crumbs, sugar, melted butter and vanilla. Stir very well, until all incorporated. Press graham cracker mixture into the pan, evenly, all over the bottom and about half way up the side.
  • Cheesecake:
  • Start beating cream cheese and sugar on medium high speed until smooth, about 2 minutes.
  • Add vanilla extract, and sour cream. Mix until combined.
  • Add eggs, one at the time, beating after each addition. Scrape sides and bottom of the bowl and beat until all incorporated.
  • Mix in orange juice and orange zest.
  • Stir in corn starch and with mixer on low speed, add in heavy cream. Mix until all combined, scrape the sides and bottom of the bowl and mix again.
  • Pour the cheesecake batter into the springform with crust.
  • Place roasting pan into the oven and place cheesecake springform pan inside the roasting pan. Carefully add water to the roasting pan, about half way up the side of the springform.
  • Bake for 70-75 minutes. Turn off the oven and open the oven door half way. Let cheesecake rest for about 10 minutes and take it out of the oven (out of the roasting pan and carefully take off the foil).
  • Let it rest for 10 minutes on the counter and then gently run a greased butter knife between sides of the cheesecakes and the springform to carefully separate it. (You don't actually have to take the cheesecake out of the pan until ready to frost.)
  • Cool cheesecake for an hour and then place it in the refrigerator. Refrigerate for at least 4 hours before adding the whipped cream.
  • Candied Orange Peels:
  • Using a vegetable peeler, peel the skin off the oranges, trying not to get the white part. Slice the peels into thinner strips.
  • Add the peels into the small pot and cover it with water. Bring it to boil and boil for about 30 second. Drain the peels and rinse with cold water. Repeat two more times.
  • Combine 1 cup of water and 1 cup of sugar in a small pot. Heat up on medium heat and stir until the sugar is melted. Add the peels and bring the water to boil. Lower the heat to low and cook for about an hour.
  • ** You can, strain off the orange simple syrup into a container and save it.**
  • Toss the peels in extra fine sugar and lay them out to dry.
  • Orange Whipped Cream:
  • Add the cold heavy whipping cream into the cold mixing bowl. Starting at low speed, start whisking, gradually raise to speed to high. Slowly pour in the sugar and then add orange zest. Beat until stiff peaks appear (don't walk away far). Keep in the refrigerator until ready to use.
  • Once the cheesecake is cool enough to be frosted, frost it evenly with orange whipped cream.
  • Orange Glaze:
  • Add powdered sugar into a shallow bowl, whisk in warm heavy whipping cream and warm orange juice. Whisk in orange zest. Whisk until glaze is smooth and drizzle glaze over the frosted cheesecake.
  • Decorate with orange peels and you're ready to serve!

Make sure the cheese has no lumps. Add the 1 1/4 cups granulated sugar and continue beating until well blended and smooth.
