This was an attempt to please a picky eater. I took a few recipes from this site and mixed them all up. She loved it!

1 ½ cups all-purpose flour
1 cup quick-cooking oats
½ cup white sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
2 eggs
1 ½ cups reduced-fat milk
¼ cup butter, melted

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Mix flour, oats, sugar, cocoa powder, baking powder, cinnamon, and salt in a large bowl. Whisk milk, eggs, and butter in another bowl; stir into flour mixture until batter is just combined.
  • Pour batter into preheated waffle iron. Cook until golden brown, about 5 minutes per waffle.

1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate
2 Tbsp. butter
3/4 cup flour
1/2 cup old-fashioned or quick-cooking oats
1/4 cup sugar
2 tsp. baking powder
1/4 tsp. each ground cinnamon and salt
3/4 cup milk
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 eggs, beaten
3/4 cup maple syrup, divided
1/2 cup quartered fresh strawberries

Steps:

  • Spray electric waffle iron with cooking spray. Heat iron to medium heat.
  • Microwave chocolate and butter in small microwaveable bowl on HIGH on 1 to 1-1/2 min. or until butter is melted. Stir until chocolate is completely melted and mixture is well blended.
  • Combine flour, oats, sugar, baking powder, cinnamon and salt in large bowl. Add milk, sour cream, eggs and 1 Tbsp. maple syrup; mix well. Stir in chocolate mixture.
  • Pour amount of batter directed by manufacturer onto grids of waffle iron. Close lid quickly. (Do not open until waffle is done.) Cook according to manufacturer's directions. When done, lift waffles off grid with fork. Repeat with remaining batter.
  • Serve topped with remaining maple syrup and strawberries.

1 ½ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
½ cup white sugar
3 tablespoons unsweetened cocoa powder
1 cup milk
2 eggs
4 tablespoons butter, melted
1 tablespoon butter, softened
¾ cup confectioners' sugar
½ teaspoon vanilla extract
1 teaspoon milk

Steps:

  • Preheat waffle iron. In a large mixing bowl, stir together flour, baking powder, salt, sugar and cocoa. Stir in milk, eggs and butter until mixture is smooth.
  • To make hard sauce: stir together softened butter, confectioners' sugar, vanilla extract and milk. Sauce should be fairly stiff.
  • Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot with hard sauce.

1-1/2 cups all-purpose flour
1 cup quick-cooking oats
3 teaspoons baking powder
1/2 teaspoon ground cinnamon

2 large eggs, lightly beaten, room temperature
1-1/2 cups whole milk
6 tablespoons butter, melted
2 tablespoons brown sugar
Assorted fresh fruit and yogurt of your choice

Steps:

  • In a large bowl, combine flour, oats, baking powder, cinnamon and salt; set aside. In a small bowl, whisk eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended. , Pour batter into a lightly greased waffle iron (amount will vary with size of waffle iron). Close lid quickly. Letting the batter sit overnight allows the chia seeds and oats to soften, so the batter is smooth and waffles fluffy. You will not even know they are vegan, only delicious.

3 cups white whole wheat flour
2 cups quick-cooking oats
1 cup white sugar
½ cup unsweetened cocoa powder
¼ cup chia seeds
1 tablespoon baking powder
1 teaspoon sea salt
4 ½ cups almond milk, or more to taste, divided
½ cup coconut oil, melted

Steps:

  • Mix flour, oats, sugar, cocoa powder, chia seeds, baking powder, and salt together in a large bowl. Add 3 cups almond milk and coconut oil; stir with a wooden spoon until batter is just combined. Cover and refrigerate, 8 hours to overnight.
  • Preheat a Belgian waffle iron according to manufacturer's instructions.
  • Stir 1 1/2 to 2 cups almond milk into the batter to thin it to the consistency of cake batter.

Number Of Ingredients 9

5 1/2 ounces old fashioned rolled oats
4 ounces all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
3 large eggs, beaten
2 ounces unsalted butter, melted and slightly cooled
16 ounces buttermilk at room temperature

Steps:

  • Heat a 10-inch saute pan over medium heat. Add the oats and cook, stirring occasionally, until toasted, about 3 minutes. Cool the oats in the pan for 2 to 3 minutes. Grind the toasted oats in a food processor until the consistency of whole-wheat flour, about 3 minutes.
  • Heat a waffle iron according to manufacturer's directions.
  • Whisk together the toasted oat flour, all-purpose flour, sugar, baking powder, salt, and baking soda in a medium bowl. Whisk the eggs and melted butter together in another bowl, then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Rest the batter for 5 minutes. Ladle the recommended amount of waffle batter into the hot iron. Close the iron top and cook until the waffle is golden on both sides and is easily removed from the iron. Repeat with remaining batter. Serve immediately or keep warm in a preheated 200 degree F oven until ready to serve.
