Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
- In a large bowl, cream together the margarine, shortening and brown sugar until light and fluffy. Stir in the egg and water. Beat in cake mix until well blended, then stir in the oats and chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

CHOCOLATE OAT CAKE-MIX COOKIES
I always make my cookies from scratch, but I was intrigued by the idea of using cake mix, so I gave it a try. I live in high altitude and added extra flour and my texture was great- chewy, chubby, and soft in the middle. You may want to try mixing some good-quality peanut butter chips with the semi-sweet.

- In a mixing bowl, combine dry cake mix, flour, eggs, butter, and oats, and chips.
- Add the extra water if dough is too crumbly.
- Drop by heaping tablespoons onto ungreased baking sheets.
- Bake at 350 degrees for 9-11 minutes, or until set.
- Note: I baked the cookies with the additional flour in regular altitude but preferred using 375 temperature.
- Cool for 5 minutes and remove to wire racks.
CHOCOLATE OAT CAKES (SCOTLAND)

- Preheat oven to 350 degrees F. Line 2 mini muffin tins with mini muffin liners, or set out 20 mini muffin liners on a baking sheet. Lightly spray liners with nonstick spray and sprinkle the hazelnuts into the bottom of each muffin liner.
- Whisk the flour, cocoa, wheat germ, oats, spices and salt together in a medium bowl.
- With an electric mixer on medium speed, beat the butter and sugar in another bowl until combined, about 2 minutes. Add the egg yolks and beat together. Add dry ingredients and mix until just combined.
- Scoop a tablespoon of dough (about 3/4 ounce) into the mini muffin tins or liners, on top of the nuts. (Alternatively, drop heaping tablespoons of the dough onto a parchment-lined baking sheet and top with chopped nuts.) Bake until the cookies are cooked through and nuts are toasty, about 15 minutes (drop cookies will bake slightly faster). Transfer cookies to a rack to cool. Serve.

This recipe comes from a local church, fundraising cookbook. It was submitted by Janice, by dear stepson's Mom. These a good yummy comfort type cookies. Great with that special cup of coffee or glass of milk. Cook time is per cookie sheet.

- Combine first 3 ingredients in large bowl and mix together with spoon.
- Combine oil, eggs& vanilla extract, beat slightly and then add to dry ingredients, stir well.
- Stir in pecans and mix well.
- Stir in chocolate morsels if you choose to add these and mix well.
- Drop by teaspoonful on ungreased cookie sheet.
- Drop about 2-inches apart.

- Preheat oven to 350*.
- Mix all ingredients thoroughly in a bowl by hand with spoon/spatula. A whisk of any kind does not work well. I prefer to add the oats last, and slowly, mixing after each little addition. Batter will be stiff; not cake like.
- Drop by rounded spoonful onto greased cookie sheet.
- Bake for 7-9 minutes, until set and slightly brown on top, careful not to over bake.
- Upon removing from oven, let sit for a minute or two on cookie sheet. Then remove to wax/parchment paper for cooling.
