CHOCOLATE FONDUE

- Heat 1/2 cup cream in a heavy non-reactive saucepot over moderate heat until cream comes to a low boil. Remove the pan from the heat and add chocolate. Let the chocolate stand in hot cream 3 to 5 minutes to soften, then whisk chocolate together with the cream. Stir in liqueur and/or chopped nuts and transfer the fondue to a fondue pot or set the mixing bowl on a rack above a small lit candle. If fondue becomes too thick, stir in reserved cream, 1 tablespoon at a time, to desired consistency. Arrange your favorite dippables in piles on a platter along side chocolate fondue with fondue forks, bamboo skewers or seafood forks, as utensils, for dipping.

- Heat the heavy cream and the salt in a saucepan, over medium heat, until steaming.
- Remove from heat and add the chocolate. Let it stand for a couple of minutes, then whisk or stir until melted.
- Stir in the vanilla extract and, if using, the cognac.
- Adjust the texture by adding more heavy cream or chocolate if needed. Heavy cream will thin it out and chocolate will thicken.
- Pour into a fondue pot and serve with your favorite dippers!

CHOCOLATE FONDUE

- Put approximately 4 inches of water in the saucepan and bring to a slow boil. Place the mixing bowl on top and pour in the heavy cream; let heat. Meanwhile, break up or chop chocolate into small pieces. When the cream feels hot to the touch, add chocolate and whisk until smooth. Whisk in vanilla and brandy.
- Pour into the fondue pot and light the handy fuel underneath; keep the flame low as not to burn the fondue. Arrange strawberries, bananas, pineapple, brownies, marshmallow, cookies or any of your favorite items on a platter and enjoy.

- Melt chocolate with water over low heat. Simmer for 3 minutes. Remove from heat and stir in the honey and butter. Beat well until smooth. Pour it over ice cream or cake.
- Add 2 tablespoons of sauce to a glass of warm milk and stir.
- Store in an airtight jar. It will keep in the fridge for a week or more. Reheat gently but do not boil if you want the sauce warm again.

If you add more milk or cream, this recipe becomes like a sauce, and can be poured over ice cream. If less milk is added, it is more like a fondue, and can be used for dips or icing. For an even more decadent variation, try adding 2-3 tablespoons of Amaretto, Grand Marnier, or Bailey's after removing from heat! We used Mint Honey however, Meadowfoam, MeadowMaple, and Fireweed would work equally well. For a festive gift, place in a tightly-wrapped decorative container!
