CHOCOLATE GRAVY AND BISCUITS

- In a medium saucepan, stir together sugar, cocoa, flour, and cinnamon and salt. With a wire whisk or spoon stir in milk a little at a time until ingredients are wet. Cook over medium heat, stirring constantly, until mixture thickens. (This will burn easily so be sure to stir). Remove from heat and stir in butter and vanilla until smooth. Pour into a bowl and top with nuts if desired. Serve over warm biscuits.
CHOCOLATE GRAVY AND BISCUITS

- Preheat the oven to 450 degrees F.
- In a medium bowl, combine the 3 cups flour, 2 tablespoons sugar, baking powder, baking soda and salt. Cut in the shortening with a fork until it looks like cornmeal. Add the buttermilk, a little at a time, stirring constantly until well mixed.
- Turn the dough out onto a lightly floured surface. Knead lightly 2 or 3 times. Roll out the dough with a floured rolling pin to 1/2-inch thickness. Cut dough into circles with a 2-inch cutter.
- Place the biscuits in a greased iron skillet. Gently press down the top of the biscuits. Brush the biscuits with half the 1/4 cup melted butter and bake for 14 minutes or until golden brown. Brush the hot biscuits with the remaining melted butter. Split the biscuits in half and ladle Chocolate Gravy over the hot biscuits.
- Chocolate Gravy:
- Heat 1/3 stick butter in a cast iron skillet over low heat. Mix in 2/3 cup sugar, 2 teaspoons flour and cocoa. Slowly pour 1 cup of milk into the skillet and whisk well to remove lumps. Whisk in remaining milk, stirring constantly, until mixture is thick, being careful not to scorch. Serve hot over biscuits.

- Heat oven to 450°F.
- Combine 2 cups flour and 1 Tbsp. sugar with baking powder and baking soda in large bowl. Cut in cream cheese and 4 Tbsp. butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
- Add 3/4 cup milk; stir until mixture forms soft dough.
- Place dough on lightly floured surface; sprinkle lightly with additional flour. Roll into 12x8-inch rectangle; fold crosswise in half. Repeat rolling and folding three more times.
- Press dough gently onto bottom of 9-inch square pan sprayed with cooking spray.
- Bake 15 to 20 min. or until golden brown; cool slightly.
- Meanwhile, whisk cocoa powder with remaining flour, sugar and milk in medium saucepan until blended; cook, stirring constantly, over medium heat 5 to 7 min. or until thickened. Remove saucepan from heat. Add vanilla and remaining butter; stir until butter is completely melted and mixture is well blended.
- Cut warm biscuit into 12 rectangles. Serve topped with chocolate gravy.

- In a medium saucepan, melt the butter over medium-high heat.
- Add cocoa powder and stir together.
- Add the sugar and 2 cups of milk to the pan---add the milk slowly, stirring constantly.
- Mix the cornstarch and remaining 1/4 cup of milk until smooth.
- Stir into pan.
- Allow the contents to boil, but stir constantly until the mixture thickens into a gravy-like consistency; it shouldn't take more than 1 or 2 minutes.
- Add more milk, if necessary.
- Serve over hot biscuits and butter.
