A neighbor brought over a pan of these rich fudge brownies along with the recipe when I came home from the hospital with our baby daughter. I asked her how to make brownie frosting like that, and I've made them ever since for family occasions, potlucks and parties at work. -Sue Soderlund, Elgin, Illinois

1 cup plus 3 tablespoons butter, cubed
3/4 cup baking cocoa
4 large eggs, room temperature
2 cups sugar
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla extract
FROSTING:
6 tablespoons butter, softened
2-2/3 cups confectioners' sugar
1/2 cup baking cocoa
1 teaspoon vanilla extract
1/4 to 1/3 cup 2% milk

Steps:

  • In a saucepan, melt butter. Remove from the heat. Stir in cocoa; cool. In a large bowl, beat eggs and sugar until blended. Combine flour, baking powder and salt; gradually add to egg mixture. Stir in vanilla and the cooled chocolate mixture until well blended. , Spread into a greased 13x9-in. baking pan. Bake at 350° until a toothpick inserted in the center comes out clean, 25-28 minutes (do not overbake). Cool on a wire rack. , For frosting, in a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in cocoa and vanilla. Add enough milk for the frosting to achieve spreading consistency. Spread over brownies. Cut into bars.

3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter
3 oz unsweetened chocolate
1/2 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 large egg yolk
1 teaspoon pure vanilla extract
1/2 cup semisweet chocolate chips
3/4 cup (1½ sticks) unsalted butter, at room temperature
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
2 1/2 cup powdered sugar, sifted
2 tbsp milk
1 teaspoon vanilla extract
1/2 cup heavy cream
1/3 cup Ovaltine

Steps:

  • Place a rack in the upper third of the oven and preheat to 350 degrees F. Grease and flour an 8-inch square baking dish and set aside.
  • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  • Bring about 2 inches of water to a boil in a medium saucepan. In a medium, heatproof bowl, add butter and unsweetened chocolate. Place the bowl over, but not touching, the simmering water and allow to melt. Stir to incorporate. Once melted, remove the bowl from the simmering pot. Whisk in brown sugar and granulated sugar. Whisk in eggs, yolk, and vanilla. Add the flour mixture all at once to the chocolate mixture. Fold together with a spatula until well incorporated. Fold in the chocolate chips.
  • Pour batter into prepared pan and bake for 25 to 30 minutes. Bake until a skewer inserted in the center of the brownie comes out clean. Remove from the oven and cool completely before frosting.
  • Frost with a half recipe of The Best Chocolate Buttercream Frosting (see below) when cooled.Brownies last, well wrapped, at room temperature for up to five days.

Steps:

  • Melt chocolate and butter in the microwave, or in the top of a double boiler. In a large bowl, combine confectioners' sugar, vanilla and 1/2 cup of the milk. Blend in the melted chocolate mixture. Add remaining milk, a little at a time, until desired consistency is achieved.

You can add more powdered sugar a tablespoon at a time, if you would like a stiffer frosting. 8. Spread the frosting onto the cooled brownies, and cut into squares. Store brownies in an airtight container, or tightly wrapped, at room temperature for up to 5 days.

1 cup chocolate chips

Steps:

  • Combine the milk, butter, and sugar together in a saucepan and bring to a boil; allow to cook at a rolling boil for 30 seconds and immediately remove from heat. Add the chocolate chips and vanilla to the milk mixture and stir until the chips are completely melted. Pour immediately over warm brownies.

12 ounces best-quality chocolate, chopped (I use bittersweet, semi-sweet would be good too)
3/4 cup butter
1 1/4 cups sugar
1 tablespoon vanilla
4 large eggs
1 teaspoon salt
1 cup all-purpose flour
1 cup chocolate chips
1 cup walnuts, chopped

Steps:

  • Preheat oven to 350F and place rack in middle of oven.
  • Butter and flour a 13 x 9 inch baking pan.
  • Melt chocolate with butter, stirring, until mixture is smooth.
  • Let cool until lukewarm.
  • Stir in sugar, vanilla and eggs, one at a time, stirring well after each addition.
  • Stir in salt and flour, stirring just until combined.
  • Stir in chocolate chips and walnuts.
  • Pour into prepared baking pan and bake for 25-30 minutes, or until a tester comes out with a few crumbs attached.
  • Let cool completely and cut into 24 bars.
