Steps:
- Set a heatproof bowl over a saucepan of simmering water, making sure the bowl doesn't touch the water. Roughly chop chocolate and place in the bowl to melt, stirring frequently, keeping the heat very low. Chop toasted nuts; using scissors, cut dried fruit into small pieces. Finely chop candied ginger and/or orange peel. Place fruit and nuts into a large mixing bowl.
- Once chocolate is melted and smooth, take it off the heat and stir fruit and nuts into the chocolate. Gently stir to combine so the fruit and nuts are all combined with the chocolate. Line a pan with parchment paper that's been sprayed with a little oil. Sprinkle cocoa powder over parchment and then add the chocolate mixture. Spread it out in an even layer. Dust with more cocoa powder and place another piece of parchment paper on top. Let it cool down and set in the refrigerator, 1 hour.
- When chocolate is set, run a knife around the edge to remove from the pan. Break or cut into pieces to make chunky chocolates.

CHEF JOHN'S CHOCOLATE ENERGY BARS
If you compare these chocolate energy bars to similar fruit/nut bars sold at the store, I think they taste better, are nutritionally superior, and probably cheaper to make at home. The only problem is they look so good it takes your brain a millisecond to process that they're not going to taste like the fudge brownies they resemble.

WHITE CHOCOLATE FRUITCAKE BARS
These cookie bars are studded with the best parts of traditional fruitcake (orange zest and dried fruit) and spiced up with lots of fresh ginger. The white chocolate drizzle creates a blank canvas that's perfect for sprinkles and/or sanding sugar.

Steps:
- Make the Shortbread:
- Preheat oven to 350°F. Line an 8" square metal pan with parchment paper, leaving an overhang on all sides. Butter parchment.
- Whisk flour, almonds, baking powder, and salt in a medium bowl.
- Using an electric mixer on medium-high speed (or use a stand mixer fitted with the paddle attachment), beat granulated sugar and 1 1/4 cups butter in a large bowl, scraping down sides, until light and fluffy, about 5 minutes. Reduce mixer speed to medium, add egg, and beat until incorporated, about 1 minute more. Scrape down sides of bowl. Reduce mixer speed to low and beat in orange zest, ginger, and vanilla.
- With the mixer running on low speed, add dry ingredients and beat just until combined with some visible flour remaining. Add cranberries, coconut, and chocolate. Beat just until incorporated. Scrape down sides of bowl, then fold dough once or twice with a spatula.
- Scrape dough into prepared pan. Using dampened fingers or a damp offset spatula, press dough evenly into pan. Bake shortbread until lightly golden brown and set, 25-30 minutes. Transfer pan to a wire rack and let cool.
- Do Ahead: Shortbread can be baked 2 days ahead. Store airtight at room temperature.
- Make the Glaze and Assemble:
- Heat chocolate, oil, and salt in a small heatproof bowl in a microwave, stirring every 30 seconds, until smooth and glossy, about 1 minute total. Set aside 2 Tbsp. glaze, then pour remaining glaze over cooled shortbread in pan, spreading to the edges. Let sit at room temperature until set (if you're impatient, chill 10-15 minutes).
- Run a paring knife around edge of pan to release, then remove shortbread from pan using parchment overhang. Slice into bars. To slice into diamonds, cut into five 1 1/2" strips, then slice each strip on the bias into 1" diamonds.
- Rewarm reserved glaze and drizzle over bars in stripes with a spoon. Top with sprinkles. Let sit at room temperature until set (or chill for 8-10 minutes).
- Do Ahead: Bars can be made 5 days ahead. Store airtight at room temperature.

- Five-Spice Pear Pie Bars. A light orange glaze is the icing on the cake (literally). Flaky homemade pastry surrounds a layer of thinly sliced pears.
- Fresh Strawberry Bars. These showstopping fruit bars can baked to serve a crowd of 24 in less than an hour. The base of the strawberry bars is infused with peanut butter for a nutty twist to the traditional PB&J.
- Blueberry Cereal Bars. No more wondering about those unrecognizable ingredients listed on the box of cereal bars. Our homemade blueberry bars are chock-full of clean-eating ingredients such as almond butter, pure maple syrup, chia seeds, and rolled oats for the ultimate breakfast-on-the-go option.
- Chewy Cherry-Almond Bars. When you combine the chewy ingredients of an oatmeal cookie with luscious cherry preserves, you're bound for a heavenly dessert.
- Peanut Butter Jammin' Bars. You really can't go wrong with a classic flavor pairing like peanut butter and jelly. These fruit bars can be stored in your freezer for up to one month, so the kids (and adults) will always have a sweet treat on hand.
- Lemon-Lime Bars. Get a double-punch of citrus flavor in these puckery fruit bars. Be sure to pour the filling onto the crust as soon as you take it out of the oven—this helps the lemon-lime bars set.
- Blueberry Slab Pie. If you're a blueberry-lover, you'll flip for this simple slab pie. It's piled high with six cups of plump, cinnamon-spiced blueberries and topped off with a sugary oat crumble.
- Strawberry-Rhubarb Bars. A sugar-and-spice ginger icing balances the tart flavor of rhubarb in this classic bar cookie recipe. Fresh strawberries on top add more fruity flavor and extra sweetness.
- Apple-Cheese Slab Pie. Like a delicious stuffed Danish, these fruit bars include sweet layers of cream cheese and apples between buttery pastry.
- Pear-Cinnamon Streusel Squares. These fruit bars are going to shine alongside a cup of coffee during brunch. Substitute apples for the pears, if you like; the cinnamon-flavor sweetness of this moist bar blends well with either fruit.
